This tastes remarkably similar to the maple and brown sugar instant oatmeal varieties you buy in little packets. Save money by making your own! For each batch of oatmeal, combine 2/3 cup quick-cooking oats with 1 to 2 tablespoons of mix; add boiling water until desired consistency is reached.

By toasting and grinding rolled oats in advance, you can make your own instant oatmeal, cutting your morning cooking time and allowing you to create novel flavors.

4 cups old-fashioned rolled oats
1/4 cup light-brown sugar
1 1/4 teaspoons coarse salt
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees. Spread oats on a rimmed baking sheet; bake until lightly toasted but not browned, about 15 minutes. Let cool. Pulse in a food processor until coarsely chopped. Mix in 1 cup of a combination of add-ins (see our suggestions below), and stir in sugar, salt, and cinnamon, or more to taste, before storing in an airtight container for up to 2 weeks.
  • To serve, stir in boiling water until desired consistency is reached. Let stand 2 to 3 minutes.

2 tablespoons milk, or to taste

Steps:

  • Combine oatmeal, brown sugar, vanilla, cinnamon, and salt in a multi-functional pressure cooker (such as Instant Pot®). Pour in water and mix to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 8 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
  • Let sit until desired consistency is reached, about 5 minutes. Stir and serve with a splash of milk.

2 cups sugar
3 tablespoons cocoa
1/2 cup butter or 1/2 cup margarine (we use butter, better for you)
1/2 cup milk
2 1/2 cups oatmeal
1 teaspoon vanilla
1/2 cup peanut butter (your choice)

Steps:

  • Mix and bring to a boil for two minutes: sugar, cocoa, butter/margarine& milk.
  • Remove from fire and stir in immediately: oatmeal, vanilla, peanut butter.
  • Place or drop by teaspoon on waxed paper, then chill in fridge.
  • It is best if you use a cookie sheet lined with waxed paper and then put in refridge.
  • No need to cover unless you have scents in yours.
  • Once firm remove and place in containers separated by waxed paper.
  • Preparation time: 5 minutes Cooking & Completion time: 25 minutes.
