Great little pizzas. Use this basic recipe and add, remove, modify with your favorite ingredients. Great for low-fat diets when you're craving some 'zaah!

Steps:
- Preheat oven to 400.
- Spread pasta sauce evenly over both pitas.
- Sprinkle with onion, green pepper and ham.
- Cover with cheese.
- Place on a cookie sheet or baking stone and bake for 10 minutes (or until cheese starts to brown).
MOZZARELLA, HAM & PESTO PIZZAS

Steps:
- Turn the grill to high, put the pittas on the grill rack and heat for about a minute while you slice the mozzarella into five.
- Turn the pittas over and spread each one with 1 tsp pesto, then top with a mozzarella slice. Pile the ham on top, so it looks quite ruffled, then tear the final mozzarella slice into four, put it on top of the ham and grind over black pepper. Return to the grill for 3-4 minutes more until melted and starting to turn golden.

- Heat oven to 220C/200C fan/gas 7. Mix the bread dough following pack instructions, keeping it light and sticky. Knead it for a few mins, then place in a covered, oiled bowl for 30 mins to rise at room temperature.
- Take the dough out and squash to knock out the air. Roll out on a floured surface to fit the largest baking tray you have. Sprinkle flour or semolina over the tray, then place the dough on top. Spread the tomato sauce over the dough, then scatter with the salami, pickled cherry peppers , onion, chilli flakes, mozzarella and oregano. Bake for 12-15 mins or until the dough turns crusty and golden.

- Preheat oven to 400 F. Add pitas to oven for 3-4 minutes while prepping toppings to lightly toast them.
- Meanwhile, prepare toppings of choice. If making the Deluxe pita pizza, saute the mushrooms in a small frying pan until they release liquid to avoid a soggy pizza (this step is optional but I find it's worth it to avoid mushiness).
- Remove pitas from oven, top with sauce and divide cheese of choice among pizzas. Divide toppings of choice, then add pizzas to a parchment-lined baking sheet. NOTE: I find you can fit 2 pizzas per tray. If making the Margherita or Tex Mex pizzas, leave the herbs (basil & cilantro) off the pizzas.
- Bake pizzas for 12-15 minutes until cheese is melted and toppings are cooked. Add herbs of choice if using (basil or cilantro) after pizzas are finished cooking.

- In the bowl of a stand mixer fitted with a dough hook, Whisk the yeast and sugar into warm water and allow to stand for 5 minutes until frothy. Add the flour, salt and olive oil then allow to knead for a few minutes until the dough is soft, smooth and only slightly tacky. If the dough is very sticky, add a little bit of flour and knead in.
