JACK-O'-LANTERN STUFFED PEPPERS
Carve faces into the side of a bell pepper for a cute jack-o'-lantern you can eat too! This adorable Halloween-themed dinner is perfect for a family dinner to fuel your trick-or-treating adventure. Or serve them at a Halloween party and watch them disappear! Don't feel like freehand-carving the faces with a knife? Try using a cookie cutter instead.

Steps:
- Preheat oven to 350 degrees F.
- Heat oil in a large skillet over medium heat. Add onion and garlic and cook, stirring occasionally, until softened and beginning to brown, about 3 minutes. Add beef, salt and pepper; cook, crumbling with a wooden spoon, just until it loses its pink color, about 5 minutes more. Remove from heat and stir in rice, 3/4 cup tomato sauce and parsley.
- Meanwhile, cut out stem ends of bell peppers and set aside; scoop out seeds. With a sharp paring knife, cut out a jack-o'-lantern face on one side of each pepper. Place the peppers and tops, cut-side down, in a microwave-safe pie pan. Add ¼ cup water. Microwave on High until tender but firm, 4 to 6 minutes. Empty the water from the dish and turn the peppers cut-side up.
- Stuff the peppers with the beef mixture. Spoon the remaining ¼ cup tomato sauce over the peppers. Bake until the mixture is heated through, 20 to 25 minutes. Place the steamed tops back on top of the peppers.

- In small microwavable bowl, melt chocolate chips on High for 1 minute or until melted. With tip of knife, spread chocolate on inside of each plastic cup to resemble eyes, nose and mouth of jack-o'-lantern. Repeat with 3 more cups. Refrigerate 5 minutes or until chocolate is set.
- Meanwhile, in blender container, place all remaining ingredients; cover and blend until smooth. Pour into chocolate painted cups.

- Cut a thin slice of peel from the bottom of each orange so it will not roll. Slice off the top third of each orange. Scoop out the inside with a serrated knife and grapefruit spoon. Cut a hole in each "cap" to insert a straw. Decorate orange like a Jack-O-Lantern, if desired. Put pulp and juice (without seeds) into blender with milk, yogurt, vanilla and honey, and blend well. Pour blended smoothie into Jack-O-Lantern oranges, place caps on top, insert straws and serve.

JACK-O-LANTERN COOKIES
These are my husband's favorite cookies. It wouldn't be Halloween without them.

- Preheat an oven to 375 degrees F (190 degrees C). Mix pumpkin, sugar, cinnamon, ginger, and nutmeg in a bowl until thoroughly combined. Set aside.
- Sift flour, salt, and baking soda together in a large bowl. Stir in brown sugar, shortening, egg, and molasses, mixing until smooth. Fold in rolled oats.
- Roll cookie dough out to 1/8 inch thick on a lightly floured surface. Cut out 48 circles using a 2 1/2 inch cookie cutter. Arrange 24 of the circles on a baking sheet and place a teaspoon of pumpkin filling on each. Cut Jack-O-Lantern faces on the remaining 24 circles, then lay the faces over the pumpkin filling, sealing the edges.
- Bake in the preheated oven until golden brown, 12 to 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
