4 Yukon Gold potatoes, cubed
1 ½ cups mushrooms, halved
1 onion, cut into 6 wedges

3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried rosemary

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
  • Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

1 ½ tablespoons Italian seasoning
1 ½ tablespoons onion powder

1 ½ pounds beef stew meat, cubed
2 ¾ cups beef broth
1 cup dry red wine
2 tablespoons tomato paste

Steps:

  • Combine flour, Italian seasoning, onion powder, salt, and pepper in a gallon-sized resealable plastic bag. Shake to mix seasoning. Add beef to bag, seal, and shake to coat.
  • Select Sear function on a multi-functional electric pressure cooker (such as Instant Pot®) according to manufacturer's instructions. Add coated beef cubes and sear until lightly browned on all sides, 7 to 10 minutes. Pour in broth and red wine. Add tomato paste and garlic. Stir in potatoes, onion, carrots, celery, rosemary, and bay leaf.

2 pounds boneless chuck roast
3 tablespoons extra-virgin olive oil (divided)
2 teaspoons kosher salt (divided)
1/2 teaspoon ground black pepper (divided)
1 large yellow onion
2 cloves garlic
1 pound carrots (about 6 medium)
1 large russet potato*
1 (14.5-ounce can) low-sodium beef broth
1 tablespoon Worcestershire sauce**
1 bay leaf
1 teaspoon dried thyme
1 (8-ounce can) no salt added tomato sauce
2 tablespoons cornstarch*
2 tablespoons water
1 1/2 cups fresh or frozen peas (no need to thaw)
Fresh parsley (or fresh rosemary, optional for serving)

Steps:

  • Cut the chuck roast into 1 1/2-inch cubes, removing any large, tough pieces of fat or gristle.
  • Turn the Instant Pot to SAUTE. Add 1 tablespoon of the oil. Once the oil is hot and shimmering (a drop of water should sizzle if added to the surface of the pot), add half of the beef, 1 teaspoon salt, and 1/4 teaspoon pepper. The cubes should be in a single layer and not too crowded so that they brown nicely. Let the cubes of beef cook undisturbed for 4 to 5 minutes (resist the urge to peek!), until the bottom of the cubes develop a dark-brown crust and come away from the pan easily. Turn and continue searing until dark and brown all over, about 4 additional minutes. Transfer the seared meat to a clean plate or bowl. Add another 1 tablespoon olive oil to the pot. Once hot, add the remaining beef and remaining 1 teaspoon salt and 1/4 teaspoon pepper. Sear the remaining beef. If the pan gets too dry, add a bit more oil as needed.
  • While the meat browns, dice the yellow onion. Mince the garlic. Peel the carrots and cut them into 1/2-inch-thick diagonal slices.
  • Remove the second batch of browned beef to the plate with the first batch. Add the remaining tablespoon olive oil and the onion to the Instant Pot. Cook, stirring occasionally, until the onion begins to soften and browns, about 6 minutes.
  • While the onion cooks, scrub and peel the potato and cut it into 3/4-inch chunks. If you haven't finished cutting the carrots, do so now.
  • Add the garlic to the Instant Pot. Cook, stirring constantly until fragrant, about 30 seconds. Add the beef broth and use a spoon to scrape the brown bits from the bottom of the pan. Make sure you remove every last bit of stuck-on food so that you don't receive a "burn" warning.
  • Stir in the carrots, potatoes, Worcestershire sauce, bay leaf, thyme, and the browned beef, along with any meat juices that have collected on the plate. Pour the tomato sauce on top. Do not stir again.
  • Close and seal the Instant Pot. Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes. Vent to release any remaining pressure, then carefully open the lid. Remove and discard the bay leaf.
  • In a small bowl, whisk together the cornstarch and water to create a slurry. Add to the Instant Pot and stir until the stew thickens. Add the peas and stir to warm through. Serve hot, sprinkled with fresh parsley.

2 tablespoons unsalted butter
1 pound baby Dutch yellow potatoes, cut into 1-inch chunks
4 carrots, cut diagonally into 1/2-inch-thick slices
4 stalks celery, cut into 1/2-inch-thick slices
3 cloves garlic, minced
4 cups low sodium beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce

1 teaspoon dried rosemary
3/4 teaspoon smoked paprika
1 teaspoon caraway seeds, optional

Steps:

  • Season beef with salt and pepper, to taste. Set a 6-qt Instant Pot® to the high saute setting. Melt butter; working in batches, add beef and cook until evenly browned, about 2-3 minutes. Stir in potatoes, carrots, celery, garlic, beef broth, tomato paste, Worcestershire, thyme, rosemary, paprika, caraway seeds and bay leaves until well combined; season with salt and pepper, to taste. Select manual setting; adjust pressure to high, and set time for 30 minutes. When finished cooking, quick-release pressure according to manufacturer's directions. In a small bowl, whisk together flour and 1/2 cup stew broth. Select high sauté setting. Bring to a boil; stir in flour mixture and cook, stirring frequently, until slightly thickened, about 3-4 minutes. If the mixture is too thick, add more beef broth as needed until desired consistency is reached. Stir in peas until heated through, about 30 seconds. Serve immediately, garnished with parsley, if desired.

