FRESH PURPLE HULL PEAS IN THE INSTANT POT/PRESSURE COOKER

Number Of Ingredients 6

6 cups fresh shelled purple hull peas
1 ham hock
4 cups chicken broth
1/2 tbsp kosher salt (plus more for additional seasoning if needed)
1 tsp black pepper
1 splash olive oil (supposedly this helps beans/peas not foam like crazy, so I added it as a precaution)

Steps:

  • Place peas, ham hock, chicken broth, 1/2 TBS of salt, pepper, and olive oil in the Instant Pot/pressure cooker. Attach lid and set pot to "manual" for 20 minutes. Allow pressure to release naturally. Taste peas for seasoning and add additional salt if needed.

When the onion is transparent, add chicken broth and deglaze. Then, add brown sugar, then add peas. Attach lid with the vent closed. Manually set for 8 minutes. Use the 10-minute Natural Pressure Release to release the steam.

8 ounces fresh okra
4 ounces bacon, cut into 1/2 inch pieces
1 tablespoon white sugar
⅛ teaspoon baking soda
salt and pepper to taste

Steps:

  • Place the purple hull peas into a large pot and cover with water. Bring to a boil over high heat, add okra if using and boil for 2 minutes, stirring twice. Reduce heat to medium-low, add the bacon, sugar, baking soda, salt, and pepper. Cover and simmer until tender, 1 1/2 to 2 hours.
