Bruschetta and Sauteed Peppers image

2 tbsp extra virgin olive oil, divided
1 medium yellow onion (, thinly sliced)
2 medium red bell peppers (, thin sliced)
2 medium yellow bell peppers (, thin sliced)
2 serrano peppers. seeded and minced (, (or jalepeno peppers))
1 tbsp anchovy paste (,)
salt and pepper
1 tbsp Sherry vinegar
2 tsp finely chopped oregano leaves
6 slices rustic Italian bread
1 garlic clove (, peeled and cut in half)

Steps:

  • In a large skillet, put 1 tablespoon of olive oil on medium heat, (a non-stick skillet would be best). Add peppers, onion, serrano peppers, and anchovy paste, stir to combine and dissolve the anchovy paste. Sprinkle with salt and pepper and saute for 5 minutes.
  • Add vinegar and continue to saute, stirring occasionally for another 5 minutes until the pepper is tender then add the fresh oregano.
  • Remove from heat and check flavors, add salt and pepper as needed.
  • Keep warm.

1 ½ pounds plum tomatoes, seeded and cut into small dice
¼ cup chopped fresh basil
6 tablespoons extra-virgin olive oil, divided
2 tablespoons finely chopped red onion
2 large cloves garlic, minced
2 teaspoons red wine vinegar
freshly ground black pepper to taste
1 French baguette, cut into 1/2-inch thick slices
1 tablespoon high-quality balsamic vinegar, or to taste

Steps:

  • Stir tomatoes, basil, 3 tablespoons olive oil, red onion, garlic, red wine vinegar, and pepper together in a bowl; let tomato mixture stand at room temperature for 15 minutes, then place in the refrigerator to marinate for 45 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Brush one side of each slice of bread with remaining olive oil. Place bread slices, oiled-side-up, onto a baking sheet.
  • Broil until golden brown, about 2 minutes; remove from oven. Spoon tomato mixture evenly over the top of toasted bread slices; drizzle balsamic vinegar evenly over tomato mixture. Serve immediately.

My wife and i love Bruschetta and i have tried many diffrent recipe's. I finally ended up just making my own recipe to meet our taste buds. This is our favorite. enjoy and spoon it on everything cause it is soooo good!

6 roma tomatoes, chopped (plum)
1/4 cup olive oil
3 minced garlic cloves
2 tablespoons balsamic vinegar
1/4 teaspoon kosher salt
1/4 teaspoon fresh cracked ground black pepper
1/4 cup fresh basil, stems removed
4 ounces crumbled feta cheese
1 French baguette

Steps:

  • Preheat the oven on broiler setting.
  • In a large bowl, combine the roma tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes or over night if possible.
  • Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Brush on a little olive oil over each slice. Broil for 1 to 2 minutes.
  • Divide the tomato mixture evenly over the baguette slices. Top the slices with crumbled feta cheese.
  • Broil for 5 minutes.

4 English muffins, split
4 cloves garlic, minced
2 tablespoons butter
1 tablespoon chopped fresh basil
4 large fresh tomatoes, peeled and chopped
8 black olives, pitted and halved
1 tablespoon tomato paste
1 tablespoon olive oil
2 teaspoons lemon juice
1 teaspoon honey
4 slices mozzarella cheese, halved
salt and pepper to taste

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Toast muffin halves under broiler until golden, about 2 to 3 minutes. Mix garlic, butter, and basil together in a small bowl; spread butter mixture evenly onto each toasted muffin half.
  • Combine tomatoes, olives, and tomato paste in a large bowl; set aside. Whisk together the olive oil, lemon juice, and honey in a small bowl. Spoon some of the tomato mixture onto each muffin, then drizzle the olive oil mixture over the top, place a piece of mozzarella on top, and season with salt and pepper.
  • Return muffins to broiler; cook until the cheese has melted, 1 to 2 minutes. Serve immediately.

2 cups diced fresh tomatoes
1 cup feta cheese, crumbled
1/4-1/2 cup black and green chopped olive
3/4 cup chopped onion
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon dried basil
12 inches prebaked whole wheat pizza crusts
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
kosher salt and cracked pepper

Steps:

  • Note: You can substitute diced regular tomatoes for the plum tomatoes; be sure to drain excess liquid and also you can use diced garlic from a jar.
  • Preheat oven to 400`F
  • In bowl, combine tomatoes,feta, olives, onion, garlic, olive oil and dried basil. Keep 1/2 cup of the tomato mixture in a bowl apart.
  • Spread pizza crust with sauce. Sprinkle tomato mixture over crust and top with Mozzarella cheese.
  • Place pizza directly on the middle rack of the oven. Bake 25-30 minutes or until crust is golden and cheese is melted and is bubbling up. Remove pizza from oven and sprinkle with basil and the rest of the tomato mixture.
