1/4 cup mayonnaise
1 pinch chili powder
1 pinch fresh jalapeno, chopped
1 pinch pepper
4 thick slices whole wheat bread
8 slices turkey bacon, crisply fried
6 slices tomatoes, thinly sliced
1 slice avocado, thinly sliced
1 sprig cilantro, roughly chopped
lettuce leaf, washed

Steps:

Mix the mayonnaise with pinch of chile powder and chopped fresh jalapeno pepper and set aside.
Toast the bread lightly.
Spread each side with mayonnaise.
Pile on bacon, tomato, avocado, cilantro sprigs and lettuce and top with other slice of toast.

Ingredients

1/2 cup all-purpose baking mix
1 large egg
1/2 cup enchilada sauce
2 cups crushed spicy tortilla chips
1/4 cup minced fresh cilantro leaves
6 skinned and boned chicken breast halves, cut into 1 1/2-inch pieces
1 cup vegetable oil
Ranch dressing
Barbecue sauce

Steps:

Place baking mix in a shallow dish. Whisk together egg and enchilada sauce in a small bowl. Stir together tortilla crumbs and cilantro in a separate shallow dish.
Dredge chicken pieces in baking mix; dip in egg mixture, and dredge in crumb mixture. Cover chicken, and chill 30 minutes.
Pour oil into a large skillet; heat to 375 degrees F. Fry chicken, in batches, 3 minutes on each side or until brown. Drain on wire racks over paper towels. Serve chicken with ranch dressing or barbecue sauce.

1/2 cup finely shredded Mexican blend cheese
1/2 cup mild salsa
2 medium ripe avocados, peeled seeded, diced
3 tomatoes, stems removed seeded, diced
6 cups shredded iceberg lettuce
8 slices crisp cooked bacon, crumbled

Steps:

In a small bowl, stir dressing and salsa together until well blended and set aside.
In a large bowl, start with a layer of the lettuce then top with layers of tomato, avocado, bacon, and cheese. Pour dressing mixture on top.
