CLASSIC CHEDDAR CHEESEBALL
The classic Cheddar Cheese Ball is the snack everyone wants on their table for get-togethers and game nights.

Steps:
- Place the cream cheese in a large mixing bowl and beat with an electric mixer until smooth, about 1 minute. Scrape the sides of the bowl and sprinkle garlic powder over the cream cheese. Add the Worcestershire sauce. Mix again until well combined, about 1 minute.
- Add the cheese and mix again. Spread plastic wrap on the counter and scoop the cheese mixture onto it. Form into a ball with the spatula.
- Place the chopped nuts on a small plate. Gently roll the cheeseball in the nuts to coat it completely. Wrap the finished cheese ball in plastic wrap until ready to serve.
- Remove from the refrigerator at least 30 minutes before serving. Serve with crackers and fresh vegetables.

CHEESE BALL I
This is a wonderful cheese ball. It is very easy to make and simply delicious. Whenever I make it for gatherings or work it always gets great reviews. Serve with an assortment of crackers.

- In a large bowl, mix together cream cheese, Cheddar cheese, and dressing mix. Form into one large ball or two smaller balls. Roll in chopped pecans to coat surface. Decorate the top with pecan halves. Refrigerate for at least 2 hours, or overnight.

From the Oct. 1995 Midwest Living Magazine. Welliver's Buffet famous cheese ball. Cooking time is chill time in refrigerator. Welliver's is a well-known restaurant in east central Indiana. Their buffet is something to behold, so I was very excited when I saw some of their recipes in the Midwest Living magazine several years ago.

Steps:
- In a bowl, combine all ingredients, except the nuts and crackers. Beat till well combined.
- Cover and chill for 3 to 4 hours.
- Shape mixture into a ball or log. Roll in pecans to coat. Store, covered, in the refrigerator.

Steps:
- Place cheeses in medium bowl; let stand at room temperature about 30 minutes or until softened. Beat onion and Worcestershire sauce into cheeses with electric mixer on low speed until mixed. Beat on medium speed 1 to 2 minutes, scraping bowl frequently, until fluffy. Cover and refrigerate at least 8 hours until firm enough to shape into a ball.
- Shape cheese mixture into 1 large ball. Roll in parsley; place on serving plate. Cover and refrigerate about 2 hours or until firm. Serve with crackers.

RAS GULLA (INDIAN CHEESE BALLS IN SUGAR SYRUP )
This is a classic and very popular Indian sweet dessert from Bengal made for special occasions and usually served cold. This is a very sweet rich dessert.

Steps:
- Bring milk to boil and add salt. Remove from heat and add yogurt into it. Stir gently until all the milk curdles. Strain the curdled milk in a thin muslin cloth. Squeeze gently until all the liquid is gone. You now have paneer.
- Put the paneer in a large bowl and knead with the palms of your hand until it becomes smooth and soft.
- Add the flour and bicarbonate of soda and knead a few more minutes. Roll and shape into small balls, the size of a ping-pong ball.
- Dissolve the sugar in the water over gentle heat. Set aside half the syrup.
- Bring the other half to boil and gently slip in the balls of paneer. Simmer for 10 minutes and then raise the heat, adding a little water to thin the syrup if necessary. The rasgullas are done when the float to the surface.
- Drain and put them in the syrup that was set aside.
- Sprinkle with rose water.
- Serve cold.

- Place cream cheese in a mixing bowl and mix until smooth. Add cheese, green onion, Worcestershire sauce, hot sauce, parley, garlic powder, oregano and pepper and mix well to combine.
- Use a rubber spatula to scrape the sides of the bowl and gather the mixture into one lump. Lightly grease your hands and form the mixture into a round ball.
- Place the pecans on a plate. Hold the cheese ball in one hand and use the other hand to scoop the pecans onto the outside of the ball, pressing them in gently and turning the ball to coat all sides.
- Cover the cheeseball in cling wrap and refrigerate for about 1 hour to allow it to firm up. Take it out of the refrigerator about 20 minutes before serving to allow it to soften just slightly. Serve with crackers, pretzels, vegetables or anything else you'd love to dip in cheese!
