1 Tbsp olive oil

1 Tbsp minced fresh garlic
1/2 cup dry white wine (we used Pinot Grigio)
1 1/2 cup whole milk

Categories     Dinner

Time 7h30m

Number Of Ingredients 15

1 boneless pork shoulder (7 pounds)
salt and freshly ground pepper
1 teaspoon mild paprika
4 cloves garlic (smashed)
2 cups packed fresh flat-leaf parsley leaves
1/2 cup fresh sage leaves
1/4 cup fresh rosemary leaves
2 tablespoons fresh thyme leaves
1/4 cup extra-virgin olive oil (plus 1 Tablespoon)
Salt and freshly ground pepper
1 large onion (sliced)
1 cup medium or fine cornmeal
1 teaspoon salt
2 Tablespoons butter
2 Tablespoons Parmegiano Reggiano

Steps:

  • PORK
  • Rub the pork with 1 Tablespoon salt and pepper, a teaspoon of paprika, and one of the smashed garlic cloves. Place in a plastic zip bag or plastic storage container. Store in the fridge overnight or a for a few hours before cooking.
  • Preheat oven to 300 degrees. Using a sharp knife, score fat (but not meat) on pork in a diamond pattern. Pulse herbs and the rest of the garlic in a food processor until combined. Slowly add oil and continue pulsing until a thick paste forms. Stir in 1 Tablespoons salt, 1 Tablespoon pepper; rub mixture all over pork.
  • Place the onion slices in a foil lined roasting pan or large Dutch oven. Place pork, fat-side up, on top of the onion halves; add 1 1/2 cups water to bottom of the pan. Drizzle a little bit of olive oil (about 1 Tablespoon) on top of the pork. Cover with foil or lid (if in a Dutch oven) and roast until meat is starting to become tender, about 3 hours. Remove foil or lid and continue cooking until meat is fork-tender, 1 to 1 1/2 hours more. Cook 30 minutes per pound total, or until the internal temperature as measured with a meat thermoter is 160 F. Remove pork from the oven and allow to rest 15 minutes before pulling apart or cutting.
  • Carefully transfer pork to a large bowl, leaving juices in pan. When cool enough to handle, use two forks to shred meat into bite-size pieces, discarding any large pieces of fat. Transfer shredded pork back to pot and toss with juices. If you prefer to serve in larger pieces as we did, transfer to a cutting board and slice your pork into desired thickness.

Categories     Fruits and Vegetables     Mushrooms     Porcini

Time 50m

Yield 4

Number Of Ingredients 16

1 ounce dried porcini mushrooms
2 cups boiling water
2 tablespoons extra-virgin olive oil
1 large shallot, sliced
1 teaspoon miso paste
1 teaspoon yeast extract
8 ounces broccoli, florets separated and stems chopped
4 ounces sliced radicchio
2 cups water
1 cup vegetable broth
½ cup hearty red wine
¼ teaspoon salt
1 cup Italian polenta
salt and ground black pepper to taste
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Soak porcini in 2 cups boiling water for at least 10 minutes.
  • At the same time, heat olive oil in a medium Dutch oven over medium heat. Add shallot and slowly saute until soft and juices have been released, 3 to 5 minutes.
  • Remove porcini from the water and use a damp paper towel to remove any grit. Reserve soaking water.
  • Add porcini to the Dutch oven with miso paste and yeast extract. Stir well and reduce heat to a simmer.
  • Add broccoli; put floret heads facing down and stem pieces nestled in so they are touching the bottom of the pot. Layer radicchio slices evenly on top. Pour in wine without disturbing the vegetables. Cover and simmer, occasionally shaking the pan gently, for 10 minutes.
  • Meanwhile, bring 2 cups water, vegetable broth, and salt to a boil. Sprinkle fistfuls of polenta into the boiling liquid while stirring constantly so clumps don't form. Continue to stir in polenta until completely added. Reduce heat to low and cook, stirring often, until polenta is thick and cooked through, about 10 minutes.
  • Strain the reserved soaking water, twice if necessary, to remove any sediment.
  • Pour 1/2 of the soaking water into the Dutch oven with the broccoli. Gently shake the pot and use a wooden spoon to carefully loosen the florets without breaking them apart. Gently fold vegetables over until coated with cooking sauce. Continue to simmer, uncovered, occasionally shaking the pot. Cook until broccoli is tender but still firm to the touch and radicchio is completely wilted. Season with salt and pepper.
  • Pour polenta onto a lightly oiled polenta board and spread it evenly over the board. Use a slotted spoon to gently spoon vegetables over the polenta.
  • Pour remaining soaking water into the Dutch oven and bring to a boil. Make a slurry with the remaining water and cornstarch; pour into the Dutch oven while whisking constantly. Cook until sauce has thickened, 2 to 3 minutes. Pour sauce over the broccoli and polenta or serve on the side.

