1 Tbsp. olive oil
1 lb. 93%-fat-free ground turkey
1/2 cup chopped onions
3 cloves garlic, minced
3/4 lb. sweet potatoes (about 2 small), peeled, cut into 1/2-inch pieces
1 jar (15 oz.) INSTANT POT Smoky Chipotle Sauce
1 can (14.5 oz.) diced tomatoes, undrained
1 cup each chopped green and red peppers
1/2 cup water
3 Tbsp. tomato paste

Steps:

  • Set SAUTÉ setting on INSTANT POT for 7 min. Add oil to pot; heat 2 min. Add turkey; cook 3 min., stirring frequently. Add onions and garlic; cook and stir 2 min.
  • Add remaining ingredients; stir. Close and lock lid. Turn Pressure Valve to Sealing position. Cook 10 min. using MANUAL/HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release to release steam. Remove lid. Stir before serving.

It doesn't get easier than this! Brown some meat, then toss in the rest of the ingredients and hit start! Feel free to adjust the heat level by adding more chipotle peppers and/or adobo sauce. The cocoa powder and cinnamon are ideas I got from my favorite chili seasoning available at a local spice shop - they really transform the dish! I like to top this with sour cream, green onion and shredded smoked cheddar.

1 tablespoon chili powder
2 teaspoons smoked paprika
1 teaspoon salt
1 teaspoon oregano
1 teaspoon unsweetened cocoa powder
½ teaspoon cumin
¼ teaspoon ground cinnamon
¼ teaspoon ground coriander
¼ teaspoon black pepper
1 tablespoon olive oil
1 pound ground turkey
1 onion, chopped
1 jalapeno pepper, seeded and minced
2 (14.5 ounce) cans fire-roasted diced tomatoes
1 (15.5 ounce) can dark red kidney beans, drained and rinsed
1 (15.5 ounce) can light red kidney beans, drained and rinsed
1 (15 ounce) can tomato sauce
1 chipotle pepper in adobo sauce, minced
2 tablespoons adobo sauce from chipotle peppers
salt to taste

Steps:

  • Combine chili powder, smoked paprika, salt, oregano, cocoa powder, cumin, cinnamon, coriander, and black pepper in a small bowl. Set seasoning mix aside.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil over high heat and brown ground turkey until crumbly, 3 to 4 minutes. Add onion and jalapeno and cook an additional 2 to 3 minutes. Add tomatoes, kidney beans, tomato sauce, chipotle pepper, adobo sauce, and seasoning mix. Mix to combine, scraping up any browned bits off the bottom of the pot. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir chili and adjust salt, if desired. Serve with your favorite toppings.

One of our favorites and you get a full flavored chili without waiting for hours. This recipe was born on a Tuesday night when I only had 4 sweet potatoes and frozen beef that needed to be used.

1 lb beef chuck, 1-inch cubes
1 lb ground beef
2 teaspoons vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 chipotle chiles in adobo, finely chopped
1 (15 ounce) can black beans
1 large sweet potato (or 4 small ones)
2 tablespoons chili powder
2 tablespoons ground cumin
1 teaspoon dried oregano
1 teaspoon paprika
3 tablespoons tomato paste
1 teaspoon salt
1 -15 ounce crushed tomatoes
1 (15 ounce) can tomato sauce
2 cups water

Steps:

  • Set your instant pot to saute mode. Add in the oil, onions and garlic. Cook until soft.
  • Stir in the stew meat and ground beef. Cook until browned, about 10 minutes.
  • Pour in the water and deglaze the pan for a minute. Turn off instant pot.
  • Stir in remaining ingredients except for the beans and sweet potatoes. Cook on high pressure for 20 minutes. Natural release for 5 minutes.
  • Add in the sweet potatoes and rinsed beans. Cook on high pressure for another 10 minutes. Do a quick release so the sweet potatoes aren't overcooked.
  • Salt to taste and serve with your favorite chili toppings!
