INDIVIDUAL BLACKBERRY SOUFFLES



Individual Blackberry Souffles image

A rich, yet still light dessert to make Valentine's Day dinner, or any meal extra special. It is important that eggs are at room temperature for an hour or 2 so that they beat up to a higher volume. This can be made in any size ramekin or even a microwave coffee mug, the important thing is that the vessel is filled 3/4 full. Don't worry if the souffle falls, it is still delicious, just a little denser.

1 teaspoon butter
1 1/4 cups sugar, divided
24 ounces blackberries or 20 ounces frozen blackberries
3/4 cup butter (1 1/2 sticks)
2/3 cup flour
5 egg yolks, room temperature
2 tablespoons Chambord raspberry liquor or 2 tablespoons cranberry juice
5 egg whites, room temperature

Steps:

  • Preheat oven to 400 degrees F. Butter 6 8 ounce ramekins or a 2 quart souffle dish, then sprinkle with about 1/4 cup sugar.
  • Place blackberries in a food processor or blender and pulse until pureed. Squeeze through a sieve or strainer to extract juice, discard solids. Add enough water so that you have 2 cups liquid. Add 1/2 cup sugar to juice and heat in a medium saucepan over medium high heat until boiling; remove from heat.
  • Melt butter in another large saucepan over medium heat. Add flour and whisk thoroughly. Slowly pour hot juice mixture into flour mixture while whisking vigorously. Cook 1 minute, remove from heat. Whisk in egg yolks, then Chambord.
  • In a clean, dry bowl, beat egg whites with a mixer until frothy. Gradually add remaining 1/2 cup sugar until soft peaks are fomed. Stir 1 cup of the egg whites into blackberry mixture. Fold remaining egg whites into blackberry mixture.
  • Spoon into ramekins or souffle dish making sure to fill only 3/4 full. Bake 20 to 25 minutes for ramekins or 30 to 40 minutes for large souffle. Carefully remove from oven once it has risen. Serve immediately.

3 ounces bittersweet chocolate, chopped fine
1/2 cup unsweetened Dutch Process cocoa powder
3/4 cup plus 1/4 cup sugar
1/2 cup boiling water
2 egg yolks
2 teaspoons vanilla extract
3 tablespoons all-purpose flour
8 egg whites, at room temperature
1/2 teaspoon cream of tartar
6 (1/2-ounce) pieces dark chocolate
2 to 3 teaspoons powdered sugar

Steps:

  • Position oven rack in the bottom 1/3 of the oven and preheat to 375 degrees F. Spray the inside of 6 (10 ounces) ramekins, or oven-proof baking cups, with non-stick cooking spray and sprinkle with a little sugar to coat evenly.
  • In a large bowl, place chopped chocolate, cocoa, and 3/4 cup of the sugar.
  • Whisk in boiling water. When chocolate is completely melted, whisk in egg yolks and vanilla. Then stir in the flour. Set aside.
  • Combine egg whites with cream of tartar in a medium mixing bowl. Beat on medium speed until soft peaks form. Gradually sprinkle in remaining 1/4 cup sugar and beat on high speed until stiff but not dry.
  • Fold about 1/3 of the chocolate mixture into the egg whites. Fold in the remaining chocolate mixture in 2 additions. Divide batter into prepared ramekins.
  • Drop one 1/2 ounce of dark chocolate into the center of each souffle just before baking.
  • Bake for 10 to 12 minutes, or until the top has formed a nice crust and the sides appear cake-like. Sprinkle with powdered sugar. Dig in immediately!

4 cups frozen shredded hash brown potatoes, thawed
4 tablespoons salted butter, melted
¼ teaspoon garlic powder, or to taste
¼ teaspoon onion powder, or to taste
½ pound mild Italian sausage (such as Johnsonville®)
½ (8 ounce) package fresh mushrooms, chopped
½ medium bell pepper, diced
8 large eggs
¼ cup milk
½ cup shredded Cheddar cheese
1 tablespoon chopped fresh spinach
1 pinch herbes de Provence, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, butter, garlic powder, and onion powder together in a bowl until well combined. Divide mixture evenly and press into the bottom and up the sides of a 12-cup muffin tin.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until no longer pink, about 5 minutes. Add mushrooms and bell pepper; saute until softened, 5 to 7 minutes.
  • Whisk eggs and milk together in a large bowl. Mix in sausage mixture, Cheddar cheese, and spinach. Season with herbes de Provence, salt, and pepper. Pour evenly into the muffin cups.
  • Bake in the preheated oven until egg no longer jiggles when the tin is gently shaken, 25 to 30 minutes. Allow to cool slightly before serving.