1 1/2 - 2 pounds beef chuck roast (, trimmed and cut into 1 - 2 inch chunks (OR beef stew meat if you can't find chuck roast))
1 -2 teaspoons sea salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
2 1/2 teaspoon Italian seasoning (, divided)
1/3 cup flour (, use gluten free as needed or 2 tablespoons almond flour for keto)
cooking oil
1 medium onion (, cut into large chunks)
3-4 cloves garlic (, minced)
6 Tablespoons tomato paste
2 Tablespoons balsamic vinegar or red wine
4 medium Yukon potatoes (, peeled and chopped into 1 inch chunks (sub with turnips (or large cauliflower florets for low carb / keto))
1 large sweet potato (peeled and chopped into 1 inch chunks (sub with pumpkin for low carb / keto))
3 medium carrots (, peeled and cut into thick slices (leave out for low carb / keto))
2 ribs celery (chopped)
1-2 teaspoons Worcestershire sauce
1 bay leaf
4-5 cups beef broth (, homemade or low sodium)

Make a slurry with 2 tablespoons cornstarch or flour

Steps:

  • In a large zip-top bag, combine flour, salt, pepper, onion powder, and 1/2 teaspoon Italian seasoning. Add meat and shake until well coated.
  • Browning the meat: (feel free to skip to step 5 and add all the ingredients together instead). Set the Instant Pot to SAUTE, add cooking oil and brown the meat on all sides. Meat will not be cooked through. (Be sure not to crowd the pot - you may have to work in batches). Transfer browned meat onto a large plate.
  • Place the pot back in the pressure cooker and add onions and garlic and sauté for a minute or two then add the balsamic vinegar and tomato paste until just hot enough to deglaze the pot, about 1 minute.
  • Add the beef back into the pot along with potatoes, sweet potato, carrots, celery, Worcestershire sauce, the remaining 2 teaspoons Italian seasoning, bay leaf, beef broth and (star anise if using). Stir to combine. If there is not enough liquid to cover the vegetables, add water - only as much as needed.
  • Cover and seal the lid and set to 20 minutes with High Pressure on Manual mode. Allow the pressure cooker to release naturally for at least 15 minutes. Adjust seasonings with salt and pepper if necessary (discard bay leaf and star anise if used). Serve hot with fresh parsley.

4 carrots (peeled and cut into chunks)
4 celery stalks (cut into chunks)
1 onion (chopped)
3 garlic cloves (roughly minced)
1 1/2 pounds small red potatoes (washed (cut in half or quarters if large))
3 pounds boneless beef chuck roast
salt and pepper
1/4 unbleached all-purpose flour
1 1/2 Tablespoons vegetable oil
1 1/2 cups dry red wine
2 cups low sodium chicken or low sodium beef broth (about one 14.5 ounce can)
1/2 Tablespoon low sodium soy sauce
1 teaspoon dried thyme leaves
2 dried bay leaves

Steps:

  • Prep vegetables and then beef.
  • Rinse beef and pat dry with a paper towel. Cut the beef into 2 inch pieces, trimming most of the fat. Season cuts of beef with salt and pepper. Sprinkle pieces with flour on the beef (you may not use all of the flour).
  • Set pressure cooker to Brown and set time to 25 minutes. Add 1 Tablespoon oil and allow the pressure cooker to heat up for 2 to 3 minutes. Brown beef on each side in batches, about 2 to 4 minutes on each side, adding more oil if needed. Remove beef and place on a clean plate and set aside.
  • Add carrots, celery and onions to pressure cooker, cook vegetables for about 3 minutes or until aromatic and slightly browned, stirring occasionally. Add garlic and stir and cook for 1 minute. Add potatoes and cook for another 2 minutes.
  • Return beef to pressure cooker and add red wine, broth, soy sauce, dried thyme and bay leaves. Season with salt and pepper. Mix with a rubber spatula. Place lid on top of pressure cooker and turn to closed position. Make sure the vent on top is set to closed as well. Set pressure cooker to High Pressure for 40 minutes.
  • Release the pressure (set vent to open and allow pressure to release until there is no more hissing noise) and check beef and potatoes, if beef is tender enough to cut with a fork and potatoes are cooked, cooking is complete. Skim the fat on top with a spoon and remove bay leaves. Optional: Leave pressure cooker on warm until ready to serve.
