Part pizza, part quesadilla, this snack sandwiches cheese, sauce and toppings between two flour tortillas. My kids have fun cutting the finished pie into slices like a traditional pizza.

Steps:
- Place one tortilla on a sheet of waxed paper sized to fit in your microwave. Spoon 2 tablespoons each of Cheddar and Mozzarella cheeses over the tortilla. Cover the cheese with turkey slices. Spread 1 tablespoon of pizza sauce over the turkey, and top with 1 tablespoon each tomatoes, black olives, and green peppers. Sprinkle with remaining Cheddar and Mozzarella cheeses, and place second tortilla on top. Place on a microwave-safe plate, and cover with a sheet of waxed paper.
- Cook on High in microwave until the cheese melts, about 1 1/2 minutes. Allow to cool 2 minutes before cutting into wedges.

ITALIAN PANZEROTTI
This is a stuffed inside-out fried pizza called Italian Panzerotti. The recipe calls for homemade dough, sauce, and stuffed with melted oozing cheese.

Steps:
- Mix the yeast and 1 cup of water (warm water to touch) and let this sit for around 4 to 5 minutes.
- Add the salt, sugar, oil, and flour and mix until dough forms a ball.
- Let rest covered for around 2 hours.
- Roll into 12 balls add to a cookie sheet cover and let rest for 1 more hour.
- Roll out dough into rounds on a floured board
- Place 1 tablespoons sauce on the dough in the middle.
- Place around 1 tablespoon of sliced chunk style whole milk mozzarella or provolone 1 tablespoon of marinara sauce and around 1 tablespoon of any meats or other ingredients (do not overstuff or the dough will rip).
- Fold over the rounds like a half-moon.
- Crimp all edges with a fork or ravioli crimping tool.
- Heat oil to 350 degrees.
- Fry on both sides for around 2 minutes each side or until golden brown flipping with two spatulas
- Drain on paper towels.
- Serve with more sauce or great the way they are plain, these are truly delicious with nothing on them.
- Sprinkle with grated cheese then add any of the herbs, spices of choice.
- Best eaten after cooling for a few minutes the filling is very hot.

FOCACCIA INSIDE OUT PIZZA BREAD
I was tired of making pizza the same old way, so I came up with this idea.

- 1. ADD IN INGREDIENTS: Cut pepperoni into halves or quarters. Cut canadian bacon into 8's. Slice and cut onion and bell pepper into bite size pcs. Place all ingredients on a baking sheet and bake at 400° for about 15 min. Set aside.
- 2. CHEESE: Grate 1 c Asiago and 6 oz. Bruschetta cheese and place in one bowl. Add chopped basil to bowl. This will be used IN the dough. Grate another cup of Asiago and 6 oz. Bruschetta and place in another bowl. This will be for the topping.
- 3. Place olive oil and hot water in bread machine pan, add in yeast and stir to dissolve. In a bowl mix together dry dough ingredients and then add to bread pan. Set bread machine on DOUGH ONLY cycle.
- 4. Once the dough begins to take shape, you can start adding ingredients.
- 5. Slowly add the pepperoni, canadian bacon, onion, bell pepper, cheese mixture. I do this in three stages. If you have to, get your hand in there and help the machine out. Wipe or scrape sides often.
- 6. Once dough has completed the kneading phase, it should resemble this.
- 7. After dough has risen, press into a 15x13 baking dish. Cover and let rise until doubled in size.
- 8. Once dough has risen, brush on pizza sauce and top with grated cheese mixture.
- 9. Bake at 400° for 35 min. Remove from baking dish onto cutting board and slice with pizza cutter.
PIZZA QUESADILLAS
When my husband and I needed a quick meal, I fixed this recipe using leftover ingredients. Unlike traditional Mexican quesadillas, it calls for Italian meats, cheeses and seasoning. Serve it with a green salad for a simple dinner for two. -Barbara Rupert, Edgefield, South Carolina

- In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. INSIDE-OUT PIZZA-DILLA MARGERITA

- Heat a small skillet over medium heat. Add the tablespoon of EVOO to the skillet, once around the pan. Add the garlic and red pepper flakes. Cook the garlic for a minute, then add the tomatoes and season with oregano, salt, and pepper. Simmer the tomatoes for 2 minutes, then remove from the heat.
- Heat a medium skillet over medium heat. Add a drizzle of EVOO and a flour tortilla. Cover the tortilla with an even layer of sliced cheese. Top it with one quarter of the tomatoes. Scatter one quarter of the basil over the tomatoes. Set a second tortilla in place on top. Cook it for 2 minutes on side one, drizzle the top of the tortilla with a touch of EVOO, and flip the pizza-dilla. Cook for 2 minutes more, or until golden and crisp on the flip side. Remove, cut into 4 pieces, and serve. Repeat this with the remaining ingredients to make 3 more pizza-dillas.
CRISPY DEEP-FRIED PIZZA
Steps:
- Preheat the oil to 365 degrees F. A deep-fryer is best, but if using a stove top method, fill a cast iron Dutch oven or heavy chicken fryer with oil about 4 inches deep.
- Roll dough out and cut it in half. Stir the oregano and basil into the pizza sauce. Slice the pepperoni. Spread half of the pizza sauce on half of each side, of the dough, add the cheese and pepperoni, distributing evenly. Apply a thin line of the water to the edge of the dough and fold each over onto itself and press to seal.
- Check the oil temperature and carefully add the pizza pockets. Cook for 2 minutes, turn over and cook for 1 minute more. Remove to a paper towel lined plate. Transfer the pizza to serving plates and garnish with remaining pizza sauce, Parmesan and fresh basil leaves.
- Combine all the dry ingredients in bowl of food processor or stand mixer. Or if by hand, combine in a medium bowl. Add the warm water to small glass bowl. Sprinkle the yeast over and let it sit for 10 to 15 minutes. Add oil and yeast mixture to dry ingredients and depending on method using, combine until a dough ball forms. For food processor, pulse on dough setting until dough is smooth and elastic. For stand mixer, slow speed until dough is smooth and elastic. For hand method, knead on lightly floured surface until smooth and elastic. Form the dough into a ball. Lightly oil a large bowl, add the dough ball to it, cover tightly with plastic wrap or a well-floured tea towel, and set in a warm place or a 100 degree F oven until doubled, about 1 hour.
- Punch down, and let rest for 5 minutes. Divide the dough in half for 2 large pizzas or into 4 equal pieces for calzones or small individual pizzas. Roll the dough into 1/4-inch thick rounds. Cooks Note: Can be made ahead and also freezes well.