1 1/2 tablespoons dry breadcrumbs
3 tablespoons butter
1/2 cup onion, diced
3 tablespoons flour
3/4 cup milk
3 eggs, SEPARATED
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 teaspoon dry mustard
1/4 teaspoon garlic powder
1/2 teaspoon cream of tartar
3/4 cup cheddar cheese, shredded
1 tablespoon parmesan cheese, grated

Steps:

  • Preheat oven to 400 degrees.
  • Coat 4 (6 ounce) ramekins with cooking spray; sprinkle evenly with breadcrumbs, tilting and turning dishes to coat sides completely.
  • In a heavy saucepan, melt butter over medium heat.
  • Add onion and cook for 1 minute.
  • Sprinkle with flour.
  • Cook, stirring, until mixture begins to pull away from pan.
  • Gradually whisk in milk.
  • Return to medium heat; cook, stirring, for 3 minutes or until thickened and bubbly.
  • Remove from heat.
  • Whisk in a large bowl, the egg yolks, salt, pepper, dry mustard, and garlic powder.
  • Temper the yolk mixture, by putting some of it into the onion milk sauce, then add all the onion milk sauce back into large bowl of yolks.
  • In a medium sized bowl, beat the egg whites and cream of tartar until stiff peaks form that do not fall over when the whisk is lifted.
  • Gently fold the egg whites and Cheddar into cooled sauce in large bowl.
  • Divide mixture evenly among four custard cups.
  • Sprinkle with Parmesan.
  • Put custard cups on a baking sheet so that they are easier to handle.
  • Bake for 20 minutes.
  • Souffle should still be moist in center; do not overcook and yes it will fall but that is the nature of a souffle.

6 large eggs
4 tablespoons butter
3 tablespoons flour
2 cups milk
Salt and freshly ground white pepper to taste
1/8 teaspoon freshly grated nutmeg
Pinch cayenne pepper
2 tablespoons cornstarch
3 tablespoons water
1/3 pound Gruyere or Swiss cheese cut into small cubes
2 tablespoons grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Place four 1/2-cup souffle dishes into the refrigerator to chill.
  • Separate the eggs, placing the yolks in one bowl and the whites in larger bowl.
  • With one tablespoon of the butter, butter the bottom and sides of each souffle dish, paying special attention to the sides. Place in refrigerator.
  • Melt the remaining butter in a saucepan and add the flour, stirring with a wire whisk. Blend well, but do not brown the flour. Add the milk, stirring rapidly with the whisk, add the salt and pepper, nutmeg and cayenne. Bring to a boil and cook for 30 seconds, stirring.
  • Blend the cornstarch and water and add to the bubbling sauce. Stir and cook for about two minutes. Add the yolks, stirring vigorously. Cook, stirring, for about a minute.
  • Spoon and scrape the mixture into large mixing bowl. Add the cubed Gruyere, blend well with a wire whisk. Set aside.
  • Beat the egg whites in a mixing bowl, preferably copper. With a flexible balloon-shaped wire whisk or a hand beater, beat them until stiff and thick. Add half of the whites to the souffle mixture and mix thoroughly. Add the remaining whites, folding them in quickly but gently with a rubber spatula.
  • Spoon and scrape even amounts of the mixture into each souffle dish. The mixture should fit inside the dish to about a quarter-inch from the top of the dish. With your thumb, create a channel around the periphery of the dish to allow for expansion. Sprinkle the top with the grated gruyere.
  • Place the dish on a baking sheet on the bottom rack of the oven and bake for 12 to 15 minutes. Serve immediately.
