SIZZLIN' JALAPENO SAUSAGE BALLS

Steps:
- Preheat the oven to 375°; grease two baking sheets well with butter or coat with cooking spray.
- Dipping sauce: in a small bowl, whisk together the mayonnaise and mustard; cover with plastic wrap and refrigerate until the sausage balls are ready to serve.
- Sausage balls: in a large bowl, knead together all of the sausage ball ingredients until well combined.
- If the mixture seems dry, add 1-2 tablespoons water, as needed to bring the mixture together.
- Form the mixture into 1 1/4-inch balls and place them on the prepared baking sheets.
- Take care that the sausage balls don't touch, as that will make them take longer to cook.
- Bake until they are golden all over, about 25 minutes.
- Set the sausage balls on paper towels to drain off excess grease, then place them on a pretty platter with some cocktail sticks so people don't have to eat them with their fingers.
- Serve warm with the mustard-mayo sauce for dipping.

- In a large skillet, cook the sausage over medium heat until no longer pink; drain. In a small bowl, combine the cream cheese and Parmesan cheese; fold in sausage., Spoon about 1 tablespoonful into each jalapeno half. Place in 2 ungreased 13x9-in. baking dishes. Bake, uncovered, at 425° until filling is lightly browned and bubbly, 15-20 minutes. Serve with ranch dressing if desired.

PEPPER JACK BITES
Everyone I know LOVES the sausage balls we bake for the holidays, but I needed to use Pepper Jack cheese, so I came up with this alternative. We like these, hope you do, too! The cumin a garlic salt was a good amount for our family, but I'm sure they can be adjusted to taste.

SAUSAGE JALAPENO POPPERS
This is a recipe for stuffed jalapenos I had at a baby shower in Texas. I loved them and have made them for every party since. They are always anxiously requested, a HIT AT EVERY PARTY!!!! Use toothpicks to secure the bacon around the stuffed jalapenos. Be sure to use a pan that won't let the bacon drip all over the oven while cooking!

- Preheat oven to 375 degrees F (190 degrees C).
- Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
- Drain sausage and place in a medium bowl. Mix with the cream cheese.
- Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks.
- Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.