ITALIAN MILK-BRAISED PORK ROAST WITH PORCINI MUSHROOMS & CREAMY LEMON POLENTA RECIPE - (4.8/5)

Italian Milk-Braised Pork Roast with Porcini Mushrooms & Creamy Lemon Polenta Recipe - (4.8/5) image

Provided by Foodiewife

Number Of Ingredients 26

DEGLAZE:
2 ounces salt pork, chopped coarse
1/2 cup water
2 tablespoons unsalted butter, divided
1 tablespoon olive oil
1 pork loin roast (3 to 4-pound), seasoned with salt and black pepper
1 tablespoon fresh garlic, minced
Olive oil (for searing)
1/2 cup dry white wine
1 1/2 cups whole milk
1/2 cup heavy cream
1 ounce dried porcini mushrooms, chopped
1/4 teaspoon baking soda
1 teaspoon anchovy paste
1/4 teaspoon red pepper flakes (decrease by half if you are sensitive to spice)
Zest of 1 lemon, minced
2 sprigs each fresh rosemary and sage, tied with kitchen string
POLENTA:
2 cups low-sodium chicken broth
2 cups buttermilk
1 cup yellow cornmeal
1/4 cup Parmesan, grated
2 tablespoons unsalted butter
1 tablespoon lemon zest, minced
Heavy cream (just a splash, a scant 1/4 cup)
Salt and black pepper, to taste

Steps:

  • Note: Why simmer salt pork to render the fat? Cook's Illustrated's explanation is "that's because the pork's slightly acidic juices lower the pH of the milk, causing the clusters of casein proteins in milk that normally repel one another to suddenly attract one another and form clumps. Heating the milk speeds up this reaction." "A couple of tablespoons of fat added to the whole milk keeps it from curdling-even when super acidic wine is introduced." Bring the pork loin to room temperature (about 30 minutes) and pat very dry. Season with coarse salt and black pepper. Turn the slow cooker on to low heat. If you don't own a slow cooker, you could prepare this dish in a Dutch Oven, covered, at 275°F for about 40 to 50 minutes, or until it registers at 145°F. Bring salt pork and 1/2 cup water to simmer in Dutch oven over medium heat. Simmer until water evaporates and salt pork begins to sizzle, 5 to 6 minutes. Continue to cook, stirring frequently, until salt pork is lightly browned and fat has rendered, 2 to 3 minutes. Using slotted spoon, discard salt pork, leaving fat in pot. Add pork, fat side down, and sear until brown, 3 to 4 minutes. Brown pork on all sides, about 5 minutes more; transfer to a 4- to 6-quart slow cooker. Add garlic to skillet; cook 30 seconds. Note: I did drizzle a little olive oil and 1 tablespoon unsalted butter once I really began searing the pork for extra color and caramelization. Deglaze skillet with wine, scraping up any brown bits. Add milk, cream, porcini, anchovy paste, pepper flakes, baking soda and zest; simmer 3 minutes. Pour milk mixture around pork in slow cooker; submerge rosemary and sage. Cover slow cooker and cook pork until an instant-read thermometer inserted into the thickest part registers 145°F on low setting, 2 hours. Transfer pork to a platter and tent with foil to keep warm. Discard rosemary and sage. Purée sauce in slow cooker with a handheld blender until smooth; season with salt and black pepper. Note: If you don't own an immersion blender, you can puree this in a regular blender. Just don't overfill the blender, and cover the top with a hot towel, to prevent an explosion or burns! Slice pork and serve with sauce. The sauce is divine! Serve with Creamy Lemon Polenta, for a perfect pairing. Polenta: Boil broth and buttermilk in a saucepan over medium heat. Whisk in cornmeal, reduce heat to low, and cook, whisking constantly, 5 minutes; remove from heat. Stir in Parmesan, butter, a splash of heavy cream and zest; season with salt and pepper.

