1/3 cup long-grain white rice
1 1/2 pounds zucchini (about 3 medium), sliced crosswise 1/4 inch thick
6 1/2 tablespoons olive oil, divided
1/2 pounds plum tomatoes, sliced crosswise 1/4 inch thick
1 medium onion, halved lengthwise and thinly sliced
3 garlic cloves, finely chopped
2 large eggs, lightly beaten
1 teaspoon chopped thyme
1/2 cup grated Parmigiano-Reggiano, divided

Steps:

  • Preheat oven to 450°F with racks in upper and lower thirds.
  • Cook rice according to package instructions.
  • While rice cooks, toss zucchini with 1 tablespoon oil and 1/2 teaspoon salt in a shallow baking pan. Toss tomatoes with 1/2 tablespoon oil and 1/4 teaspoon salt in another baking pan.
  • Roast zucchini in upper third of oven and tomatoes in lower third, turning vegetables once halfway through roasting, until tender and light golden, about 10 minutes for tomatoes; 20 minutes for zucchini. Leave oven on.
  • Meanwhile, cook onion and garlic with 1/2 teaspoon salt in 2 tablespoons oil in a large heavy skillet, covered, over low heat, stirring occasionally, until very tender, 15 to 20 minutes.
  • Stir together onion mixture, cooked rice, eggs, thyme, 1/4 cup cheese, 1 tablespoon oil, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Spread half of rice mixture in a shallow 2-quart baking dish, then top with half of zucchini. Spread remaining rice mixture over zucchini, then top with remaining zucchini. Top with tomatoes and drizzle with remaining 2 tablespoons oil, then sprinkle with remaining 1/4 cup cheese.
  • Bake in upper third of oven until set and golden brown, about 20 minutes.

1-1/2 cups uncooked brown rice
2 cups chopped onions, divided
3 tablespoons soy sauce
2 tablespoons butter, melted
1/2 teaspoon dried thyme
4 cups fresh cauliflowerets
4 cups fresh broccoli florets
2 medium sweet red peppers, julienned
2 garlic cloves, minced
3 tablespoons olive oil
1 cup salted cashew halves
2 cups shredded cheddar cheese, optional

  • In a greased 3-qt. baking dish, combine the broth, rice, 1 cup onion, soy sauce, butter and thyme. Cover and bake at 350° for 65-70 minutes or until rice is tender., Meanwhile, in a large skillet, saute the cauliflower, broccoli, peppers, garlic and remaining onion in oil until crisp-tender; spoon over rice mixture. , Cover and bake for 10 minutes. Uncover and sprinkle with cashews and cheese if desired. Bake 5-7 minutes longer or until cheese is melted.

Creamy baked rice and broccoli, an easy delicious side dish or light lunch with a salad and sliced tomatoes! My DD will only eat rice if cooked like this (or chinese) it is really easy, and tastes great! Good re-heated too! I have also used spinach or 1 cup of frozen peas instead of the broccoli. I think this came from a milk calander.

1/4 cup butter
1 small onion, chopped
2 cloves garlic, minced
1/4 teaspoon thyme
1 cup long grain rice
1 tablespoon all-purpose flour
1 1/2 cups chicken broth
1 cup chopped broccoli
1 cup milk
2 tablespoons grated parmesan cheese
1 teaspoon lemon, zest of
1/2 cup dried breadcrumbs
1/4 cup grated parmesan cheese
2 tablespoons melted butter
2 tablespoons chopped fresh parsley

  • Preheat oven to 375 In a large fry pan, melt butter.
  • Add onion and garlic and cook for 1 min over med heat.
  • Add thyme, rice, and flour, stirring for 1 minute Pour in chicken broth, stir and bring to a boil, cook for 1 minute Remove from heat.
  • Stir in broccoli, milk and parm cheese.
  • Mix well and pour into a buttered 6 cup casserole dish.
  • Cover and bake for 35 min or until tender.
  • Meanwhile, to make crumb topping, toss together all ingredients and set aside.
  • Remove casserole from oven, stir in lemon zest and sprinkle with crumb topping.
  • Broil for 1 to 2 min until golden.

