Instant Pot Tomato Sauce is the best easy no peel tomato sauce recipe. Homemade pasta sauce has never been simpler or quicker to make!

3 Tablespoons good quality olive oil
1 large sweet onion (chopped)
1 1/2 large carrots (peeled and chopped, organic is best)
4 medium cloves garlic (minced)
1/3 cup water
3 pounds tomatoes (washed and quartered, see notes for varieties)
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried parsley
1 1/2 teaspoons kosher salt (plus more to taste)
1 teaspoon dried oregano

Steps:

  • Set the Instant Pot to the Sauté mode on high. Once it's hot, add in the olive oil. Add in the onions and carrots, and sauté while stirring frequently until the onions and golden and starting to turn transparent (about 5 minutes). Add in the garlic and sauté until aromatic (about 30 seconds). Add in the water, and use the end of a wooden spoon to scrape up any of the flavorful bits on the bottom. Turn the Instant Pot off.
  • Add in the tomatoes, and mix with the onions. Sprinkle the spices over the top of the tomatoes (not on the bottom of the pot).
  • Close the lid of the Instant Pot, and set the steam release valve to the sealing position. Select Manual (or Pressure Cook depending on your model), and then cook the tomato sauce on high pressure for 20 minutes.
  • After the Instant Pot has finished cooking, allow it to natural release for 10 minutes before moving the steam release valve to the venting position to let the pressure fully release. Carefully remove the lid.
  • Using an immersion blender, purée the sauce until it's smooth.
  • Set the Instant Pot to the sauté mode, and sauté on low for about 60 minutes, or until the sauce has thickened up (you want to avoid boiling the sauce). Alternatively, you could skip this step and mix in a 6-ounce can of tomato paste to thicken it. Taste, and adjust the spices.

2 cups carrot, chopped
4 cups onion, chopped
2 cups red bell pepper, chopped
2 cups celery, chopped
5 cloves garlic, sliced
2 tablespoons dried oregano
2 tablespoons dried basil
1 ½ cups tomato paste
8 cups whole peeled tomato
2 cups water
salt, to taste
pepper, to taste

Steps:

  • In a large pot at medium-high heat, add the olive oil and carrots to the pot. Cook the carrots for about 10 minutes until they start to brown slightly.
  • Next add the chopped onion, red bell pepper, celery, garlic, oregano, basil, salt, and pepper to the pot and cook until the vegetables are caramelized and tender.
  • Add the tomato paste, stir it into the vegetables, and allow the tomato paste to brown deeply. It should be very aromatic before moving forward.
  • Add the canned tomatoes and water, bring the sauce to a boil, and then reduce to a simmer. Simmer the sauce for at least 1 hour.
  • Add the sauce to a blender in batches or use an immersion blender to puree the sauce to your desired consistency.
  • Let the sauce cool completely and then pour the sauce into freezer-safe bags. Place the bags into a leak-proof container/tray, and freeze for up to one month.
  • Reheat the frozen sauce with ½ cup (120 ml) of water in a pot until it comes to a boil and then use as desired.
  • Enjoy!

  • Pour the tomatoes and their liquid into the Instant Pot. Place the other ingredients on top of the tomatoes, keeping them off the bottom of the pot as much as possible (especially the tomato paste). Press the garlic and herbs down into the liquid a little to moisten, but they should still be visible. Don't stir! (You want to avoid a 'burn' error. See notes.)
  • Secure the lid on the Instant Pot and make sure the vent is set to sealed/closed. Set to Manual Pressure (high), 25 minutes. When the pot beeps (after 25 minuteuse the Natural Pressure Release method, allowing the pressure to release for 10 minutes. Then, carefully open the vent, and remove the lid.
  • Remove the onion pieces and discard. Blend or mash the sauce using an immersion or regular blender, or food processor, or by hand with a potato masher and/or large fork. Blend to your desired consistency--either chunky or smooth.
  • Prepare the ingredients according to the directions above. Place them in a large pot, stir them together, and simmer, covered, on medium low heat for at least 30 minutes. Howver, I recommend 45-60 for a fuller-flavored sauce.
