- In a small bowl, combine the apple, sugar and water. Divide between two 6-oz. ramekins or custard cups coated with cooking spray. , In a small bowl, combine the flour, brown sugar, cinnamon, nutmeg and salt. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apple mixture. Bake at 375° for 20-25 minutes or until tender. Serve warm with whipped cream if desired.

- Position an oven rack to the center of the oven and another in the top third of the oven (about 6-inches from the broiler) and preheat to 375 degrees F. Lightly butter 6 6-ounce ramekins.
- Stir together the oats, flour, brown sugar, walnuts and salt in a medium bowl. Work the butter into the oat mixture with your fingertips until it is in even pea-size pieces. Evenly divide the apples among the ramekins and top with the oat mixture.
- Transfer the ramekins to a baking sheet and bake on the middle oven rack until the fruit bubbles around the sides and the tops are golden, 30 to 35 minutes. Remove from the oven.
- Turn the oven to broil, put the baking sheet with the ramekins on the top oven rack and broil until golden brown, about 2 minutes. Let cool about 15 minutes before serving. Serve warm with whipped cream or ice cream.

- In medium bowl, toss apple slices and butter. Add brown sugar, flour and 1/4 teaspoon apple pie spice. Toss to coat evenly.
- Spray two 4- to 6-oz microwavable ramekins with cooking spray. Divide apples between ramekins. Microwave ramekins uncovered on High 1 minute 30 seconds to 2 minutes or until apples are softened. Top each with 1/4 cup of the granola.
- Top with dollop of yogurt and additional apple pie spice. Serve immediately.

APPLE CRISP CUPS
A yummy one-biter! Whenever I ask 'what can I bring?' these top the list! Sweet cinnamon-scented apples held in a buttery crispy oatmeal cup and crunchy sweet topping. I like to make sweet treats to share with friends. I came up with this recipe so that I could bake and take apple crisp to share easily with everyone.

- Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins.
- Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat.
- Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over. Place about 2 teaspoons of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.
