Learn how to make a delicious penne pasta and sausage from scratch in an instant pot. This Instant Pot Penne Pasta is cooked perfectly in a creamy tomato sauce. It's loaded with savory sausage. It's the perfect weeknight meal!

1 pound dried penne pasta
1½ tbsp olive oil
1 pound Sweet Italian chicken sausage ((remove casing) )
1½ cup diced yellow onion
1 tbsp minced garlic
1 can (14.5 oz) diced tomatoes
1 tsp Italian seasoning
½ tsp dried basil
3 cups chicken broth
¾ cup heavy cream
½ cup freshly grated parmesan cheese
salt and pepper ((to taste if needed))

Steps:

  • Press the "Sauté" function key. When Instant Pot displays "Hot", add 1½ tbsp of oil. Add Italian sausage, cook undisturbed for 1 minute, stir for another minute, then add onion. Cook for 3 minutes.
  • Add garlic, cook until fragrant. Add diced tomatoes, bring to a boil for about 2 minutes, add the Italian seasoning, and dried basil. Be sure to scrape the bottom of the pot to keep it from burning. Turn the instant pot off.
  • Add penne pasta and press evenly on top of the sausage mixture. DO NOT STIR! Add chicken broth, press the pasta down gently to make sure it is submerged in liquid. DO NOT STIR!
  • Put the lid on, sealed, and set to manual for "4 minutes". After the cooking cycle finished, wait for 5 minutes then quickly release the pressure.
  • Open the lid and turn on the "Sauté" setting. You will see a lot of juices but it's normal. Stir and simmer the pasta and sauce for about 2-3 minutes. Note: If you find the texture is too hard to your liking, just simmer the pasta a bit longer until you reach the desired consistency. Stir occasionally.
  • Add heavy cream. Stir lightly for 1-2 minutes or until the liquid is thickened. Add parmesan cheese, stir to combine. Add salt and pepper if necessary.

2 tsp olive oil
1 small yellow onion
2 cloves garlic
2 cups water
1/4 tsp salt ((plus extra to taste))
1/4 tsp crushed red pepper flakes
1/4 tsp dried basil (or fresh basil, to taste)
1/8-1/4 tsp black pepper
12 oz penne pasta
2 cups spaghetti sauce ((snag your favorite!))
1 TBSP cream cheese
2 handfuls fresh baby spinach
Parmesan cheese (for topping, to taste)

Steps:

  • First measure our all your ingredients and prep your veggies. This dish comes together quickly!
  • Peel and finely chop your onion. Peel, smash, and mince garlic.
  • Using a 6-Quart Instant Pot, set to sauté function, add 2 tsp oil, and heat. Sauté onions approx. 3-4 minutes or until desired tenderness is reached, then add garlic and cook an additional 30 seconds until fragrant.
  • Press "CANCEL/OFF" and add water and pasta. Stir to combine, making sure the onions/garlic are incorporated into the liquid and not stuck to the bottom.
  • Add crushed red pepper flakes, basil, salt, and pepper and top with 2 cups of spaghetti sauce but DO NOT STIR.
  • Secure the lid and place the vent in the sealing position. Set to "MANUAL" or "PRESSURE COOK" mode on "HIGH" pressure. Use the +/- button to adjust the cook time to 5 minutes. The general rule of thumb for cooking pasta in the Instant Pot is to cook for half the box's cook time for the noodles. Double check your pasta box and adjust time as needed.
  • The Instant Pot will take an adittional 5-8 minutes or so to come to presure before the countdown begins. When the Instant Pot beeps and the countdown has finished, quick release the pressure by flipping the valve to venting position. Stand back as the steam releases.
  • Once the pin drops and the lid unlocks, remove lid and mix in the cream cheese and spinach. Return the lid for a minute while the spinach wilts. Snag a noodle to taste-test then adjust spices as needed, adding extra of anything you'd like. I added extra red pepper flakes to mine - yum!
  • Top with grated Parmesan cheese and dig in while it's hot!

  • Combine 1 pound penne, 4 cups water and 2 teaspoons kosher salt in an Instant Pot® multi-cooker. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 5 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. There is no need to drain the pasta, but you can stir in 1 tablespoon butter or olive oil to keep it from sticking.

1 cup sliced bell peppers, any color
1 (12 ounce) package Italian-style chicken sausage links, or more to taste, casings removed

1 (26 ounce) jar marinara sauce
3 cups water
3 cups chopped fresh spinach, or more to taste
10 ounces penne pasta
1 tablespoon chopped fresh basil
1 tablespoon Italian seasoning
1 cup shredded Italian cheese blend

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and allow to heat. Add onion and peppers to hot oil; cook until they begin to get tender, 3 to 4 minutes. Add sausages and cook, breaking them up with a wooden spoon, until lightly browned, 4 to 5 minutes. Add garlic and saute for 1 to 2 minutes. Add marinara sauce, water, spinach, pasta, basil, and Italian seasoning; mix to combine. Cancel Saute function.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 5 minutes. Then release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in 1/2 cup shredded Italian cheese until combined. Serve with remaining cheese sprinkled on top.
