JACK-O'-LANTERN HAND PIES
Get into the spirit of Halloween with Jack-o'-Lantern Hand Pies! Sweet potatoes, black beans and corn make up the filling for these pumpkin-shaped Jack-o'-Lantern Hand Pies that are as festive as they are delicious.

Steps:
- Heat oven to 350°F.
- Combine first 4 ingredients.
- Split biscuits horizontally in half. Roll out each dough piece to 4-inch round on lightly floured surface.
- Place 8 dough rounds in single layer on baking sheet sprayed with cooking spray; top with 2 Singles pieces and potato mixture, adding about 2 Tbsp. potato mixture to each round. Lightly brush edges of dough with water.
- Use sharp knife to cut jack-o'-lantern faces out of remaining dough rounds; place over topped dough rounds on baking sheet. Press edges together with fork to seal. Make 2 small cuts, about 1/2 inch apart, at top of each pie, then fold under dough at cuts to make pumpkin stems as shown in photo.
- Whisk egg and food colorings until blended; brush onto tops of pies.
- Bake 16 to 18 min. or until pies are puffed and golden brown.

- In a large bowl, beat the first 10 ingredients until smooth. Divide dough in half so that 1 portion is slightly larger than the other. Roll out larger portion to fit a 9-in. pie plate. Transfer crust to pie plate. Trim crust to 1/2 in. beyond edge of plate; flute edges. Pour filling into crust., Cover edges loosely with foil. Bake at 400° for 10 minutes. Reduce heat to 350°; bake 40-45 minutes longer or until a knife inserted in the center comes out clean. Remove foil. Cool on a wire rack., Roll remaining dough to 1/8-in. thickness; cut into desired shapes. Place cutouts on an ungreased baking sheet. Bake at 400° for 6-8 minutes or until golden brown. Arrange cutouts over pie. Garnish servings with whipped cream.

- Preheat oven to 400°F (200°C). Grease 10 muffin cups.
- Place ground beef and onion in a large skillet over medium heat; cook and stir until the meat is browned and crumbly, about 10 minutes. Drain excess grease. Stir in the chili powder, cumin, salt, garlic powder, tomato sauce, carrot and olives, and bring the mixture to a simmer. Cover the skillet, and cook until thickened and the carrot is tender, about 20 minutes. Stir occasionally.
- Working on a floured surface, separate each biscuit and roll out into 4-inch circles. Press the circles of biscuit dough into prepared muffin cups; bake in the preheated oven until the cups are lightly browned, about 10 minutes. Remove the biscuit cups from the pan and place onto a baking sheet.
- Cut the 10 slices of American cheese into 3-inch circles and cut jack-o'-lantern faces into the circles with a sharp paring knife. Chop remanants of cheese and mix into the meat mixture. Fill the biscuit cups with the meat mixture, and place a cheese face on top of each.
- Return to the oven and bake just until cheese begins to soften, 3 to 5 minutes.

- Heat oven to 375°F. Spray cookie sheets with cooking spray. In large bowl, beat cookie ingredients with electric mixer on medium speed until smooth. Using (2 tablespoon-size) ice cream scoop, drop batter 2 inches apart onto cookie sheets. With damp hands, gently smooth out dough.
- Bake 12 to 15 minutes or until set. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
- In medium bowl, beat 1/4 cup butter and the cream cheese with electric mixer on medium speed until light and fluffy. Gradually add powdered sugar; beat until blended. Stir in maple extract.
- For each pie, spread about 1 generous tablespoon filling on bottom of 1 cooled cookie. Top with second cookie, bottom side down; gently press cookies together.
- Using black decorating icing, pipe jack-o'-lantern faces. Using green decorating icing, pipe jack-o'-lantern stems on tops of pies.
