Steel-cut oats and the Instant Pot®: Two of my favorite 'discoveries' from the last 10 years. Top with ground flax seed, hemp seed, cinnamon, fruit, honey, syrup, vanilla extract, nut butter, etc.

Steps:
- Combine water and oats in an electric pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.

INSTANT POT® ZUCCHINI STEEL CUT OATMEAL
Add some veggies to your breakfast by trying this steel cut oatmeal packed with zucchini, spiced with cinnamon and nutmeg, and sweetened with maple syrup. It's made in the Instant Pot® in about 30 minutes.

Steps:
- Melt coconut oil in a multi-functional pressure cooker (such as Instant Pot®) set to the Saute function. Add oats and toast until they are starting to brown, 2 to 3 minutes. Turn off Saute function. Add water, almond milk, zucchini, cinnamon, nutmeg, and salt. Stir lightly.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in maple syrup and vanilla extract.
- Divide oatmeal evenly between 4 bowls. Top each bowl with 1 tablespoon walnuts.

INSTANT POT OATMEAL
Steps:
- Mix oats and water together in the Instant Pot.
- Lock the lid in place and turn the valve the sealing position.
- Press the "manual" button and set the cook time for 4 minutes.
- When the oatmeal is finished, quick release or natural release the pressure.
- Top as desired for a tasty, filling breakfast.

- In a 6-quart Instant Pot, stir together the water, almond milk, oats, salt, cinnamon, and maple syrup. Cover and seal. Cook on HIGH pressure (manual) for 4 minutes. Let the pressure release naturally for 10 minutes. Carefully remove lid.
- Give the oats a big stir. Carefully taste (they will be hot!) and add additional cinnamon and/or maple syrup to taste. The oats will continue to thicken as they cool. Ladle into serving bowls and serve hot with any desired toppings.

- Place the lid on your Instant Pot and lock it into place. Make sure the valve n top is closed to sealing.
- Cook on HIGH pressure for 12 minutes. It will take your pressure cooker about 10 minutes to get up to pressure. Once cook time is up, carefully turn the valve on top to venting and quick release the pressure. The steam will come out quick and fast, so be sure to keep hands and face clear of the steam and that your pressure cooker isn't directly under a cabinet or pointing at someone.
- Stir oatmeal with a long handled spoon. Add more milk or water for a thinner consistency if desired. Oatmeal will also thicken up a bit as it cools.
