ITALIAN HOT DOGS
I'm a little Irish girl, who grew up in a big Italian community! These are the absolute best hot dogs I've ever had. Serving size depends on how many dogs you want to make. I'm going to post for 1 serving, you can take it from there.

Steps:
- Grill or broil hot dog.
- Wash peel and cube potato.
- Toss potato in oil, season with salt - pepper.
- Sauté potatoes until fork tender (like home fries or they can be roasted).
- Sauté onion and pepper until tender.
- Place your hot dog in torpedo roll,.
- Top with spicy mustard, potatoes, peppers and onions.
- ENJOY!

Steps:
- In a large bowl, combine potatoes, red peppers and onions. In a small bowl, mix oil, garlic, salt and pepper; add to potato mixture and toss to coat., Transfer to two 13x9-in. disposable foil pans; cover with foil. Place pans on grill rack over medium heat; cook, covered, 30-35 minutes or until potatoes are tender. Remove from heat., Grill hot dogs, covered, over medium heat 7-9 minutes or until heated through, turning occasionally. Place buns on grill, cut side down; grill until lightly toasted. Place hot dogs and potato mixture in buns. Serve with remaining potato mixture.

Steps:
- Bring a pot of water to a boil. Reduce heat to low, place hot dog in water, and cook 5 minutes or until done. Remove hot dog and set aside. Carefully place a steamer basket into the pot and steam the hot dog bun 2 minutes or until warm.
- Place hot dog in the steamed bun. Pile on the toppings in this order: yellow mustard, sweet green pickle relish, onion, tomato wedges, pickle spear, sport peppers, and celery salt. The tomatoes should be nestled between the hot dog and the top of the bun. Place the pickle between the hot dog and the bottom of the bun. Don't even think about ketchup!

- Preheat the oven to 425 degrees F.
- Wrap each hot dog in a slice of bacon from end to end diagonally until the whole strip of bacon is rolled around the hot dog, securing with a toothpick if needed.
- Heat a large heavy-bottomed skillet over medium heat. Add the bacon-wrapped hot dogs and cook, turning every 2 to 3 minutes, until browned on all sides. Transfer the skillet to the oven to render the bacon a bit more, about 5 minutes. Remove the toothpicks, if used.
- In a cast-iron skillet, heat the vegetable oil and add the diced white onion. Saute until translucent, 4 to 5 minutes. Remove from the skillet and add to a small mixing bowl with the sliced raw onion. Set aside.
- Place one bacon-wrapped hot dog in a bun. Evenly divide the warm pinto beans, jalapenos, tomatoes and the onion mixture. Top with the hot sauce, mustard and mayonnaise. Repeat with the remaining hot dogs and serve hot.
BRUNO'S ITALIAN HOT DOG
Adding the taste of Italian ingredients makes a good hot dog great. Don't even think about adding mustard or ketchup.

- Add olive oil to skillet or saucepan and heat to medium-high temperature.
- Add the sliced onion.
- Stir the onion slices and add salt and brown sugar.
- Stir frequently and cook until onion is soft and caramel colored (about 25 min).
- Wrap each hot dog with 2 prosciutto slices.
- Grill hot dogs until prosciutto is crisp (about 7-10 min).
- Place hot dog in lightly toasted roll.
- Top with provolone cheese and caramelized onions.
- Add roasted red peppers and sprinkle red pepper flakes.
- Finish with tomatoes and salt and pepper to taste.
