3- to 3 1/2-pound cut-up broiler-fryer chicken
3/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
1 medium onion, chopped (1/2 cup)
1/3 cup peanut butter
1/4 cup chili sauce
1/2 teaspoon ground red pepper (cayenne)
1 cup water
1/4 cup chopped salted peanuts
1/4 cup chopped red bell pepper

Steps:

  • Sprinkle chicken with salt and pepper.
  • Heat oil in 12-inch skillet or 4-quart Dutch oven over medium heat. Cook chicken in oil about 15 minutes, turning occasionally, until brown on all sides. Cover and cook over low heat about 20 minutes or until juice is no longer pink when centers of thickest pieces are cut. Remove chicken from skillet with tongs.
  • Drain all but 1 tablespoon drippings from skillet; heat over medium heat. Cook onion in drippings, stirring occasionally, until tender; reduce heat. Stir in peanut butter, chili sauce and red pepper. Gradually stir in water, stirring constantly, until peanut butter is melted.
  • Add chicken. Spoon sauce over chicken. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, spooning sauce frequently over chicken, until sauce is slightly thickened. Serve sauce over chicken. Sprinkle with peanuts and bell pepper.

Chicken and two simple ingredients are all you need to make this tasty Indonesian Chicken Satay recipe. Served alongside a simple and slightly spicy peanut sauce for dipping.

2 lb boneless, skinless chicken thighs or breast (Sliced to 1" thick and 2" long pieces)
1/2 cup kecap manis
2 tbsp butter (melted)
8 large skewers or 16 small (soaked in water)
1/2 cup creamy unsweetened natural peanut butter
1/2 cup coconut milk (canned, mixed well)
1/4 cup kecap manis
2 cloves garlic (minced)
2 tbsp lime juice
2 tsp brown sugar
1 tsp chili flakes (or to taste)

Steps:

  • In a large bowl add the sliced chicken, kecap manis and melted butter. Mix well to coat. Cover and place in the fridge to marinate for about 30 minutes.
  • Soak bamboo skewers in water while the chicken is marinating.
  • While the chicken is marinating make the peanut sauce by adding to a small bowl the peanut butter, coconut milk, additional kecap manis, garlic, lime juice, brown sugar and chili flakes. Whisk until smooth and set aside.
  • After the chicken has had time to marinate thread the chicken pieces tightly onto the skewers. Discard the water that the skewers were soaking in.
  • Heat the barbecue or grill to medium-high heat and lightly grease the grill. Place the chicken satay skewers on the grill for about 10 minutes per side basting with the remaining marinade each time to coat. Continue to cook turning occasionally and basting until the chicken is cooked and no longer pink in the centre and the internal temperature reaches 160F.
  • Remove the chicken from the grill and serve alongside the peanut sauce for dipping.

1/2 cup cream of coconut
3 tablespoons lime juice
1 tablespoon vegetable oil
2 teaspoons soy sauce
2 garlic cloves, crushed
1/8 teaspoon ground red pepper
4 boneless skinless chicken breast halves (I like to use boneless, skinless thighs)
4 (10 inch) wooden skewers
1/3 cup chunky peanut butter
1/3 cup water
2 tablespoons soy sauce
1 tablespoon cider vinegar
2 garlic cloves, crushed
1/8 teaspoon ground red pepper

Steps:

  • For the chicken:.
  • Combine the cream of coconut, lime juice, vegetable oil, soy sauce, 2 cloves crushed garlic, and 1/8 tsp ground red pepper; stir well. Set marinade mixture aside.
  • Cut each chicken breast half into 4 pieces. Add the chicken to the marinade; toss gently. Cover and marinate in the refrigerator at least 4 hours.
  • Soak the wooden skewers in water for at least 30 minutes, or use metal skewers. Remove the chicken from the marinade; discard marinade. Thread the chicken onto skewers.
  • Grill over medium hot coals (350 to 400 degrees) for 2 to 3 minutes on each side or until the chicken is done. Serve with the peanut sauce.
  • Peanut Sauce:.

1/4 cup soy sauce
2 T. plus 1 tsp.fresh lemon or lime juice
1T. molasses
1 garlic clove, crushed
1 tsp. grated fresh ginger
1/4 tsp crushed red pepper flakes
1 pound of boneless, skinless, chicken breasts - cubed.
1/3 cup water
1/3 cup smooth style peanut butter (NOT the natural style)
2 large, or 3 small bananas
2 T. Canola Oil
2T. chopped peanuts to garnish - optional

Steps:

  • Mix the soy sauce, 2 T. lemon juice, molasses, garlic clove, ginger and crushed red pepper together in a large bowl and stir in the chicken. Cover and chill for 20 minutes. After it has chilled, drain the marinade and reserve it. While the chicken marinates, mix together the water and peanut butter, and set aside. Slice the bananas into 1/4" thick slices, sprinkle with the remaining 1 tsp. of lemon juice, cover and set aside. In a large skillet or wok, heat the canola oil and stir fry the chicken for about 3 - 5 minutes, or until opaque. Push to the side of the pan, add the reserved marinade and the peanut butter mixture. Stir all the ingredients in the skillet and add the bananas, being careful not to break them apart as you stir them. Heat all through about 1 minute longer. Serve with steamed white rice (preferably a short grain sticky type) and sprinkle with chopped peanuts, if desired.

When I found the recipe, it was called Indonesian Chicken, and, not being Indonesian or knowing anyone from Indonesia, I can neither confirm nor deny that this is, indeed, Indonesian Chicken. It is, however, definitely a recipe for chicken, and a mighty tasty one at that. The peanut sauce is also useful to put on things that you don't want to serve naked, such as noodles, rice, or steamed veggies.

1 tablespoon sugar
1 tablespoon lemon juice

1/4 cup chopped green onion (including tops)
2 tablespoons olive oil
1/2 cup peanut butter (preferably creamy type)

  • Broil 3 inches from heat for 5 minutes.
  • Can also be cooked on preheated grill pan or stir fried, if you prefer.
  • Meanwhile, prepare spicy peanut sauce.
  • Saute green onion in the oil until limp.
  • Remove from heat and add peanut butter.
  • Gradually stir in water, then add remaining ingredients.
  • Cook over medium heat, stirring constantly, until it comes to a boil.
  • Reduce heat and simmer, uncovered, for 5 minutes, until the sauce is thickened enough to coat a spoon.
  • Stir occasionally while simmering.
  • Serve chicken with the spicy peanut sauce for dipping.
  • May also be served over hot cooked rice or noodles.

1 pound chicken thighs, cut into 1/2-inch pieces
¾ teaspoon salt
1 pinch ground white pepper
1 tablespoon sunflower seed oil
24 wooden skewers
1 cup water
5 tablespoons peanut butter
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon brown sugar
2 cloves garlic, minced
½ teaspoon salt
1 tablespoon lime juice

Steps:

  • Combine chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Soak wooden skewers in water to prevent burning during cooking.

2 cups water
1 pound fresh green beans, trimmed and snapped
2 teaspoons olive oil

2 teaspoons honey
1 tablespoon low sodium soy sauce
1 teaspoon red chile paste
