Herbs and spices, both fresh and dried, are a fantastic way to add flavor to any cut of meat. This Spice-Rubbed Grilled Chicken recipe will keep your whole family happy!

oil, as needed
2 tsp. paprika
1 tsp. chili powder
1 tsp. ground cumin
1 tsp. ground thyme
3/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. ground pepper
2 lb. skinless, boneless chicken thighs, trimmed
2 tbsp. red wine vinegar
1 tbsp. honey

Steps:

  • Preheat grill to medium high heat. Lightly brush grill with oil.
  • In a small bowl, stir together paprika, chili powder, cumin, thyme, salt, garlic powder and pepper.
  • Place the chicken thighs in a large bowl, sprinkle the spice mixture over the chicken and toss to coat.
  • Grill the chicken until it is just cooked through, 4 to 5 minutes per side.
  • In a small bowl, whisk together vinegar and honey. Brush mixture over grilled chicken. Serve.

8 cloves garlic, minced
3 tablespoons olive oil
2 tablespoons minced fresh rosemary
1 ½ tablespoons Dijon mustard
1 ½ tablespoons lemon juice
¼ teaspoon ground black pepper
⅛ teaspoon kosher salt
4 boneless, skinless chicken breast halves

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk garlic, olive oil, rosemary, mustard, lemon juice, ground black pepper, and salt together in a bowl.
  • Place chicken breasts in a resealable plastic bag. Pour garlic mixture over chicken, reserving 1/8 cup. Seal bag and massage marinade into chicken. Let stand for 30 minutes at room temperature.
  • Place chicken on preheated grill and cook for 4 minutes. Turn the chicken, baste with reserved marinade, and continue to grill until cooked through, about 5 minutes. Cover with foil and let rest for at least 2 minutes before serving.

1 (16 ounce) bottle Italian-style salad dressing
1 teaspoon garlic powder
1 teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow baking dish, mix the salad dressing, garlic powder, and salt. Place the chicken in the bowl, and turn to coat. Marinate in the refrigerator at least 4 hours. (For best results, marinate overnight.)
  • Preheat the grill for high heat.
  • Lightly oil grate. Discard marinade, and grill chicken 8 minutes on each side, or until juices run clear.
