2 cups frozen peas and carrots
2 cups frozen green beans
1 cup sliced celery
⅔ cup butter
⅔ cup chopped onion
⅔ cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon celery seed
½ teaspoon onion powder
½ teaspoon Italian seasoning
1 ¾ cups chicken broth
1 ⅓ cups milk
4 cups cubed cooked turkey meat - light and dark meat mixed
4 (9 inch) unbaked pie crusts

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the peas and carrots, green beans, and celery into a saucepan; cover with water, bring to a boil, and simmer over medium-low heat until the celery is tender, about 8 minutes. Drain the vegetables in a colander set in the sink, and set aside.
  • Melt the butter in a saucepan over medium heat, and cook the onion until translucent, about 5 minutes. Stir in 2/3 cup of flour, salt, black pepper, celery seed, onion powder, and Italian seasoning; slowly whisk in the chicken broth and milk until the mixture comes to a simmer and thickens. Remove from heat; stir the cooked vegetables and turkey meat into the filling until well combined.
  • Fit 2 pie crusts into the bottom of 2 9-inch pie dishes. Spoon half the filling into each pie crust, then top each pie with another crust. Pinch and roll the top and bottom crusts together at the edge of each pie to seal, and cut several small slits into the top of the pies with a sharp knife to release steam.
  • Bake in the preheated oven until the crusts are golden brown and the filling is bubbly, 30 to 35 minutes. If the crusts are browning too quickly, cover the pies with aluminum foil after about 15 minutes. Cool for 10 minutes before serving.

4 Tbsp Butter
1/4 cup Flour
1 cup Low-Sodium Chicken Broth
1 cup Milk
1 tsp Salt
1/4 tsp Pepper
2 (9-inch) Pie Crusts
3 cups Cooked Turkey or Chicken, diced
2 pkg (12oz) Frozen Mixed Vegetables

Steps:

  • Melt the butter in a small saucepan over medium heat. Once butter is melted, whisk in flour until smooth. Slowly pour in the chicken broth and whisk until the sauce has thickened. Add the milk, salt, and pepper and whisk until the sauce is bubbling and thick enough to coat the back of the spoon.
  • To assemble the pie: Press one of the pie crusts into the bottom and sides of a 9 inch pie plate. Spread the cooked turkey or chicken on the base and top with the mixed vegetables. Pour the gravy over the top of the chicken and vegetables. Place the top crust over the pie. Trim and crimp the edges of the crust together. Using a paring knife cut slits across the top of the pie.
  • Bake the pot pie at 375 degrees F for 40 minutes or until the crust is golden brown and the filling is bubbling. Let pie cool for 10 minutes before serving.

An easy, no-fuss comforting pot pie using leftovers and ingredients that you already have on hand!

2 tablespoons unsalted butter
2 cloves garlic, minced
1 small onion, diced
2/3 cup frozen corn kernels
1/2 cup frozen diced carrots
1/2 cup frozen peas
1/3 cup all-purpose flour
1 cup chicken broth
3/4 cup milk
1 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper, to taste
2 cups chopped leftover Thanksgiving turkey
1 puff pastry sheet, cut into four
4 1/4-inch squares
1 large egg, beaten

Steps:

  • Preheat oven to 375 degrees F. Lightly oil four 10-ounce ramekins or coat with nonstick spray. To make the filling, melt butter in a large skillet over medium high heat. Add garlic, onion, corn, carrots and peas and cook, stirring occasionally, until onions become translucent, about 2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth, milk and thyme, and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in turkey; season with salt and pepper, to taste. Divide the filling evenly into the ramekins. Top with puff pastry and gently cut 4 vents in the top of the crust. Brush each crust with the beaten egg. Place into oven and bake until the crust is golden brown, about 20 minutes. Let cool 5 minutes before serving.

