Roasted Sugar Snap Peas (so irresistible!) image

Super sweet and full of flavor, roasted sugar snap peas are like green candy - you won't be able to leave them alone. Try roasting a batch today!

1 pound sugar snap peas, (stems and stringy parts removed, washed and dried)
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
1/4 teaspoon garlic powder ((if desired))

Steps:

  • Preheat oven to 450ºF.
  • On a rimmed baking sheet, toss snap peas with oil, salt, pepper, and garlic powder. Bake for 10 to 12 minutes or until desired tenderness.
  • Serve immediately as a side dish, or on a salad, or as a yummy snack.

Italian Balsamic Roasted Sugar Snap Peas image

Sweet Sugar snap peas and grape tomatoes combine with onion, hot red pepper flakes and Italian seasoning to give you a spicy vegetable side. You finish the dish with a touch of balsamic vinegar which balances the sweetness of the vegetables.

1 lb sugar snap peas (washed and trimmed. )
1/2 onion (small and thinly sliced (about 1/2 cup))
1 1/2 cup grape tomatoes
1 tbsp olive oil (or more to coat the vegetables)
1/4 tsp Kosher salt
1/2 tsp crushed red pepper flakes (use less if you don't like spicy)
1/2 tsp dried Italian seasoning (crushed )
1 tbsp balsamic vinegar
black pepper (pinch )

Steps:

  • Preheat oven to 425℉.
  • Line a large rimmed baking sheet with aluminum foil for easy clean up.
  • In the baking sheet toss together the snap peas, onion, olive oil, salt and crushed red pepper until well coated. Roast for 5 minutes.
  • Mix in tomatoes and Italian seasoning. Roast for another 8 minutes more or until vegetables are lightly brown at the edges and tender.
  • Sprinkle over the vegetables the balsamic vinegar and black pepper.
  • Serve immediately.

1 lb sugar snap pea, trimmed
2 teaspoons extra virgin olive oil
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1 teaspoon dried oregano

Steps:

  • Preheat oven to 425°F
  • Cut leek halves into 2-inch lengths and then very thinly slice each piece lengthwise, yielding 2-inch-long strips. Toss the leek strips, peas, oil and salt in a medium bowl. Spread evenly on a baking sheet.
  • Roast for 15 minutes. Stir in tomatoes. Return to the oven and roast until the vegetables begin to brown, about 10 minutes more. Toss with oregano and serve.
