BAKED PENNE WITH ITALIAN SAUSAGE
This is a hearty, filling meal that's full of flavor!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
- Bake in preheated oven for 20 minutes, or until cheese is melted.

ITALIAN SAUSAGE AND GORGONZOLA PENNE
Steps:
- Boil a large pot of water and add 1 heaping tsp. of salt and cook the penne pasta. In a large skillet, squeeze the Italian sausages out of the casing and saute it over medium heat until well done. Lower the heat to low and add chopped onions and saute until soft, about 4 mins. Then turn off the heat and add the gorgonzola cheese and stir until well mixed. Add 2 tbsps of pasta water to the skillet after the pasta has been cooked. Drain the pasta and add to the skillet and stir well until the pasta is coated with sausage and cheese mixture. Add salt and pepper to taste and serve hot.
PENNE WITH GORGONZOLA AND TOMATOES

Steps:
- Heat oil in heavy large skillet over medium heat. Add chopped onion and garlic and sauté until translucent, about 8 minutes. Stir in chopped tomatoes and basil. Cook until mixture thickens, stirring occasionally, about 20 minutes.
- Meanwhile, using spoon, beat butter with Gorgonzola until blended.
- Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return pasta to pot.
- Whisk Gorgonzola mixture into tomato sauce. Add sauce to pasta and stir to coat. Season with salt and pepper. Sprinkle with Romano and serve.
PENNE WITH CARAMELIZED ONION-GORGONZOLA CHEESE SAUCE

- In 10-inch nonstick skillet, melt 2 tablespoons butter over medium-high heat. Stir in onion and garlic to coat with butter. Cook uncovered about 5 minutes, stirring occasionally, until onion is softened. Reduce heat to medium-low. Cook uncovered 35 to 40 minutes, stirring occasionally, until onion is light golden brown. Do not let onion or garlic burn. (Onions will shrink during cooking.)
- Meanwhile, fill large pot with 5 quarts water; heat to boiling over high heat. When water is boiling, add 1 tablespoon salt if desired. When water returns to boil, add pasta. Stir immediately to make sure it doesn't stick to itself or pan. Boil pasta 9 to 10 minutes or until cooked through but still slightly firm. Drain in colander. There is no need to shake off excess moisture.
- Add onion mixture to pot. Increase heat to medium and add 1 cup of the whipping cream and 1/4 cup butter. Cook, stirring occasionally, until butter melts and cream simmers. Stir in cheese, salt, pepper and nutmeg. Add drained pasta and remaining 3/4 cup whipping cream. Cook and stir until pasta is coated and sauce is hot.

GORGONZOLA PEPPER & SAUSAGE PASTA
This recipe sort of came about from things I had lying around the kitchen one night. It's a staple meal we make regularly as our pasta vice. You can use hot italian sausage if you like, but I prefer the sweet for the flavor. Cook the pasta to your liking, I like mine just beyond al-dente, and my vegetables crisp, not soggy or mushy. Enjoy!

Steps:
- Cook sausage links according to packaged directions. Slice in half lengh-wise and then into 1/4" slices.
- Bring pot of water to boil.
- Warm oil in large saute pan at medium high heat setting.
- Cook pasta according to directions. I prefer mine cooked to just softer than al dente.
- I slice my onions and peppers in half through the middle, then into quartered strips.
- Add garlic, bring to a simmer.
- Add Sun Dried Tomatoes stirring together with garlic. Add peppers. Cook about two to three minutes tossing ocassionally.
- Add spices, onion, and continue to cook until just tender.
- Add sliced italian sausage and Gorgonzola Cheese, toss together letting cheese start to melt.
- Serve immediately over pasta.

Inspired by Mean-Chef's gorgonzola sauce recipe (only easier) and a dish I had at a great little Italian restaurant in Albany, NY.

Steps:
- In a large sauce pan melt butter over medium heat.
- Add minced garlic to sauce pan cook for a few minutes but do not brown.
- Whisk in the flour to make reux- cook for 3 to 5 minutes whisking constantly- do not let it brown.
- Whisk in milk and heat until boiling- whisk often, add some fresh ground pepper.
- Once sauce is thickened remove from heat and set aside (well get back to the this later).
- In a large frying pan over medium-high heat add 3 Tbs olive oil add onions and slice the remaining garlic into pan sautee for 3 minutes until onion starts to soften.
- Add peppers, Italian seasoning cook for 5 minutes until Peppers begin to soften.
- Add cooked Sausage and warm through.
- Just before vegetable and meat mixture is finished- heat White sauce and stir in the cream, bring up to almost a boil and stir in parmesean and gorgonzola.
- Stir sauce until most of the gorgonzola is incorportated (lumps of cheese left in the sauce is a good thing!).
- Check cream sauce for salt add if necessary.
- In pasta bowls place Penne followed by Pepper onion meat mixture, then spoon on the Gorgonzola sauce, arrange mushrooms and asparagas on top.
