ITALIAN BREAD USING A BREAD MACHINE
Wonderful Italian bread made in a bread machine then baked in the oven.

Steps:
- Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
- Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto a baking sheet with one quick but careful motion.
- Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

ANGEL FOOD CAKE I
Homemade angel food cake is worth the work. It is moist, unlike the sweet styrofoam available in the grocery bakery. A tube pan with a removable bottom is highly recommended.

- Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
- Sift together flour, sugar, and salt. Repeat five times.
- Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
- Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
- Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

ITALIAN BREAD (BREAD MACHINE)
I love this recipe because it is very quick and easy. The ingredients for this recipe are always in most peoples houses. I've been known to whip up a loaf in the morning when I realized I was out of bread for school lunches. I don't always use the egg white in the recipe unless you want a crispy crust. Most times I just brush on butter after if comes out of the oven. This recipe is tried and true and loved by all in my circle of family and friends; enjoy. Notes: Easy and with no milk. I have also added Parmesan, thyme, garlic after the flour and salt just to give it an added flavor change every now and then. Serving Ideas: Wonderful w/ pastas or stews.

Steps:
- Add into bread machine container, warmed water, olive oil, sugar, yeast. Let yeast foam a bit.
- Dump in flour (start with 2 1/2 cups); add salt on top of flour.
- Turn on bread machine to dough setting. Watch for the first bit and add flour as needed to get a good dough. (elastic and not sticky).
- Get cookie sheet ready by lightly oiling with olive oil and sprinkle on cornmeal.
- Form dough into loaf and set on cookie sheet with tea towel to cover until doubled in size.
- Preheat oven to 375*F.
- Cut slits diagonally in loaf with sharp knife. Brush with egg white.
- Bake in preheated oven for 20-25 minutes, until golden brown and when you knock the bottom of bread it sounds hollow.

- Preheat the oven to 350 degrees F.
- Place the sugar in a food processor and process until it is finely ground. Divide the sugar in half. Combine one half with the flour, leavening agent and salt and place in a sifter.
- Combine the egg whites, 1/3 cup room temperature water, cream of tartar and vanilla. Place in the bowl of the standing mixer. Start on slow for 2 minutes, and then increase the speed to medium. Slowly add the remaining sugar to the egg whites and continue to mix.
- Once the egg whites are at medium peaks, remove the bowl from the mixer and sift over the flour mixture a little at a time as you fold it together. When completely combined, transfer to a 10-inch ungreased angel food cake pan. Transfer to the oven and bake for 35 minutes.
- Remove from the oven and invert while still in the pan. Let cool for at least an hour upside down.
- Insert a knife around the edges and remove from the pan. Serve.
ANGEL FOOD CAKE

- Preheat oven to 300 degrees. Sift flour 3 times. Sift again with 3/4 cup plus 1 tablespoon sugar. In an electric mixing machine, making sure bowl is clean and free of oil, beat egg whites until frothy. Add salt, cream of tartar. Beat until it barely holds soft peaks. Beat in remaining 3/4 cup sugar, a little at a time, until it holds stiff peaks. Fold in extracts. Sift 1/4 flour mixture over whites and gently but thoroughly fold it in. Sift and fold in remaining flour, in the same manner, 1/4 at a time. Spoon or pour batter into a very clean, ungreased tube pan. Rap it on the counter to eliminate gaps. Bake for 1 hour 15 minutes or until cake springs back when touched. Invert pan over bottle to cool. Cool completely before inserting sharp knife around edges of pan to loosen. Rap bottom of pan firmly on counter. Invert onto plate. Serve with peach compote and peach glaze.;
- In a small saucepan add all ingredients. Bring to a boil, lower heat to medium, cook until thickened, 5 to 10 minutes. Remove from heat. Remove cinnamon stick and serve.;
- In a small saucepan add all ingredients except water. Bring to a medium heat until sugar is combined with liqueur. Stir in water and reduce until desired consistency.;
ANGEL BREAD - BREAD MACHINE RECIPE
A light and heavenly bread that has a wonderful taste and a soft fluffy texture. Make sure you grease your pans and you will be rewarded with 2 delightful loaves of bread. Same basic dough as used in my Recipe #341433. (Preparation includes machine time and rising time.)

- Grease two 5 x 9 bread pans.
- Add the ingredients in the order listed in your bread machine manual (per manufacturer).
- Select dough cycle and push start.
- When cycle is done, remove the dough to a lightly floured board, cut into 2 halves.
- Shape each piece into a loaf and place in greased bread pans.
- Cover and let rise until double in size (about 50 - 60 minutes).
- Bake in 350 degree oven for 25 - 30 minutes depending on your oven.
- Rub tops with margarine or butter when you removed from oven.
- Remove from bread pans and let cool on a wire rack.
- When completely cool store in 1 gallon zip type bags.
- Enjoy!
