QUICK ISRAELI SALAD



Quick Israeli Salad image

This Quick Israeli Salad is easy to make and full of the best fresh and zesty flavors!

Number Of Ingredients 20

1 pound Persian or English cucumbers, diced
1 pound cherry tomatoes, halved
1 bell pepper, cored and diced
half a small red onion, diced
1/3 cup roughly-chopped fresh Italian parsley
1/4 cup roughly-chopped fresh mint
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons sumac, or more to taste
Kosher salt and freshly-cracked black pepper
(optional add-ins: chickpeas, crumbled feta cheese, toasted pine nuts)
pita bread
hummus
1 batch Quick Israeli Salad (see above)
optional: cooked protein (chicken, steak, shrimp, etc.), falafel, crumbled feta cheese
hummus
1 batch Quick Israeli Salad (see above)
roasted chickpeas*
crumbled feta cheese
pita chips, for serving

Steps:

  • Toss all ingredients together in a large bowl until evenly combined. Season to taste with salt and pepper, also adding in extra lemon juice and/or sumac powder if desired.
  • Serve immediately, or refrigerate in a sealed container for up to 2 days.
  • Spread a few spoonfuls of hummus evenly on a piece of pita bread. Top with a few spoonfuls of the Israeli Salad and any other optional add-ins. Roll the pita into a wrap and serve immediately.
  • Spread a batch of hummus out evenly on a serving plate. Sprinkle evenly with the Israeli Salad, roasted chickpeas and feta. Serve immediately with pita chips.

1 (1 pound 13-ounce) can chickpeas, rinsed and drained
1 cup tahini (ground sesame paste)
1 cup freshly squeezed lemon juice (4 to 6 lemons), divided
3 tablespoons chopped garlic (9 cloves)
1 1/2 teaspoons ground cumin
1/2 teaspoon Sriracha
Good olive oil
Kosher salt and freshly ground black pepper
1 large hothouse cucumber, unpeeled, halved, seeded, and 1/2-inch diced
2 cups heirloom cherry tomatoes, halved or quartered
1 cup (1/2-inch-diced) Holland red bell pepper (1 large)
3/4 cup (1/4-inch-diced) red onion
1/2 cup julienned fresh mint leaves, for garnish
Toasted pita bread, for serving

Steps:

  • For the hummus, place the chickpeas, tahini, 3/4 cup of the lemon juice, the garlic, cumin, Sriracha, 2 tablespoons olive oil, 1 tablespoon salt, and 1 teaspoon black pepper in the bowl of a food processor fitted with the steel blade and process until the mixture is completely smooth. If the hummus is too thick, add a few tablespoons of warm water until it is creamy but still thick and spreadable.
  • In a large bowl, combine the cucumber, tomatoes, bell pepper, and red onion. Add 1/3 cup olive oil, the remaining 1/4 cup lemon juice, 2 teaspoons salt, and 1 teaspoon black pepper and combine.
  • Spoon the hummus onto a large (12-by-16-inch) serving platter, spreading it out with a raised edge. With a slotted spoon, mound the vegetable salad on the hummus, leaving the edges of the hummus visible. Sprinkle the vegetables and hummus with the mint and extra salt. Drizzle with olive oil and serve at room temperature with pita bread.

You can find a whole-wheat version of the spherical couscous marketed as Israeli couscous in some whole foods and Middle Eastern markets.

1 cup Israeli couscous, preferably whole-wheat
2 tablespoons extra virgin olive oil
1/2 cup finely chopped cilantro
2 tablespoons chopped chives
1 ounce feta, diced
2 tablespoons pine nuts, lightly toasted
1 can chickpeas, drained and rinsed
1/2 red pepper, cut in thin 2-inch slices
2 tablespoons fresh lemon juice
1 teaspoon cumin seeds, lightly toasted and ground
Salt to taste
1/4 cup plain low-fat yogurt (or use half olive oil)
1/2 teaspoon Aleppo pepper or mild chili powder (more to taste)

Steps:

  • Heat one tablespoon of the olive oil over medium-high heat in a medium saucepan and add the couscous. Stir until the couscous begins to color and smell toasty, 4 to 5 minutes. Add 2 cups water and salt to taste and bring to a boil. Reduce the heat, cover and simmer 15 minutes, or until the couscous is tender. Drain if any liquid remains in the pan.
  • Transfer the couscous to a bowl and add the cilantro, chives, feta, pine nuts, chickpeas and red pepper.
  • In a small bowl or measuring cup, mix together the lemon juice, salt, cumin, remaining olive oil, yogurt and Aleppo pepper or chili powder. Toss with the couscous mixture. Refrigerate in a bowl or in containers until ready to take to work or eat.

Spread this yogurt sauce onto a large platter.
  • Slice the tomatoes and arrange over the yogurt sauce in an even layer. Season all over with the spice rub. Season generously with sea salt (kosher salt is fine, too). Season with freshly cracked black pepper to taste.
  • In a large bowl, toss the cherry tomatoes, onion, and chickpeas with a good pinch of flaky sea salt, pepper to taste, and the olive oil and vinegar. Taste. Adjust seasoning as necessary. Add the arugula and toss gently. Spread this salad atop the tomatoes. Serve, being sure to include each of the elements — the yogurt sauce, the tomatoes, the chickpea salad — with each serving.
