4 bone-in pork loin chops (3/4-inch thick and 8 ounces each)
1/4 teaspoon pepper
2 tablespoons butter
1 can (8 ounces) tomato sauce
1/4 cup water
1 teaspoon Italian seasoning
1/2 teaspoon dried basil
4 slices slices part-skim mozzarella cheese
1 medium green pepper, cut into rings

Steps:

  • Sprinkle pork chops with pepper. In a large skillet, brown chops in butter on both sides; drain. Combine the tomato sauce, water, Italian seasoning and basil; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until meat juices run clear., Top each pork chop with cheese and green pepper. Cover and cook 3-5 minutes longer or until cheese is melted.

3 cups crushed saltine crackers
2 cups grated Parmesan cheese
1 tablespoon Italian-style seasoning
¼ teaspoon garlic powder
1 cup butter, melted
6 pork chops

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a medium bowl, combine the crushed saltines, Parmesan cheese, Italian-style seasoning and garlic powder and mix together well.
  • Dip the chops in the melted butter and then dredge each chop in the cracker mixture, coating all sides thoroughly. Place the chops in a 9x13 inch baking dish.
  • Bake at 425 degrees F (220 degrees C) for 30 to 40 minutes, or until internal pork temperature reaches 145 degrees F (63 degrees C).

1 teaspoon olive oil
2 cups sliced mushrooms
2 tablespoons olive oil
6 (3/4 inch thick) pork loin chops
2 cloves garlic, crushed
1 cup chopped onion
1 (14.5 ounce) can diced Italian tomatoes, undrained
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup water, if necessary
1 large green bell pepper, cut in 6 pieces

Steps:

  • Heat 1 teaspoon olive oil in a skillet over medium heat. Stir in mushrooms; cook and stir until mushrooms are tender, 5 to 7 minutes. Transfer the mushrooms to a bowl and set aside.
  • Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Add the pork chops, browning on both sides, 7 to 10 minutes. Place the pork chops on a plate, then drain all but 1 tablespoon of drippings from the skillet. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Pour in the tomatoes, then season with basil, oregano, salt, and pepper. Transfer the pork chops back to the skillet; cover and simmer until the pork chops are tender and no longer pink in the center, about 45 minutes. Stir in some water if the mixture becomes too dry. Place the bell pepper on top of the pork, then add the reserved mushrooms. Continue to simmer until the bell pepper is tender, 5 to 10 minutes.

2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each)
Salt and freshly ground black pepper
1 small onion, thinly sliced
1 (15-ounce) can diced tomatoes, in juice
1 teaspoon herbes de Provence
1/4 teaspoon dried red pepper flakes, or more to taste
1 tablespoon chopped fresh Italian parsley leaves

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
  • Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
  • Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.

My husband frequently requests these over my marinated and grilled pork chops when I give him a choice. If you do not have an oven-proof skillet, you may cook the chops on the stove at medium-low.

3 tablespoons milk
1 ½ cups Italian seasoned bread crumbs
½ cup grated Parmesan cheese

  • Preheat oven to 325 degrees F (160 degrees C).

Came up with this recipe when I was stuck with boring ol' pork chops thawed! I'm sure you know the feeling, LOL! I searched and searched and found 2 recipes on here that sounded good, but combined the 2 with my own personal tastes and ideas. 3 -4 pork chops (see note)
salt and pepper, to taste
1 tablespoon vegetable oil, more if needed
1 (10 3/4 ounce) can cream of mushroom soup
1 (14 1/2 ounce) can del monte stewed tomatoes, broken up with the juice
1 teaspoon minced garlic (to taste)
1 tablespoon dried parsley
1 teaspoon dried basil
1/2 teaspoon dried Italian seasoning
1/2 teaspoon dried oregano
1/4-1/2 teaspoon beef bouillon granules, to taste for saltiness
1 tablespoon butter, cut up into small pieces
1 (4 ounce) can sliced mushrooms, drained
fresh coarse ground black pepper, to taste

Steps:

