There are many, fancy variations on this basic recipe. This recipe works with many types of bread - white, whole wheat, cinnamon-raisin, Italian or French. Serve hot with butter or margarine and maple syrup.

6 thick slices bread
2 eggs
⅔ cup milk
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
salt to taste

Steps:

  • Beat together egg, milk, salt, desired spices and vanilla.
  • Heat a lightly oiled griddle or skillet over medium-high heat.
  • Dunk each slice of bread in egg mixture, soaking both sides. Place in pan, and cook on both sides until golden. Serve hot.

This recipe comes from Taste Of Home magazine. I love these for breakfast or lunch during the holiday season or whenever I have eggnog.

12 slices Canadian bacon
6 slices monterey jack cheese
12 slices French bread (1/2-inch thick)
3/4 cup eggnog
3 tablespoons butter or 3 tablespoons margarine
6 tablespoons strawberry preserves

Steps:

  • Place two slices of Canadian bacon and one slice of cheese on each of the six slices of bread.
  • Top with remaining bread.
  • Place eggnog in a shallow dish.
  • Dip sandwiches in eggnog.
  • In a large skillet or griddle, melt butter.
  • Cook sandwiches on both sides for 2-3 minutes or until bread is golden brown.
  • Serve with strawberry preserves.

1 egg
1/2 cup refrigerated french vanilla non-dairy coffee creamer
confectioners' sugar (optional)
1/4 cup seedless raspberry jam

Steps:

  • On four slices of Texas toast, place one slice of bacon and one slice of cheese; top with remaining Texas toast. In a shallow bowl, whisk egg and creamer. Dip sandwiches into egg mixture.
  • On a hot griddle or large skillet coated with nonstick cooking spray, cook sandwiches for 2 - 3 minutes on each side or until golden brown sprinkle wiht confectioners' sugar if desired. Serve with jam.
