TORTA D'UVA: GRAPE CAKE

4 to 5 cups/1 to 1.25 L all-purpose flour
1/4 cup/50 ml extra-virgin olive oil
1/2 ounce/15 g packet yeast
2 eggs
1/2 cup/125 ml sugar
1/2 cup/125 ml grappa, or as much as you want
Bunch grapes
Water, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the flour on a worktable. Make a well in the center of the flour and add the olive oil, yeast, eggs, 1/4 cup sugar, grappa, and 1/2 the grapes. Combine the ingredients together and knead until the mixture becomes an even dough. If necessary, add a little more flour to absorb all the liquids.
  • Roll out the dough to a 1/2-inch thickness. Line a baking tray with parchment paper and spread the dough on the tray. Add the remaining grapes and squish some of the grapes to release the juices, while leaving the others whole. Sprinkle the remaining 1/2 cup sugar and drizzle with olive oil.
  • Bake for approximately 30 minutes.

The description of this recipe intrigued me so much I actually bought the recipe from a recipe want-ad in one of the cooking magazines about 30 years ago. The seller was Janis Lingenfelter of Nebraska and she called this a "keepsake recipe." This will remind you of the marshmallow thickened pies that are so popular in the summer. But this is not used as pie filling -- it is served in pretty dessert dishes. Kids like this really well, and they can help make it, too.

1 cup grape juice (pure grape juice)
24 large marshmallows
1 cup whipped cream or 1 cup Cool Whip

Steps:

  • Heat the grape juice until hot but not boiling. You can do this in the microwave.
  • Add the marshmallows and stir until blended and melted. Cool.
  • When cool, add the whipped cream (Cool Whip works just as well) and fold in well. Set in refrigerator until time to serve.

48 ounce(s) bottle purple grape juice
1 cup(s) sugar
2 tablespoon(s) vanilla

Steps:

  • Put 2 cups of grape and 2 cups of water into a 4 qt. saucepan, add tapicoa and heat on medium heat, stirring constantly..When mixture starts to bubble, add remaining grape juice, and stir constantly, adding sugar, and vanilla.Cook till heated. Remove from heat, and let cool. The pudding will thicken as it cools. Great served with a dollop of whipped cream.

Steps:

  • Smash grapes. Reserve liquid. Simmer pulp over medium heat for 15 minutes.
  • Mix cornstarch and lemon juice. Add to boiling pulp. Cook until thinkened. Adjust taste with sugar if necessary.
  • Pour into bowl or individual cups. Refrigerate until cold.
  • Top with whipped cream if desired and serve.
