INDIVIDUAL MUSHROOM PIZZAS WITH ARUGULA



Individual Mushroom Pizzas with Arugula image

Number Of Ingredients 12

3 tablespoons extra-virgin olive oil, plus more for the dough
1 1/4 pounds sliced mixed mushrooms
Kosher salt and freshly ground pepper
1 pound refrigerated pizza dough, at room temperature
2 cups shredded mozzarella cheese (about 8 ounces)
3 cloves garlic, minced
1/4 cup roughly chopped fresh parsley
Grated parmesan cheese, for topping
2 cups baby arugula
1 endive, trimmed and chopped
1/2 small head radicchio, trimmed and chopped
2 teaspoons white balsamic vinegar

Steps:

  • Place an inverted baking sheet in the middle of the oven and another in the lower third; preheat to 500 degrees F. Heat 2 tablespoons olive oil in a large nonstick skillet over high heat. Add the mushrooms and season with 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the mushrooms are browned and tender, 8 to 10 minutes. Remove from the heat.
  • Meanwhile, cut the pizza dough into 4 pieces; lightly rub each with olive oil. Place 2 pieces on a sheet of parchment paper and stretch each into a 6- to 8-inch round. Repeat with the remaining 2 pieces of dough. Sprinkle with the mozzarella, then top with the mushrooms and garlic. Transfer the pizzas (on the parchment) to a pizza peel or another inverted baking sheet, then slide onto the hot baking sheets. Bake until the crusts are golden and the cheese is bubbling, 12 to 15 minutes. Sprinkle with the parsley and parmesan.
  • Combine the arugula, endive and radicchio in a medium bowl. Drizzle with the vinegar and remaining 1 tablespoon olive oil; season with salt and pepper and toss. Top the pizzas with the salad.

This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

1 (8 inch) soft flour tortilla
1 teaspoon olive oil
1 pinch garlic powder
salt and ground black pepper to taste
3 tablespoons tomato sauce
1 cooked chicken breast, sliced
½ green bell pepper, chopped
2 green onions, finely chopped
⅓ cup shredded mozzarella cheese
1 pinch dried oregano

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place tortilla on a baking sheet. Brush with olive oil; sprinkle garlic powder, salt, and pepper on top.
  • Bake in the preheated oven until golden, 3 to 5 minutes. Remove tortilla from the oven and spread tomato sauce on top. Arrange chicken breast, green bell pepper, and green onions over tomato sauce; cover with mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, about 5 minutes. Sprinkle oregano over cheese. Slice pizza into wedges using a pizza cutter.

I came up with this quick, easy pizza when we had run out of our frozen supply. I loved it! It's a delicious, thin-crust, easy pizza that will leave you satisfied. Feel free to substitute your own spice and/or topping choices - there are many variations!

2 teaspoons garlic oil
1 teaspoon butter
3 white mushrooms, sliced
1 (9 inch) flour tortilla
¼ cup shredded mozzarella cheese
6 cherry tomatoes, sliced
1 teaspoon dried oregano, or to taste
½ teaspoon garlic powder, or to taste
1 teaspoon olive oil, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat garlic oil and butter in a skillet over medium heat. Add mushrooms; cook and stir until dark and tender, about 5 minutes.
  • Place tortilla on a pizza pan or baking stone. Spoon mushrooms, with accumulated juices, on top. Scatter mozzarella cheese and cherry tomatoes over mushrooms. Sprinkle oregano and garlic on top. Drizzle olive oil on top.
  • Bake in the preheated oven until edges of the tortilla start to brown, 8 to 10 minutes.