1/4 cup minced shallot about 1 large
2 garlic cloves minced
1/2 teaspoon salt plus more to taste
1/2 teaspoon black pepper plus more to taste
1/4 cup dry sherry
2 1/2 cups chicken broth
1/2 cup milk
1/3 cup flour
2 tablespoons fresh parsley chopped, plus more for serving
1 tablespoon fresh rosemary chopped, plus more for serving
1 tablespoon fresh thyme leaves chopped, plus more for serving
4 cups cooked turkey diced
2 cups green beans cooked, cut into bite-size pieces; or use other cooked vegetables such as carrots and peas
cooking oil spray or regular oil
1 egg yolk large
2 teaspoons water

Steps:

  • Unfold 1 puff pastry sheet onto a lightly floured surface. With a sharp knife, cut along the 2 line folds to create 3 strips. Cut each strip into 4 equal squares. Repeat the process with remaining puff pastry sheet. Place squares on a parchment paper-lined baking sheet and refrigerate while preparing the filling.
  • Melt butter in a large skillet with high sides over medium heat. Add mushrooms, shallot, garlic, salt, and pepper. Saute until mushrooms are browned and tender, about 8 minutes. Add sherry and simmer 2 minutes to cook off alcohol.
  • While mushrooms cook, in a bowl, whisk together chicken broth, milk, and flour. Pour broth mixture into the mushrooms, add herbs, and stir to blend. Bring to a simmer and cook, stirring frequently, until thickened, 2 to 3 minutes.
  • Stir in turkey and green beans and taste for seasoning. Add salt and pepper if needed.
  • Coat a 2 ½- to 3-quart baking dish with cooking spray. Spoon filling into dish and let cool while the oven preheats. (Cooling the filling will help the puff pastry rise more.)
  • Preheat oven to 400°. Starting at the outside edge, arrange puff pastry squares over the cooled filling, overlapping the squares somewhat in a shingle pattern and making concentric circles. If you have any squares leftover, leave them on the baking sheet; they can be baked to serve with the pot pie.
  • In a small bowl, whisk together egg yolk and 2 teaspoons water. Carefully brush egg wash on puff pastry squares, including any leftover squares.
  • Bake pot pie until the pastry is puffed and deep golden and the filling is bubbling, 35-45 minutes. At the same time, bake any remaining puff pastry squares until browned and puffed, 15-20 minutes. If the top of the pot pie begins to brown too much before the pot pie is hot to the center (about 190° on an instant-read thermometer), shield it with aluminum foil during the last 10-15 minutes of baking.
  • Scatter additional herbs over the pot pie if you like, and serve with extra puff pastry squares.

¼ cup butter
½ cup chopped onion
½ cup chopped mushrooms
1 tablespoon minced garlic
⅓ cup all purpose flour
½ teaspoon dried sage
¼ teaspoon dried thyme
1 ½ cups prepared turkey gravy
½ cup water
½ cup milk
1 (14 ounce) package frozen mixed vegetables, thawed and drained
3 cups cooked turkey, cubed
1 pinch salt and ground black pepper to taste
1 pastry for a 10-inch double crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt the butter in a large saucepan over medium heat. Stir in the onions, mushrooms, and garlic; cook until tender, but not browned, about 5 minutes. Stir in the flour, sage, and thyme until blended. Pour in the gravy, water, and milk, stirring to blend. Bring to a boil over medium-high heat; cook 1 to 2 minutes. All that leftover Thanksgiving dinner but tired of just leftovers...than try this leftover turkey dinner pot pie. I use a variation of veggies depending on what we have for the big dinner (This year we used carrots, corn and and asparagus). This recipe can be made in small individual size pie pans or in a large pie pan as well. I have taken several recipes and tweaked it to my own liking. This can also be prepared in advance and frozen once assembled and baked at a later day.

pastry dough, for a 9 inch double crust pie
2 cups cubed cooked turkey
2 cups mixed vegetables, thawed if using frozen veggies
2 tablespoons chopped onions
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup milk
season with salt & pepper
4 tablespoons gravy (OPTIONAL-I used leftover gravy for sauce, helpful)
to thicken potpie gravy

Steps:

  • Preheat oven to 400 degrees F.
  • Line bottom of pie pan with crust. (Spray with NonStick to prevent sticking).
