Healthy and full of flavor! Middle Eastern lentil soup is simple yet it has exotic flavors you won't forget! This is one of my all time favorite soups!

Steps:
- In a soup pot heat olive oil on medium. Add the onion, celery, carrots, and garlic. Sauté until onion is translucent. Add 4 cups of broth and the lentils. Bring to a boil and cook until the vegetables are tender. Add cumin, salt, and allspice. Turn down heat to low and allow to simmer for about 30-40 minutes.
- Using an immersion blender blend solids thoroughly.
- Add the remaining broth and simmer for an additional 15 minutes.
- Add the lemon juice and additional salt to taste.

- Place pot over medium heat.
- Add olive oil.
- Add onion and garlic. Cook until just starting to brown.
- Add salt and cumin. Stir.
- Add lentils. Stir until mixed well.
- Add 4 cups of water and allow to cook down. About 10 minutes.
- Add remaining water, and lemon juice. Cook another 10 minutes or until lentils are soft.
- Turn off heat, using a hand blender, puree mixture until smooth.

MIDDLE EASTERN LENTIL SOUP
Known in the Middle East as Chorbat el Ads, this is a 'cooks-itself', hearty, delicious soup.

Steps:
- Heat oil in a pan and gently fry the chopped onions for 5 minutes.
- Add the chopped garlic, turmeric and cumin and continue cooking for a few minutes more.
- Stir in the lentils, add the stock and cook for 35 minutes. Stir several times during cooking, especially towards the end, to prevent lentils from sticking to base of pan.
- Toss in parsley, stir in lemon juice and leave to cook for 2-3 minutes more.
- No blending is necessary unless you want it really smooth.
- Serve with chunks of crusty bread.
JACOB'S MIDDLE EASTERN LENTIL SOUP
This recipe came out of our home school Bible Workbook called Genesis to Joshua. My children had to make it one day for Bible Class. For those who need a refresher...Esau came in from the wilderness after hunting and sold his birthright to Jacob for some of his soup. I have to tell you, I have never been a big lentil soup fan, but the lemon juice in this soup really brightens the flavor and I found it to be very pleasing...even my picky eaters enjoyed it!

Steps:
- Rinse lentils, discarding and stones, or blemished lentils; drain.
- Heat oil in a large saucepan over medium-high heat until hot.
- Add onion and bell pepper, cook and stir 5 minutes or until tender.
- Add cumin and ground red pepper and stir 1 minute.
- Pour in the 4 cups of water and the lentils. Bring to a boil and Reduce heat to low.
- Cover and simmer 20 minutes.
- Stir in salt and simmer 10 minutes more or until lentils are tender.
- Stir in lemon juice and serve.

- Heat oil in a large pot over medium-high heat. Add onion and celery. Cook until lightly browned, stirring occasionally, 5 to 10 minutes. Add garlic and cook another minute or 2, stirring constantly. Add broth, water, and lentils and bring to a boil, about 5 minutes.
- Add eggplant to the soup and return to a boil. Reduce heat, cover, and simmer 15 minutes more. Stir in zucchini and tomato and return to a boil. This recipe is a family tradition that my mother recieved from her mother who recieved it from her mother, all the way back. It is a easy quick soup to make that is very filling and very delicious. Its great with some pieces of bread thrown in.

- Place oil in a sauce or soup pot on medium heat.
- After 2 minute put roughly chopped garlic in and saute until they just start to turn brown.
- Add lentils cumin nutmeg and coriander and mix into oil for about a minute Add water and put on high heat until it boils.

- Heat up all 12 cups of water in a large pot. Do not fully boil. The temperature of the water should reach about 150 degrees F (65 degrees C), but not more than that.
- Remove the pot from the fire. Pour the water into a bowl and add all of the sumac berries into it. Mix the berries so all of them get submerged under water. Let the berries soak in the water for at least 30 minutes. This will color the water red and absorb the tart flavor of the sumac into the water.
- While the sumac is soaking, chop the onion into small pieces and saute it in a frying pan with olive oil until the onions become golden brown, for at least 15 minutes, while constantly stirring the onions. If there is too much olive oil left in the pan when onions are done, drain it out of the pan.
- Strain the berries out of the water by pouring it over a strainer, back into the pot where the water was heated up. Strain the water twice, to make sure that all the berries have been removed. If there is some sumac sediment residue left in the water, it is ok, and it does not need to be removed. The sumac berries can be thrown away, as they will not be used anymore.

- Roughly chop the cilantro. Scrub the carrots, then cut them into chunks (do not peel). Cut celery into chunks, including leaves. Reserve.
- In a medium sized soup pot, heat olive oil over medium heat. Add diced onion and saute till translucent.