  • Season chops on both sides with salt and pepper to taste.
  • Fry in deep, hot skillet with oil til lightly browned on both sides.
  • Remove to a platter. Wipe out excess oil and fat with a paper towel.
  • Add rest of ingredients and stir to mix.
  • Add chops and top each (covering completely)with most of the sauce, leaving some on the bottom underneath each chop.
  • Place on tight-fitting lid, and bring to a simmer.
  • Simmer for about 1 hour on LOW heat til very tender, stirring sauce ocaisionally so it doesn't burn or stick. (*I didn't need to turn these, but did always make sure they were totally covered with the sauce to keep them moist.).
  • Serve over or with mashed potatoes, rice or noodles.
  • Note: I made 3 pork chops, and there was plenty of gravy to go with our mashed potatoes. Served them also with green beans, bread and butter and a nice salad! :).
  • *If making 4 chops, there might not be enough gravy to top mashed potatoes or noodles, etc., so plan ahead and either make more sauce or top what you are serving it with, with a little butter.

Steps:

  • Pound each pork chop with meat mallet, rolling pin or side of a can to 1/4-inch thickness. Place chops in large resealable plastic bag. Add 1/4 cup of the dressing; seal bag. Turn bag gently to coat chops evenly with dressing. Refrigerate 30 min. to 1 hour to marinate. Remove chops from marinade; discard bag and marinade.
  • Preheat oven to 400°F. Coat chops with coating mix as directed on package; discard any remaining coating mix. Place chops in 15x10x1-inch baking pan.
  • Bake 20 to 25 min. or until cooked through (160°F). Toss arugula with remaining 1/4 cup dressing; arrange on serving platter. Top with chops; sprinkle with tomato and onion. Serve with lemon wedges.

Here's another recipe passed down from my mother and I've passed on to my daughters and daughter-in-law. We love it because it not only tastes good but it is an entire meal in one dish - AMEN! Enjoy!

6 pork loin chops
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 medium onion, chopped
1/4 cup green pepper, chopped
2 (8 ounce) cans tomato sauce
1 cup water
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon garlic salt
pepper
5 medium potatoes, peeled and quartered
1 cup grated romano cheese

Steps:

  • Preheat oven to 350 degrees.
  • Heat shortening in large skillet; add pork chops and brown quickly on both sides.
  • Remove chops and drain off all but 2 tablespoons fat.
  • Cook onion and green pepper in remaining fat for about 3 minutes or until onion is soft.
  • Add tomato sauce, water, sugar and seasonings.
  • Heat to boiling and cook for about 5 minutes.
  • Arrange potatoes in a large shallow baking dish or casserole.
  • Place pork chops on top of potatoes and pour sauce over all.
  • Cover casserole with lid or foil.
  • Bake at 350 degrees for 1 hour.
  • Remove cover and sprinkle with grated romano cheese, returning to oven and baking 15 minutes longer.

1 tablespoon finely chopped garlic
1 tablespoon Italian seasoning
1 1/4 teaspoons salt
4 bone-in pork loin chops (1 1/2 lb)
2 russet potatoes, unpeeled, cut into 1-inch pieces (1 lb)
1/2 cup Progresso™ Panko Italian style crispy bread crumbs
1/4 cup shredded Parmesan cheese
1 cup cherry tomatoes
1/2 lb green beans, trimmed
1/4 cup thinly sliced fresh basil leaves

Steps:

  • Heat oven to 425°F. Spray 18x13-inch rimmed sheet pan with cooking spray.
  • In large bowl, mix 4 tablespoons of the melted butter, the garlic, Italian seasoning and 1 teaspoon of the salt. Pour 2 tablespoons of the mixture into medium bowl; add pork chops, and toss to coat. Cover and refrigerate. Add potatoes to remaining mixture in large bowl; toss. Pour potato mixture in pan. Roast 25 to 30 minutes, stirring once, until tender.
  • Meanwhile, in medium bowl, mix remaining 1 tablespoon melted butter, the bread crumbs and Parmesan cheese; set aside.
  • Add pork to pan with potatoes. Top pork with bread crumb mixture; press to adhere. Add tomatoes and green beans to pan; sprinkle vegetables with remaining 1/4 teaspoon salt. Roast 12 to 18 minutes or until pork is no longer pink and meat thermometer inserted in center reads at least 145°F, and potatoes are browned and tender. Top with basil.
