EASY WEEKNIGHT SKILLET LASAGNA
A deliciously easy weeknight skillet lasagna perfect for whipping up right after work. You get all of the traditional lasagna flavors in less time.

- Blend everything together until smooth and evenly combined. Set aside.
- Drizzle about 2 tablespoons of olive oil into a large skillet over medium heat. Add the ground beef and break it up into small pieces with a wooden spoon. While the meat is still pink, season with crushed red pepper flakes, a big pinch of kosher salt, and black pepper. Continue to cook the meat until about 80% browned, then stir in the diced onions.
- Season the mixture with granulated garlic, and onion powder and continue cooking until the onions are softened and the meat is fully browned, about 5 minutes.
- Pour in the balsamic vinegar, and stir to combine. Let the balsamic vinegar cook down for about 2 minutes, then stir in the garlic for 1 minute.
- Pour the marinara sauce over the beef mixture. Add 1 cup of water to the marinara jar and shake to loosen any leftover sauce, then pour it into the beef mixture. Stir to combine.
- Toss in the broken lasagna noodles, and push them into the mixture to ensure they're submerged. Cover the skillet and allow the noodles to cook and soften, about 20-25 minutes, stirring every 5 minutes to prevent the noodles from sticking together. If at any point you need to add additional water, do so in 1/3 cup increments.
- Once the pasta is tender, give it a taste and adjust seasoning if needed (but if you use Rao's, you most likely won't need to adjust).
- , and layer the remaining mozzarella cheese over the pasta. Dollop the ricotta mixture all over the top of the pasta and cover with a lid. Let the ricotta cheese mixture cook and melt for about 6 to 8 minutes.
- If you'd like to finish this under the broiler to get the top toasty and spotty, feel free to do so. Otherwise, you're all done! Garnish with the remaining fresh parsley and basil. Let this cool for about 10 minutes, then serve.

- Crumble sausage into a small skillet. Add onion and garlic; cook over medium heat until meat is no longer pink. Drain. Add the tomatoes, tomato paste, sugar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, 20 minutes. Combine the egg, ricotta and parsley., Spread 1/4 cup sauce in an 8x4-in. loaf pan coated with cooking spray. Trim noodles to fit dish. - In a skillet, crumble and cook sausage over medium heat until brown. Remove from heat and stir in pasta sauce and tomato sauce. In small bowl, combine ricotta cheese and Italian seasoning. Preheat oven to 375F. Spread 1 cup sauce into bottom of a 9 x 13 inch baking dish. Top with 3 noodles. Cover noodles with 1/3 of ricotta cheese mixture, 1 cup of mozzarella and 1 cup sauce. SKILLET LASAGNA WITH ITALIAN SAUSAGE AND BUTTERNUT SQUASH
DH and I saw this recipe in a Williams-Sonoma catalog and tried it last night. We loved it! We used hot Italian sausage, as that is what we had on hand, and found we had to break the noodles a bit to get them to fit into our skillet. I definitely think this one is a keeper. Prep time includes resting time at the end. Cook time includes time to cook the lasagna noodles al dente, which is specified in the ingredient list, but not in the directions.

- Preheat oven to 400 degrees F.
- In a large nonstick fry pan over medium-high heat, warm oil. Cook onion 8 minutes.
- Add garlic, salt and pepper; cook 30 seconds. Transfer to bowl.
- Cook sausage, breaking it into pieces, 8 minutes. Add to onion mixture.
- In fry pan over medium heat, melt butter. Add flour; cook, stirring, 1 minute.
- Slowly stir in milk; increase heat to medium-high; cook 8-10 minutes.
- Transfer to a separate bowl. Stir in 3/4 cup cheese, 1/4 cup parsley, sage, salt and pepper.
- Spread 1/3 cup sauce on bottom of fry pan; top with single layer of three noodles. Top with 1/3 cup of sauce, 1/3 cup sausage and layer of squash slices.
- Repeat layering of sauce, sausage and squash 5 more times, replacing squash layer with noodles every other layer. Top with remaining sauce and cheese.
- Bake 45 minutes.
- Sprinkle with 1 Tb parsley. Let stand 15 minutes.

- Heat broiler. In a cast-iron or ovenproof skillet over medium-high heat, cook sausage until browned and no longer pink, breaking it up with the back of a wooden spoon, 6 to 8 minutes. (Drain fat, if desired.) Add marinara and water to pan and bring to a simmer. Add ravioli and let simmer until ravioli is tender and sauce slightly thickens, 10 minutes.
- Meanwhile, in a medium bowl, stir together ricotta and egg and season with salt and pepper. Drop spoonfuls of ricotta mixture all over the ravioli and let cook 3 minutes.
- Sprinkle mozzarella all over, then transfer skillet to oven and broil until cheese is golden, 3 minutes. Let cool 10 minutes, then serve.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of water and 1 teaspoon salt to a boil. Cook lasagna noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain and rinse under cold water.
- Heat a large skillet over medium-high heat and stir in Italian sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
