Insalata Caprese with Basil Vinaigrette image

Summer salad of fresh mozzarella and heirloom tomatoes, over mixed greens with a fresh basil vinaigrette.

3 - 5 heirloom tomatoes, different colors and sizes, thickly sliced
1 - 2 balls, fresh mozzarella, drained and thickly sliced
Mixed baby lettuces
½ cup good quality extra-virgin olive oil
1½ tablespoons red wine vinegar
1 tablespoon water
1 garlic clove, chopped, preferably heirloom from the farm stand
1 teaspoon Dijon mustard
½ teaspoon kosher salt
2 cups loosely packed fresh basil leaves

Steps:

  • Scatter a serving platter with mixed baby lettuces. Arrange overlapping layers of tomatoes and mozzarella on top of the lettuces. Sprinkle with salt and fresh cracked pepper.
  • Put olive oil, vinegar, water, chopped garlic, mustard and salt into a blender. Coarsely chop the basil leaves and add to the blender. Mix on high for about 30 seconds until smooth. If necessary, add a little more water or olive oil to thin. Transfer to a jar.
  • With a spoon, drizzle basil vinaigrette all over tomato and cheese salad. Garnish with a few torn basil leaves and serve. Leftover vinaigrette will keep covered in the fridge for several days, bring to room temp for serving.

The Insalata Caprese Salad Recipe is a fresh salad made from ripe red tomatoes and super soft and fresh mozzarella cheese. In my visit to Italy in the Summer of 2014, there was not one meal that went by without having this salad. The term Caprese, came from Capri, which is very famous for its fresh tomatoes, lemons and cheese. The Caprese Salad makes a great summertime dish for dinner or even for parties. The addition of red wine vinaigrette is not authentic, but I sometimes like that tartness from the vinaigrette. Black pepper powder , freshly ground, to taste

Steps:

  • To begin making the Insalata Caprese Salad Recipe, we will first prepare and slice the tomatoes and cheese for the salad.
  • We will next arrange the tomatoes and mozzarella on a large serving platter.

This tastes like the salad that is served at a famous Italian restaurant chain in my area. It's perfect with fresh loaf of crusty bread. For the best flavor be sure to use fresh whole-milk mozzarella it puts the packaged varieties to shame. You can find fresh mozzarella in Italian delis, gourmet markets, cheese shops and some grocery stores.

14 ounces fresh mozzarella cheese, diced
1 red onion, sliced
⅓ cup extra virgin olive oil
⅓ cup balsamic vinegar

Steps:

  • In a large bowl, combine the tomatoes, cheese, onion, oil, vinegar, basil, and salt and pepper to taste. Toss and chill for 1 hour. Serve on large platter.