SPINACH, SARDINE AND RICE GRATIN



Spinach, Sardine and Rice Gratin image

Sometimes a can of sardines comes in very handy and this dish is a great way to work more high-omega 3 fish into your diet. It is a classic Provençal gratin, traditionally made with fresh sardines but just as good made with the skinless, boneless olive-oil packed sardines I buy at Trader Joe's. You are getting lots of calcium, Omega-3 fatty acids and iron from both the sardines and the spinach.

2-3 3/4-ounce cans boneless, skinless and boneless sardines packed in olive oil
2 pounds spinach (2 generous bunches), stemmed and washed in two changes of water or 1 pound baby spinach
1 tablespoon extra virgin olive oil
Salt and freshly ground pepper to taste
1 medium onion, finely chopped
2 to 4 garlic cloves, minced
1 teaspoon fresh thyme leaves, roughly chopped, or 1/2 teaspoon dried thyme
1 teaspoon all-purpose flour
1/2 cup low-fat milk
1 cup cooked rice (brown or white; I like to use Arborio)
1/4 cup fresh or dry bread crumbs

Steps:

  • Preheat the oven to 425 degrees. Oil a 1 1/2 to 2-quart gratin or baking dish. Remove the sardines from the oil and separate them into fillets. Set the oil aside.
  • Wilt the spinach either by steaming or blanching. To blanch bring a large pot of water to a boil, salt generously and add the spinach. Blanch for no more than 20 seconds (do this in batches). Transfer to a bowl of cold water, drain and squeeze out excess water. If you prefer, you can wilt the spinach by steaming for about 1 minute over an inch of boiling water. Chop medium-fine.
  • Heat the olive oil (not the oil from the sardines) in the skillet over medium heat and add the onion and a pinch of salt. Cook, stirring, until tender, 5 to 8 minutes. Add a generous pinch of salt, stir in the garlic and thyme and cook, stirring, until fragrant, 30 seconds to a minute, then add the chopped wilted spinach, flour, and salt and pepper to taste. Stir together for 1 minute, until everything is blended. Add the milk and cooked rice and stir together for about 1 minute, until you no longer see liquid in the pan. Remove from the heat. Taste and adjust salt and pepper.
  • Spread half the rice and spinach in the bottom of the baking dish. Top with the sardine fillets in one layer. Drizzle a tablespoon of the oil from the cans over the sardines, then top with the remaining rice and spinach in an even layer. Sprinkle on the breadcrumbs and drizzle on another tablespoon of the oil from the sardine cans. Place in the oven and bake 15 minutes, until sizzling. Serve hot or warm.

1/3 cup brown rice
3 tablespoons butter or 3 tablespoons margarine
1 red onion, chopped
2 garlic cloves, minced
1 carrot, cut into matchsticks
1 zucchini, sliced
2 (3/4 ounce) baby corn, halved lengthways
2 tablespoons sunflower seeds
3 tablespoons mixed fresh herbs, chopped
1 cup mozzarella cheese, grated
2 tablespoons whole wheat breadcrumbs
salt & pepper, to taste

  • Preheat oven to 350.
  • Cook the rice in a saucepan of boiling, lightly salted water for 20 minutes. Drain well.
  • Lightly grease a square baking dish with 1 Tablespoon butter or margarine.
  • Heat the remaining 2 T butter or margarine in a skillet. Add the onion and cook stirring constantly for 2 minutes or until soft and translucent.
  • Add the garlic, carrot, zucchini, and corn, cook stirring constantly for additional 5 minutes.
  • Mix the rice with sunflower seeds and mixed herbs and stir into the pan.
  • Stir in half of the mozzarella cheese and season with salt and pepper to taste.
  • Spoon the mixture into the prepared dish and top with the bread crumbs and remaining cheese.
  • Bake in oven for about 25-30 minutes, or until the cheese has begun to turn golden, serve immediately.
