This is my favorite salsa to go with summer grilling! Have served this for guests and family and everyone loves it! Serve with grilled chicken breast, fish, or pork.

Steps:
- Preheat grill for medium heat and lightly oil the grate. Spray pineapple pieces with cooking spray.
- Cook pineapple on the grill until lightly browned and caramelized, 5 to 10 minutes. Remove pineapple from grill and cool; chop.
- Mix pineapple, red bell pepper, onion, cilantro, jalapeno pepper, garlic, lime juice, sugar, salt, and ground black pepper together in a bowl; refrigerate until chilled and flavors blend, about 1 hour.

LEMON GRASS PARFAIT WITH WARM PINEAPPLE SALSA
Steps:
- In a non-aluminum pan, bring cream to a boil with the lemon grass and scraped vanilla beans. Simmer on very low heat for 20 minutes. Mix will reduce about 20 per cent. Pull off heat and store overnight. The next day, strain the lemon grass and vanilla beans out and lift to whip cream stage. Bring yolks, eggs, and sugar to ribbon stage, whisking constantly over a bain marie. (110 degrees). Using a mixer, whip at high speed for 10 minutes until the mix is pale in color and light. Fold in the lifted cream. Place in molds and freeze at least 4 hours, preferably overnight.
- PINEAPPLE SALSA: In a non-stick pan, heat all together and serve warm with the frozen parfait.
ROASTED PINEAPPLE AND PEPPER SALSA

- Heat grill or grill pan to high.
- Place pineapple and mango on grill for 30 seconds to 1 minute or until desired grill marks are achieved. Let cool and dice.
- In a medium mixing bowl combine honey, lime juice, cilantro and season, to taste, with salt. Add remaining ingredients and toss. Let sit for 1 hour before serving.
COCONUT-CRUSTED PORK CHOPS WITH WARM PINEAPPLE SALSA

- For the salsa: Heat the oil in a medium saute pan over medium heat. Saute the pineapple, Fresno chile and red onion until tender and the juices have been released, 5 to 7 minutes. Add the guava jelly, soy sauce, ginger and garlic; stir together and cook for 1 minute. Add a drizzle of sriracha if desired. Stir in the cilantro and scallions.
- For the pork chops: Set up a dredging station with three separate bowls: one with the flour, another with the beaten eggs and soy sauce, and the last with the breadcrumbs, coconut flakes, five-spice powder, garlic powder and some salt and pepper.
- Dip the pork chops in the flour, then the egg and then in the breadcrumb mixture.
- Heat 1 inch of oil in a large saute pan over medium-high heat. Shallow fry the dredged pork chops until golden brown, then flip and cook to an internal temperature of 145 degrees F. Remove the pork chops from the pan and set aside to rest for 5 minutes.
- Serve the pork chops with salsa on top and macadamia nuts as garnish.
