LOW CARB SOUTHWEST STUFFED PEPPERS



Low Carb Southwest Stuffed Peppers image

Flavorful and delicious southwest flavored bell peppers that are low carb and packed with protein.

Number Of Ingredients 14

4 bell peppers - color of choice (I love red)
1 small yellow onion - diced
2 cloves garlic - minced
1 jalapeno - seeds removed for a mild stuffed bell pepper (diced)
1/2 cup cilantro - diced
1 teaspoon salt
1 tablespoon olive oil
dash cumin
1/2 teaspoon chili powder - I use chipotle chili powder but any variety will work.
10 ounces or 1 1/2 cups cauliflower rice - I use the frozen type (herb flavor but any will work.)
1 large tomato - diced
2 cups diced chicken breast or 20 ounces of using canned chicken
juice of 1 lime
1 cup cheddar cheese

Steps:

  • Bell peppers lengthwise and remove seeds and inside of stem.
  • If boiling peppers before, boil water and boil peppers for roughly 8 minutes or until tender. Drain, pat dry and place in baking dish.
  • If not boiling peppers then place the raw peppers in the baking pan.
  • In a skillet, add onions, garlic, jalapeno, cilantro, salt, olive oil, cumin, chili powder and saute until onion starts to soften.
  • Add cauliflower rice, tomatoes, chicken breast and lime juice and stir well until everything is heated through.
  • Spoon into each pepper.
  • Sprinkle tops with cheese and bake for 20 minutes if peppers were pre-boiled or 45 minutes if using raw peppers or until peppers are tender.
  • Top with your favorite toppings and enjoy!

4 green peppers (cleaned with seeds and tops removed)
1 tablespoon extra virgin olive oil
1/3 cup onion (chopped fine)
3 garlic cloves (small to medium sized minced)
1/4 cup green onion (chopped fine)
2 tablespoons green peppers (minced)
1 lb ground turkey
0.5 (14 1/2 ounce) can diced tomatoes (1/4 cup of liquid reserved)
1 tablespoon parsley
1 1/2 teaspoons italian seasoning
1 teaspoon seasoning salt or 1 teaspoon seasoning, blend
1/4 cup pizza sauce
1/4 cup pre-shredded mozzarella cheese
1/4 cup monterey jack cheese (shredded)

Steps:

  • Preheat Oven to 375 degrees.
  • Saute onion and garlic in olive oil until onion softens.
  • Add green onions, minced green pepper and saute for about five minutes.
  • Set onion, garlic and green pepper mixture aside.
  • Brown ground turkey and cook through.
  • Add onion, garlic, and green pepper mixture. Also, add diced tomatoes, parsley, italian seasoning, and season salt/blend.
  • Mix well and cook another five minutes.
  • Stuff mixture inside hollow green peppers.
  • Pour reserved tomato liquid in a baking dish and place peppers in dish.
  • Top each stuffed pepper with about a tablespoon of pizza sauce.
  • Mound each pepper with cheeses.
  • Cook in a 375 degree oven for 20 minutes or until cheese is golden brown.

4 bell peppers (I used a mix of colors)
1 bag frozen cauliflower rice
4 oz diced green chiles (optional )
1 tbs cumin
1/2 cup green salsa (Add more for more flavor)
1 lb lean ground turkey
1/2 cup salsa (I used red salsa - add more for more flavor)
2 tbs garlic powder or tube garlic
2 tbs onion flakes

Steps:

  • Preheat the oven to 350 degrees. Slice peppers in half lengthwise and remove all seeds and ribs.
  • If you want softer peppers, rub some olive or avocado oil on them and roast the halves for 10-15 minutes before stuffing them. (I didn't do this and my husband thought they could have been softer). Even easier, just bake them longer after stuffed too.
  • Next up the green chile cauliflower rice. Microwave the rice for 4-5 minutes based on your microwave. Then add rice to a frying pan with green chiles, salsa and cumin. Cook until dry ish. You don't want the rice to have liquid still because that will make a soupy stuffed pepper.
  • My cauliflower green chile rice looks like this:) Set the rice aside.
  • Brown the ground turkey. Once browned add salsa and cook for 2-3 minutes
  • Layer the green chile cauliflower rice into the peppers.
  • Layer the meat over the green chile cauliflower rice. I made mine little mounds to fit all the meat in the peppers.
  • Optional: Add cheese to the tops of the peppers and cook for 20-30 minutes. I let mine cook for 30 minutes until the cheese was bubbly.

