Italian-Style Swiss Chard image

This recipe for Italian-style Swiss chard has been in the family for years. If you like garlic, this recipe is for you.

1 bunch Swiss chard
1 cup water
1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, coarsely chopped
⅛ teaspoon crushed red pepper flakes
salt to taste

Steps:

  • Wash the Swiss chard and cut into 1 inch strips. Separate the thick and tough stalk sections from the upper leafy strips.
  • Bring the water and 1 tablespoon of salt to a boil in a large saucepan.
  • Cook the stalk sections in the salted boiling water for 2 minutes. Stir in the leafy strips and cook until the leaves are wilted and the stalks are fork tender, about 6 minutes. Drain and set aside.
  • Heat the olive oil, garlic, and red pepper flakes in a large skillet over medium heat until aromatic, about 3 minutes. Add the drained Swiss chard, cook and stir for 2 minutes; season with salt to taste.

1 colander full of swiss chard
1 shallot finely chopped
1 garlic clove, chopped
splash of olive oil
2 tbsp toasted pine nuts
1 tbsp finely chopped dates/soaked raisins
1 tsp chilli flakes

Steps:

  • Seperate the swiss chard stalks from leaves and rinse. Finely chop the stocks (about 1 cm) and green leaves (about 2 inch).
  • Add olive oil to heavy based pan with lid and add the shallot, then the garlic, then the chilli flakes and fry on low to medium heat until translucent but not browned
  • Add the finely chopped stalks and a dash of water, reduce the heat and place on lid and cook until stalks start to soften. Remove lid and add the chopped dates/pre-soaked and drained raisins, salt & pepper, add another dash of water if needed, replace lid and cook for another couple of minutes so that you create a light sauce
  • Add the green parts of the chard (which should still have a little water from rinsing that will help to stop it catching on the base) and replace lid and cook for 7-10 minutes, removing lid occasionally to stir and ensure there is enough liquid to stop it burning
  • Taste a piece of chard and stalk to make sure they are cooked enough (or to your liking) then toss in the toasted pine nuts, mix, check seasoning and serve (add a little extra olive oil and/or squeeze of lemon juice if you like)

2 3/4 cups vegetable broth or stock
Two 1/4-inch-thick slices fresh ginger, each about 1-inch in diameter
1/2 cup short or long-grain brown rice
1/2 cup wild rice
3 tablespoons vegetable oil or canola oil
1 cup sliced green onions (about 1 small bunch)
3 small carrots, peeled and chopped into 1/4-inch pieces
1 medium onion, finely chopped
1 clove garlic, minced
One 2-inch piece fresh ginger, peeled and grated
2 teaspoons mild curry powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup golden raisins
6 ounces extra-firm tofu (1/2 of one 12-ounce package), drained, patted dry, cut into 1/2-inch cubes
1/2 cup organic coconut milk
12 large fresh Swiss chard leaves (from 2 to 3 bunches)
One 26-ounce jar arrabiata or tomato-basil sauce

Steps:

  • For the rice: Combine the vegetable broth and ginger slices in a medium saucepan; bring to boil. Add the brown and wild rice and bring to boil. Reduce the heat to medium-low; cover and simmer until the rice is just tender, 50 to 55 minutes. Drain if necessary. Discard the ginger slices. Set the rice aside.
  • Meanwhile, position the oven rack in the center of the oven and preheat to 400 degrees F. Lightly oil a 13- by 9- by 2-inch glass or ceramic baking dish with 1 tablespoon of the vegetable oil; set aside.
  • Heat the remaining 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add the green onions, carrots, onions, garlic, ginger, curry powder, cumin, 1/4 teaspoon salt and 1/8 teaspoon pepper. Cook, stirring occasionally, until the vegetables are tender, 6 to 7 minutes. Stir in the golden raisins, tofu and cooked rice mixture. Add the coconut milk and bring to a simmer. Cook for 1 minute until the sauce coats the back of a spoon. Season with the remaining 1/4 teaspoon of salt and 1/8 teaspoon pepper.
  • Remove from the heat and let cool while preparing the chard leaves.
  • Bring a large pot of salted water to boil. Using a sharp knife, cut away the thick stems from the center of each leaf; discard the stems. Cut each leaf in half lengthwise. Trim the wide ends from the leaves to make each leaf half about 10 inches long. Using tongs and working with 1 leaf half at a time, dip the leaf half into the pot of boiling salted water for 10 seconds. Transfer to paper towels to drain.
  • Place about 1/3 cup of the rice filling onto the end of one Swiss chard leaf half. Roll up the leaf, enclosing the filling completely. Repeat with the remaining leaf halves and rice filling for a total of 12 rolls.
  • Spread 1 cup of the sauce onto the bottom of the prepared baking dish. Place the filled rolls, seam-side down, in a single layer atop the sauce in the dish. Spoon the remaining tomato sauce over the rolls. Bake until the rolls are heated through, 25 to 30 minutes.

2 pounds Swiss chard, rinsed, trimmed, and coarsely chopped
2 cloves garlic, green germ removed
Sea salt and hot red pepper flakes (or freshly ground black pepper)
2 tablespoons to one quarter cup extra virgin olive oil

Steps:

  • 1. Place the chard in a large stockpot with the rinse water still clinging to it and set on medium-high heat. When the chard begins to sizzle stir it and cover. Reduce heat to medium and cook until chard is wilted but still has texture and the leaves have turned dark green while the stems have turned a translucent grey, about 20 to 25 minutes. Remove from heat.
  • 2. Heat at least 2 tablespoons of oil with the garlic in a skillet over medium heat and cook until the garlic begins to turn golden, about 5 minutes. Add the Swiss chard, squeezing out some of the liquid before adding it to the oil. Cook, stirring, until the Swiss chard has wilted entirely and the garlic is cooked through, about 20 minutes. Season to taste with salt and pepper. Remove from the heat and transfer to a warmed platter. Drizzle with the remaining olive oil and serve.

2 large bunches Swiss chard, with stems, washed
6 tablespoons butter or olive oil, or to taste
2 bunches scallions, cut into quarter-inch lengths
Salt and black pepper, to taste

Steps:

  • Cut the Swiss chard into large pieces, plunge it into boiling water and cook it until the stems are just tender.
  • Drain, shock under cold water and drain again. Squeeze out as much water as possible. Put the chard on a board and chop it up with a large knife.
  • Melt the butter or olive oil in a deep pot. Add the scallions and cook them over moderate heat until just tender. Add the chopped chard, toss well, season to taste and serve.

Swiss chard is a delicious easy to grow green that is super beautiful to boot - the stalks can be pearly white, brilliant red or even vivid yellow. This is a fast & tasty way to prepare the swiss chard cranking out in the garden. I can make a mea of it with a couple of poached eggs & a little grated Parmesan/Romano cheese. 3 lbs swiss chard
2 teaspoons extra virgin olive oil
1 1/2 teaspoons garlic (minced or pressed)
1 tablespoon capers, mashed
3 teaspoons balsamic vinegar
salt, to taste
pepper, to taste

Steps:

  • Trim stem ends of chard. Thinly slice stems crosswise up to base of leaves; set slices aside. Reserve a few whole leaves to line serving dish; coarsely chop remaining leaves.
  • In a 6 to 8 quart pan over medium high heat, stir oil, garlic and capers until garlic is slightly softened, about 2 minutes. Add chard stems; stir until softened, about 2 minutes. Stir in chopped leaves, part at a time if pan if full, cover and cook until wilted, about 4 minutes.
  • Mix in vinegar; season to taste with salt and pepper. Garnish a serving dish with reserved chard leaves; spoon greens along side.