POLENTA AND BRAISED PORK "LASAGNE"

Polenta and Braised Pork

Categories     Pork     Bake     Braise     Sauté     Fall     Gourmet

Yield Serves 6 generously

Number Of Ingredients 21

For basic polenta:
(kept warm)
4 cups water
1 teaspoon salt
1 cup cornmeal or instant polenta
For filling:
4 pounds country-style pork ribs, cut into 2-rib portions
2 tablespoons olive oil
1 large onion (about 1 pound), chopped
2 celery ribs, chopped
2 large garlic cloves, sliced
1 teaspoon dried rosemary, crumbled
a 28- to 32-ounce can whole tomatoes including juice
2 cups plus 3 tablespoons water
1 tablespoon all-purpose flour
1 tablespoon tomato paste
For béchamel sauce:
1 1/2 tablespoons unsalted butter
1 1/2 tablespoons all-purpose flour
1 1/4 cups milk
1/4 pound aged Provolone or mozzarella, grated coarse (about 1 cup)

Steps:

  • Make polenta:
  • In a heavy saucepan bring water and salt to a boil and gradually whisk in cornmeal in a thin stream. Cook polenta over moderately low heat (it should be barely boiling), stirring constantly, until very thick and pulls away from side of pan, about 40 minutes for cornmeal and about 15 minutes for instant polenta. Remove pan from heat and cover to keep warm. Stir polenta just before using. Polenta will keep warm, covered, about 20 minutes. Makes about 3 cups.
  • Note: In the traditional method of cooking polenta, forty minutes of constant stirring is required to achieve a lumpless texture and fragrant flavor. However, Italian-food expert Marcella Hazan has developed a method that involves very little stirring during this time. We believe it produces a very good polenta, one nearly as flavorful and smooth as the traditional procedure. To make satisfactory polenta in a real hurry, an imported instant polenta (precooked cornmeal) is available. This cooks in a mere fifteen minutes.
  • On a lightly oiled large baking sheet spread warm polenta into a 15- by 12-inch rectangle (about 1/2 inch thick) and cool to room temperature. Polenta may be made 2 days ahead and chilled, covered.
  • Make filling:
  • Pat pork dry and season with salt. In a heavy 7- to 8-quart kettle heat oil over moderately high heat until hot but not smoking and brown pork in 2 batches, transferring with tongs to a bowl. In fat remaining in kettle sauté onion and celery, stirring occasionally, until just tender. Add garlic and rosemary and sauté, stirring, 1 minute. Return pork to kettle and add tomatoes with juice and 2 cups water. Simmer mixture, covered, 1 1/2 hours, or until meat is very tender.
  • Transfer pork to a cutting board to cool. In a small bowl stir together flour and remaining 3 tablespoons water and whisk into liquid remaining in kettle. Discard bones and fat from pork and chop meat. Add pork and tomato paste to kettle, stirring, and simmer until filling is reduced to about 6 cups. Filling may be made 2 days ahead and chilled, covered.
  • Preheat oven to 400°F.
  • Make béchamel sauce:
  • In a small saucepan heat butter over moderate heat until foam subsides and whisk in flour. Cook roux, whisking, 1 minute and add milk in a stream, whisking. Simmer béchamel sauce, whisking, until smooth and thickened slightly, about 2 minutes, and season with salt.
  • Cut polenta into 3-inch squares. In a 3-quart shallow baking dish spoon half of filling and top with half of polenta squares. Repeat layering with remaining filling and polenta squares and spread béchamel sauce over top to cover completely. Sprinkle cheese over béchamel sauce and bake, uncovered, 45 minutes, or until heated through and top is golden.

