Chicken Garlic Ginger Healing Soup image

Have a cold or the flu? Try this soup to kick up your immune system and get healthy fast! Plus, this soup tastes SO good. My husband loves it! (Whew!) This soup is also great for inflammation and arthritis, due to the healing qualities of gingerol (from the ginger).

2 tablespoons olive oil
2 tablespoons fresh garlic, minced
2 tablespoons fresh ginger, minced
1 tablespoon ginger paste (optional)
1 teaspoon cayenne pepper
salt, to taste
pepper, to taste
1 large sweet onion, Finely diced
2 lbs boneless skinless chicken breasts, cut into pieces
1/2 cup fresh carrot, sliced
32 ounces chicken broth, organic
6 -8 cups water, depending on preference
1 cup fresh spinach

Steps:

  • Heat olive oil in a large pan.
  • Add fresh garlic, fresh ginger, and onion.
  • Cook for 3-4 minutes. Add Ginger paste, cayenne pepper, and salt & pepper. Cook for an additional 3-4 minutes, stirring often.
  • Add the chicken broth, water, chicken, and carrots.
  • Bring to a boil. Reduce heat and simmer for 30 minutes (feel free to cook on low for up to an hour).
  • Add spinach and let cook for 5 minutes just before serving.
  • Note: you can also add mushrooms, to add in more antioxidants. Simply add to the soup at the same time you add the carrots.

3 lbs chicken thighs
2 tablespoons curry powder
1/2 teaspoon sea salt or 1/2 teaspoon salt
2 tablespoons cooking oil
1 tablespoon grated fresh ginger
2 large leeks, halved lengthwise, rinsed, and sliced
1 small orange, cut in wedges
1 cup French lentils, rinsed and drained
1 (14 ounce) can reduced-sodium chicken broth
1 cup dry white wine (optional)
1 -2 head baby bok choy, separated into individual leaves

Steps:

  • Skin chicken, if desired. Sprinkle chicken with 1 tablespoon curry powder and salt. Brown chicken pieces, half at a time if necessary, in 4-quart Dutch oven in hot oil over medium-high heat. Remove from pan. Add ginger, leeks, orange wedges, and remaining curry powder. Cook and stir 2 to 3 minutes or until leeks are tender.
  • Stir in lentils, broth, and wine. Return chicken pieces to pan. Bring to boiling; reduce heat. Cook, covered, for 55 to 60 minutes or until chicken is tender and no longer pink (170 degrees F).
  • Remove chicken; stir bok choy into lentil mixture. Use slotted spoon to serve.

This recipe has become a staple in my home. The crushed red pepper gives the dish some zing without being too spicy.

1 cup chopped onion
1/4 cup bottled Italian dressing
1 tablespoon chopped peeled fresh ginger
1/2 teaspoon dry crushed red pepper
1/2 teaspoon curry powder
1/4 teaspoon ground turmeric
4 boneless skinless chicken breast halves
1 tablespoon olive oil
1/2 cup canned low sodium chicken broth

Steps:

  • Mix first 6 ingredients in glass baking dish. Add chicken; turn to coat with marinade. Cover and refrigerate at least 2 hours and up to 1 day.
  • Remove chicken from marinade and reserve marinade. Pat chicken dry and sprinkle with salt and pepper.
  • Heat olive oil in heavy large skillet over medium-high heat. Add chicken to skillet and sauté until brown, about 3 minutes per side.
  • Add reserved marinade and chicken broth and bring to boil. Reduce heat to medium-low and simmer uncovered until chicken is cooked through, turning occasionally, about 6 minutes.
  • Transfer chicken and sauce to platter. Serve with rice and plain yogurt on the side, if desired.

I developed this easy recipe while suffering from a terrible cold this winter. I started making it for my friends while they were sick, and it really helped their colds and it tasted fantastic. Try it out next time you're sick, or have it anytime.

2 1/2 cups water
2 cups chicken stock (or use 2 cups water and 2 teaspoons of chicken stock base like "better than Bouillon")
2 boneless skinless chicken thighs or 1 boneless skinless chicken breast
2 teaspoons vegetable oil
1/2 teaspoon creole seasoning
1/2 teaspoon red chili pepper flakes
4 baby carrots or 1 small carrot
2 green onions, finely chopped
1/4 cup red bell pepper, finely sliced
1/2 stalk celery, sliced
1 cup fresh Baby Spinach
1/2 cup zucchini, sliced
1 large garlic clove, finely chopped
1/4 cup gingerroot (finely grated with juice)
1 teaspoon dried lemon grass (pulse in spice grinder or use mortar and pestle to grind into fine powder)
2 teaspoons curry (Malaysian Ginger Curry or you can use Thai green or red curry paste)
1 5/8 ounces Thai rice noodles (1.6 oz bag Thai Kitchen Ginger flavored rice noodle soup)

Steps:

  • Chop chicken and veggies into med sized chunks. Spinach can be roughly chopped and set aside to add at the end with the noodles.
  • Add vegetable oil, chicken (chopped into med sized chunks also), creole seasoning, and all the veggies except the zucchini and spinach. Saute for 2-3 minutes on medium high.
  • Add water, chicken broth, noodle flavor packets, chili flakes, garlic, ginger and lemon grass. Bring to a boil and then let simmer on Med heat for 10 minutes. Add Zucchini and curry. Let simmer another 2-3 minutes. Then add spinach and noodles. Let cook for 3-4 minutes. Enjoy.
