This is an all time favorite that has lasted me from grade school through adulthood. I've served it to just about everyone I know and have received nothing but rave reviews!

1 cup uncooked long grain white rice
2 cups water
1 pound fresh green beans, trimmed and snapped
2 teaspoons olive oil
1 pound skinless, boneless chicken breast halves - cut into chunks
¾ cup low-sodium chicken broth
⅓ cup smooth peanut butter
2 teaspoons honey
1 tablespoon low sodium soy sauce
1 teaspoon red chile paste
2 tablespoons lemon juice
3 green onions, thinly sliced
2 tablespoons chopped peanuts

Steps:

  • Bring the rice and water to boil in a pot. Reduce heat to low, cover, and simmer 20 minutes.
  • Place green beans in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender but crisp.
  • Heat the oil in a skillet, and cook the chicken 5 minutes on each side, or until juices run clear.
  • Mix the chicken broth, peanut butter, honey, soy sauce, chile paste, lemon juice in a saucepan over medium heat. Cook and stir 5 minutes, until slightly thickened. Mix in the green beans. Serve over rice. Garnish with green onions and peanuts.

1 cup honey
3/4 cup soy sauce
1/4 cup minced garlic (8 to 12 cloves)
1/2 cup peeled and grated fresh ginger root
2 (3 1/2 pound) chickens, quartered, with backs removed

Steps:

  • Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinate overnight in the refrigerator.
  • Preheat the oven to 350 degrees F.
  • Place the baking pan in the oven and bake for 30 minutes. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.

I'm Indonesian but I live in Spain. I'd like to share with you my recipe of satay ayam. It has helped me a lot to overcome my homesickness. I hope this dish will be one of your favorite Asian dishes. You will not be able to resist the sweet and salty taste of the peanut sauce!

1 pound chicken thighs, cut into 1/2-inch pieces
¾ teaspoon salt
1 pinch ground white pepper
1 tablespoon sunflower seed oil
24 wooden skewers
1 cup water
5 tablespoons peanut butter
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon brown sugar
2 cloves garlic, minced
½ teaspoon salt
1 tablespoon lime juice

Steps:

  • Combine chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Soak wooden skewers in water to prevent burning during cooking.
  • Bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil in a small saucepan; stir to combine. Remove from heat and add lime juice.
  • Thread marinated chicken onto skewers. Set about 2 tablespoons peanut sauce aside in a small bowl and brush the sauce in the bowl over chicken.
  • Heat a grill pan or large skillet over medium-high heat. Arrange chicken skewers in batches on grill pan and cook until chicken is no longer pink in the center, 1 to 2 minutes per side. Serve skewers with remaining peanut sauce from the saucepan.

This is a spicy but not too spicy recipe that is charged with flavor. You can increase or decrease the heat by adding more or taking away some of the chile flakes. Do not be put off by a seeminly long list of ingredients most are part of the spice mix and I'll bet you have them already at home. If you want your chicken to stay crisp after cooking it just keep it hot in the oven. I like to return it to the sauce and simmer for 5 minutes keeping the top side of the chicken above the sauce line. Serve with rice or noodles N.B. Panko is a product from Thailand.

1/2 cup white wine, halved (some for the raisins & some for the sauce)
4 tablespoons dark raisins
6 boneless skinless chicken thighs, cut in half through the center
1 egg
3 tablespoons water
1 cup panko breadcrumbs (Panko are better and what I use) or 1 cup breadcrumbs (Panko are better and what I use)
1 teaspoon chili flakes
3 tablespoons vegetable oil
3/4 cup onion, chopped
1 1/2 cups fresh tomatoes, chopped
2 teaspoons lime zest
1/4 teaspoon cinnamon
1/4 teaspoon cardamom
1/2 teaspoon coriander
1/2 teaspoon chili flakes
1 garlic clove, finely chopped
4 tablespoons coconut, shredded, unsweetened
1 tablespoon brown sugar or 1 tablespoon brown sugar substitute
2 tablespoons lime juice

Steps:

  • Pour 1/4 cup of wine over the raisins to plump them.
  • Whisk the egg and water together.
  • Mix Panko crumbs with 1 tsp chili.
  • Dip the cut thighs first in the egg mixture then the crumbs making sure they are well coated, dip twice if necessary.
  • Heat oil in a large skillet, turn heat to medium and slowly fry the chicken until golden on both side apprx 7 minutes per side - do not burn.
  • Remove from skillet and keep warm.
  • In the same pan saute the onions for 5 minutes, add tomatoes continue cooking for a further 5 minutes.
  • While the onions/tomatoes are cooking mix together: cardamon,lime zest, cinnamon, coriander, finely chopped garlic, 1/2 tsp chili flakes, coconut & brown sugar, mix well.
  • Add spice mixture to the tomato/onion in the pan.
  • Add raisins in the wine and the lime juice.
  • Simmer until the wine has almost evaporated, add remaining 1/4 cup wine, when the sauce is heated you may either return the chicken to the pan and simmer for 5 minutes or place the hot chicken pieces on a platter and surround with the sauce.