ITALIAN BRAISED PORK SHOULDER

Italian Braised Pork Shoulder image

This is a tasty, quick prep meal of braised pork that can be used in versatile ways. It can be assembled quickly in the morning or the night before for a slow cooker meal. You can add potatoes or other veggies for a stew, or reserve the liquid to pour over rice. My kids love the leftover liquids turned into gravy for mashed potatoes or mashed cauliflower.

PORK RAGù OVER CREAMY POLENTA

Pork Ragù Over Creamy Polenta image

Leftover sauce? Bring a pot of water to boil: It's pasta night.

Provided by Alison Roman

Categories     Bon Appétit

Yield 8 Servings

Number Of Ingredients 21

Pork:
3 pounds skinless, boneless pork shoulder (Boston butt), cut into 3 pieces
Kosher salt, freshly ground pepper
freshly
1 tablespoon vegetable oil
1 large onion, finely chopped
6 garlic cloves, finely chopped
2 tablespoons tomato paste
1/2 cup full-bodied red wine
1 28-ounce can whole peeled tomatoes
4 sprigs thyme
2 sprigs rosemary
2 bay leaves
Polenta and assembly:
Kosher salt
1 1/2 cups coarse polenta (not quickcooking)
1/4 cup unsalted butter
1/2 cup grated Parmesan (from about 2 ounces), plus more for serving
Freshly ground black pepper
1/2 cup chopped fresh parsley
Olive oil (for drizzling)

Steps:

  • Pork:
  • Season pork with salt and pepper. Heat oil in a large heavy pot over medium. Cook pork, turning often, until evenly browned, 10-12 minutes. Transfer to a platter and pour off pan drippings.
  • Wipe out any burned bits from pot, but leave the golden-brown pieces (doing this will keep the finished sauce from tasting bitter). Add onion and garlic to pot and cook, stirring occasionally, until onion is starting to brown and caramelize, 12-15 minutes. Add tomato paste and cook, stirring occasionally, until slightly darkened in color, 5-8 minutes.
  • Add wine and cook, scraping up any browned bits, until reduced by about half, 5-8 minutes.
  • Add tomatoes, crushing with your hands as you go, then add thyme, rosemary, and bay leaves; stir in 2 cups water. Add pork with any juices accumulated on the platter; season with salt and pepper.
  • Bring liquid to a boil, then reduce heat and simmer, partially covered, until pork is falling-apart tender, sauce is thickened (it will be thicker than a typical pasta sauce), and flavors have melded, 2 1/2-3 hours.
  • Using 2 forks, break up pork into pieces or shred it (your choice!); taste and season with salt and pepper.
  • Do ahead: Pork can be cooked 5 days ahead. Let cool; cover and chill in sauce.
  • Polenta and assembly:
  • Bring 6 cups salted water to a boil in a large pot. Whisking constantly, gradually add polenta; reduce heat to medium-low.
  • Cook, whisking often, until polenta is tender and creamy, 20-25 minutes (if polenta becomes too thick too soon, loosen mixture by adding more water and continue cooking). Add butter and 1/2 cup Parmesan to polenta and whisk until melted; season with salt and pepper.
  • Spoon polenta into bowls or onto a platter and top with pork. Scatter parsley and more Parmesan over top and drizzle with oil.
