Steps:
- Cut bread diagonally into 12 (1/4 inch thick) slices; arrange on baking sheet.
- Brush slices evenly with Italian dressing and sprinkle with Parmesan cheese.
- Bake 375 degrees 5 - 6 minutes or until lightly toasted.
- Spread untoasted sides of bread slices evenly with mayonnaise and mustard.
- Layer 4 bread slices, mayonnaise side up with salami, bologna and provolone. Top with 4 bread slices, mayonnaise side up; layer with lettuce tomatoes and bacon. Top with remaining 4 bread slices, mayonnaise side down.
- Cut in half and secure with wooden picks.

- Trim all crusts from bread. Spread 4 slices with herb soft cheese. Top each cheese covered slice with 2 slices each of prosciutto, 3 leaves of arugula, thinly sliced tomatoes seasoned with a pinch of salt. Place a completed layer a top another, making 2 stacks each 2 layers high. Set the final trimmed bread slices in place, making 2 triple-decker sandwiches. Thinly slice and salt the radishes. Pierce a couple of thin slices of radish on each toothpick as you place 4 toothpicks in each sandwich. Cut each sandwich into 4 equal parts, cutting the sandwich across evenly on each side. The yield will be 8 triple-decker, square-shaped, "club" finger sandwiches, 2 per portion.

- Spread mayonnaise over cut sides of rolls. On roll bottoms, layer the lettuce, tomato and avocado. Drizzle with dressing; sprinkle with pepper. Layer with bacon, turkey, ham and cheese. Replace roll tops.

I had this sandwich in Baltimore, in a small, quaint mom-and-pop shop in Little Italy. Turkey is not too popular in Italy. After all, it was brought back to Europe after the discovery of America, and in Italy chicken and rabbits ruled the roost, along with other courtyard animals. In America, though, the turkey is the celebrated and celebratory animal, the one that fed famished early explorers coming to America. Well, this is a great sandwich to make on the days following Thanksgiving-or anytime, for that matter. The condiment and the greens are the Italian part, and the turkey is the American part-the perfect Italian American civic club sandwich.

- Whisk together the mayonnaise and pesto in a small bowl. Cook pancetta in a large skillet over medium heat as you would bacon, until crisp, about 4 to 5 minutes. Drain on paper towels. Add turkey slices to the same skillet, and cook, turning, until just warmed through, about 1 to 2 minutes.
- Assemble sandwiches: Spread 2 slices bread with half of the mayonnaise. Top each with a handful of arugula. Top with the pancetta and turkey, then the sliced tomatoes. Top with the remaining arugula. Spread remaining mayo on remaining bread slices, and place on top of the arugula. Cut sandwiches in half with a serrated knife, and serve.
