INSTANT POT HOMEMADE PORK AND BEANS
Your childhood favorite pork n' beans made at home in your Instant Pot with dried beans and lots of crispy bacon and just a couple other pantry staples.

Steps:
- Pour the beans into a mixing bowl and fill will lots of water. Add in 1 Tbsp of salt. Soak the beans for 8-12 hours (see note below).
- Pour the beans into a colander and rinse thoroughly. Discard the soaking water.
- Pour the beans into your Instant Pot liner. Pour 4 cups of water into the Instant Pot liner.
- Cover the Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 20 minutes for pinto beans and 30 minutes for navy beans. When the time is up let the pot release the pressure naturally for 10-20 minutes and then move the valve to venting. Remove the lid. Drain off any excess water.
- Add in 2 cans of tomato sauce, Dijon mustard, molasses, 1/2 tsp salt and pepper to taste. Gently stir. Add in the bacon and gently stir.
- Serve immediately or turn the Instant Pot to warm and serve at your leisure. The beans will stay good on warm for up to 3 hours.

- **DISCLAIMER: I created this recipe using a 6 quart instant pot DUO 60. Some users have had problems with a burn notice for this recipe using different versions of the instant pot. I have tested it many times with this version and had no issue.
- Add beans, water and salt to instant pot. Cook on manual (high pressure) for 25 minutes. Allow the pressure to naturally release.
- Remove lid and pour beans into a colander/strainer. Rinse with cold water. Set aside.
- Set Instant Pot to saute setting. Add bacon and saute for a few minutes until it starts to get golden brown, tossing and scraping down the bottom of the pot often. Drain some of the grease.
- Add bell pepper and onion and cook until tender.
- Turn IP off. Add bbq sauce, ketchup, mustard, vinegar and liquid smoke to the pot and stir well to combine.
- Add brown sugar, water and beans and stir to combine.
- Secure IP lid, close steam valve and cook on Manual (high pressure) for 15 minutes. Natural release the pressure.
- Carefully open lid, and gently stir mixture to combine. Enjoy!

- Add beans, water, and salt to your instant pot. Cook on manual, using high pressure, for about 25 minutes (20 minutes for firmer beans, 30 minutes for very soft beans). Allow the pressure to manually release.
- Remove the lid, and pour the beans into a strainer. Rinse with cold water and set aside.
- Set instant pot to saute and heat the bacon until it starts to brown. Drain some of the grease, then add the onions (optional) and cook until tender.

- In the Instant Pot using the sauté setting, cook the chopped bacon for about 5 minutes until the fat from the bacon begins to render. The bacon should not be crispy.

- Turn your Instant Pot to the saute setting. When the display says HOT add in the butter. Swirl the butter around until it is melted. Season one side of the pork chops with kosher salt and freshly ground pepper. Lay the seasoned side down into the butter. Add as many pork chops as you can without overlapping. While the first side is browning, season the other side of the meat that is facing up. Let the pork chops brown for about 2 minutes on each side. I use tongs to flip them.
