EASY JAM MUFFINS



Easy Jam Muffins image

Jam-topped muffins. These are great for breakfast!

Number Of Ingredients 9

2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg
2 tablespoons any flavor fruit jam
¼ cup chopped walnuts

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Place 1/2 teaspoon any flavor jam on each muffin before baking; press into batter. If desired, sprinkle with finely chopped nuts.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

3 teaspoons baking powder
½ teaspoon salt
½ cup white sugar
1 egg, beaten
¾ cup milk
¼ cup vegetable oil
1 cup any flavor fruit jam

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl beat egg, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy. Gently stir in jam.
  • Pour the batter into the prepared pan and bake at 400 degrees F (205 degrees C) for 25 minutes or until golden.

2/3 cup caster sugar
1 egg
1 1/4 cups coconut
1 teaspoon vanilla extract
1 1/4 cups milk
3 tablespoons jam (any kind you like!)
6 tablespoons vegetable oil

Steps:

  • Heat oven to 400°.
  • Sift together flour and baking powder; stir in sugar and coconut.
  • Beat the egg, vanilla extract, milk and oil together.
  • Add the dry mix to the wet mixture.
  • Mix just until combined.
  • Drop a large tablespoon of batter into each tin.
  • Add a teaspoon of jam to each and the rest of the batter.
  • Sprinkle the tops with a little bit of coconut.
  • Bake 25-30 minutes or until well risen and firm to the touch.

1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats
12 tablespoons (1 1/2 sticks) unsalted butter, softened
3/4 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
2/3 cup guava or other jam

Steps:

  • Preheat the oven to 325 degrees. Line a cookie sheet with parchment paper.
  • Place the grated coconut in a shallow bowl and set aside. Combine the flour, baking soda, salt and oats in a large mixing bowl.
  • In another bowl, cream together the butter and brown sugar until light and fluffy. Then beat in the eggs and vanilla. Add the flour mixture and mix just until combined.
  • To shape cookies, roll the batter between your hands to form balls the size of a large walnut. Roll in the grated coconut to coat then place on the cookie sheet and flatten to 2-inch circles with the palm of your hand. With your thumb, make a depression in the center of each and fill with a generous teaspoonful of jam. Bake 20 to 25 minutes, until lightly browned. Transfer to racks to cool.

1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg
1/2 cup milk
1/3 cup butter, melted
1/2 teaspoon vanilla extract
1/4 cup strawberry or plum jelly
TOPPING:
3 tablespoons butter, melted
1/3 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a bowl, combine the first five ingredients. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients just until moistened. Spoon half of the batter into 12 greased or paper-lined muffin cups. Spoon 1 teaspoon jelly in center of each. Fill muffin cups two-thirds full with remaining batter. Bake at 400° for 20 minutes or until a toothpick inserted 1 in. from the edge comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Brush tops with butter. Combine sugar and cinnamon; dip tops of muffins in mixture. Serve warm.

Taken from an old cookbook I picked up at a flea market, these are light, fluffy, and totally comforting on a cold winter's morning. The jam called for is apricot, but I didn't have any of that, nor do I like apricots. Sugar-free cherry jam from a local Amish lady was my choice of filling. It was so deeelish! The muffins were so light and the jam was total decadence! I can't wait until I try the blueberry jam.

Number Of Ingredients 10

1 2/3 cups all-purpose flour (if using self-rising, omit salt and baking powder) or 1 2/3 cups self-rising flour (if using self-rising, omit salt and baking powder)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1/8 teaspoon cinnamon or 1/8 teaspoon nutmeg
1/3 cup shortening (I prefer Crisco)
3/4 cup milk
1 egg
apricot jam (or your choice)
chopped nuts, if desired

Steps:

  • Preheat oven to 400 degrees.
  • In a mixing bowl, combine flour, sugar, baking powder, salt, and nutmeg. Cut in shortening until particles are fine and about the size of peas.
  • Add milk and egg; mix just until thoroughly blended. There will probably be lumps.
  • Spoon into a greased muffin tin or paper liners. Place 1 teaspoon of jam on top of each muffin, pressing into batter slightly.
  • Sprinkle with the chopped nuts. Bake for 20-25 minutes or until the tops spring back when touched lightly.
  • Serve warm. These can also be drizzled with powdered sugar glaze for added sweetness.

Steps:

  • Preheat the oven to 350 degrees F. Combine the sugar and cinnamon in a shallow dish. Dip each biscuit in the melted butter and roll into the cinnamon sugar. Place the coated biscuits on a parchment-lined baking sheet. Use your thumb or the bottom of a small tumbler to make an impression into each biscuit. Fill each indentation with about 2 teaspoons of jam. Bake until golden brown, 13 to 16 minutes. Serve warm.

Pour the dry ingredients on top, making sure to put the soda and baking powder on top of the flour, rather than into the wet ingredients. Whisk or mix just until combined. Mixture will be quite thick.
  • Fill each muffin tin about 1/2 full. Drop a heaping teaspoon of jelly or jam into the middle of each muffin and then cover with batter until the muffin tin is full. Smooth the batter to make sure the jam is covered (I usually just do this with my fingers).
  • Bake until muffins are golden on top, about 25 minutes. Let cool for a few minutes before removing from pan.