Stuffed green peppers are a great "make ahead and freeze" meal. So one day I had some leftover beans, corn and some yellow peppers in the fridge and decided to take a Southwest spin on the old fave. . .YUMMY! UPDATE: I made these using some leftover cooked chicken breast (cut in a dice) and they were even better than with the ground turkey!

1 (6 ounce) package Spanish rice mix (it's in an envelope and I buy the Walmart version, but Lipton has a version)
1/2 lb ground turkey
2 green onions, chopped
1 teaspoon minced garlic clove
1/4 cup parmesan cheese, finely grated
1/2 cup tomatoes, diced (use fresh or canned petite diced)
1/2 cup black beans, drained (have subbed kidney beans with great results)
1/2 cup corn (canned or frozen)
1/4 cup chunky salsa, strained (for heat. . .I like Harry & David Black Bean Chipotle Salsa, Medium)
1/2 teaspoon cumin
1/2 teaspoon dried oregano
4 bell peppers (yellow, orange or red)
1/2 cup sharp cheddar cheese, shredded (or Mexican blend)

Steps:

  • Cook the rice as per the package (takes about 15 minutes).
  • In the meanwhile, brown the meat with the green onions and garlic.
  • While those two are cooking, wash and cut your peppers. I take a knife straight up and down and go around the stem on the top. Be very careful while taking out the seeds and white ribs, as they frequently break (but that's OK if they do. . .not as pretty, but will still taste good).
  • Place the peppers, standing up, in a pan. I usually cook 2 and freeze 2 for later. I like to put the ones I am going to cook in a loaf pan, as it helps them stand up.
  • Once the rice is done and has set for the suggested amt of time (it will thicken), add the meat, parmesan cheese, tomatoes, beans, corn, salsa, cumin (and any other spices you'd like). Stir it all together really well.
  • Taste it. . .you might need more spices or more "heat". Distribute the rice into the 4 peppers and put any extra rice around the peppers to help them stand up.
  • Sprinkle the shredded cheddar/Mexican blend cheese over the peppers. Bake covered for 45 minutes on 350 degrees. Then uncover and bake 15 more minutes.

1 lb lean ground beef
1/4 cup chopped onion
1 (1 1/4 ounce) package taco seasoning mix
1 egg, beaten
2 cups cooked rice
4 -6 bell peppers
1 (19 ounce) can diced tomatoes
1 (15 -16 ounce) jar salsa
shredded cheddar cheese
sour cream

Steps:

  • Combine beef, onion, seasoning mix and egg in a large bowl.
  • Add rice and mix well.
  • Cut peppers in half lengthwise; remove seeds and membrane.
  • Spread tomatoes on the bottom of an ovenproof 12 X 9 inch baking dish. The liquid from the tomatoes will reduce during cooking so if (like me) you like lots of sauce, add about a cup of water. This also helps make the peppers softer.
  • Place peppers, cut side up, on top of the tomatoes.
  • Spoon beef mixture into peppers, mounding as necessary.
  • Top each pepper with salsa.
  • Bake in preheated 375°F oven for 40-45 minutes or until beef is cooked thoroughly and peppers are soft.
  • Cover each pepper with cheese and return to oven, under the broiler, until the cheese melts- less than a minute, so watch carefully!
  • Serve with sour cream and additional salsa.

2 large green bell peppers
3 minced garlic cloves
1 cup chopped sweet onion
1 medium tomatoes
1 lb ground beef
2 teaspoons finely chopped cilantro
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 1/2 cups steamed rice
1 cup shredded monterey jack pepper cheese

Steps:

  • Preheat oven to 375 degrees F.
  • Slice tops off peppers and save.
  • Cut peppers in half lengthwise so they will lay flat.
  • Remove seeds and veins.
  • Steam tomato over boiling water 5-10 minutes or until the skin can be removed easily.
  • Remove skin while still warm, then when cool enough to handle remove seeds and dice.
  • (Or sub one 10 oz can steamed diced tomato) In a medium frying pan, cook garlic in 2 tbsp olive oil over medium heat for 5 minutes or until it starts to turn light brown.
  • Add onions and continue to cook about 5 more minutes or until well wilted.
  • Place everything except the cheese and the peppers themselves in a large mixing bowl and mix well.
  • In a greased baking dish, place 4 pepper halves open side up.
  • Place beef mixture in each and shape until even with open end and top of pepper.
  • Bake uncovered 35 minutes.
  • Remove from oven and sprinkle cheese evenly over each pepper.
  • Bake an additional 5 minutes or until cheese is all melted.
