CUBAN BLACK BEANS AND RICE

Cuban Black Beans and Rice image

Cuban Black Beans and Rice is a simple, satisfying side dish bursting with Latin flavors like garlic, oregano, and cumin.

Provided by Liz DellaCroce

Categories     Side Dish

Time 10h

Number Of Ingredients 15

1 pound black beans - dried
3 cloves garlic
4 bay leaves (divided)
2 tablespoons extra virgin olive oil
1 medium onion (diced)
1 red bell pepper (seeded and diced)
2 cloves garlic (minced)
1 tablespoon salt
1 tablespoon cumin
1 tablespoon dried oregano
1 teaspoon pepper
1/2 teaspoon cayenne
2 cups long grain white rice (rinsed)
4 cups chicken broth (low sodium)
minced cilantro and lime wedges (to serve)

Steps:

  • Soak beans overnight to soften and remove any small hard stones. The next day, strain and rinse soaked beans with fresh water.
  • To cook beans, place in a large pot and add enough water to cover the beans by two inches. Carefully smash whole garlic cloves with the back of a knife and add to the pot of beans along with 2 of the bay leaves.
  • Bring the pot to a boil then reduce heat to low and simmer until tender (90 minutes or up to two hours.) Set aside once cooked.
  • Next, in a large Dutch oven, heat olive oil over medium-high heat and sauté onions, peppers, and garlic. Add spices (salt through cayenne) and continue stirring until vegetables have softened, 4-6 minutes.
  • Rince rice in a strainer until the water comes out clear
  • Stir in rinsed (uncooked) rice and sauté for 2 minutes so that the rice starts to toast and lightly brown.
  • Pour in chicken broth and add reserved, cooked black beans along with bay leaves. Stir once then bring to a boil. Stir a second time then reduce heat to low and place a tightly fitting lid on the pot. Cook until liquid has been absorbed, about 15 minutes.
  • Use a fork to loosen the rice and bean mixture then serve with fresh cilantro and lime wedges.

MAIDA HEATTER'S CUBAN BLACK BEANS AND RICE

Maida Heatter's Cuban Black Beans And Rice image

Provided by Craig Claiborne And Pierre Franey

Categories     lunch, main course

Time 5h

Yield Eight servings

Number Of Ingredients 17

1 pound dried black beans, preferably turtle beans
6 cups cold water
2 small ham hocks, about 1 1/4 pounds
1/2 cup olive oil
3 1/2 cups finely chopped yellow onions
1 1/2 cups chopped green peppers
2 tablespoons finely minced garlic
2 bay leaves
1/4 teaspoon dried, hot red-pepper flakes
3 tablespoons red-wine vinegar
Salt to taste, if desired
Freshly ground black pepper to taste
1/4 teaspoon cayenne pepper
1/4 teaspoon Tabasco sauce
3 tablespoons dark rum
Cooked rice (see recipe)
Onions for black beans (see recipe)

Steps:

  • Pick over the beans carefully to remove any foreign particles. Rinse well in several changes of cold water.
  • Put the beans in a bowl with the six cups of cold water. Cover and let stand overnight.
  • Drain the beans, reserving the water in which they soaked. Measure the water and add enough additional water to make eight cups.
  • Place the beans, water and ham hocks in a small kettle or large saucepan and bring to the boil. Cook slowly, uncovered, skimming the surface as necessary to remove any foam. The beans should cook until tender, four to six hours.
  • Meanwhile, heat the oil in a skillet and add the onions and green peppers. Cook, stirring, until the mixture is wilted. Add the garlic and cook briefly, stirring. After the beans have cooked about two hours, add the mixture to the beans. Add the bay leaves, pepper flakes, vinegar, salt and pepper.
  • When the beans are almost tender, uncover and continue cooking 30 minutes.
  • Remove the ham hocks. When they are cool enough to handle, remove and discard the skin, fat, bones and gristle. Shred the meat and return it to the beans. Remove the bay leaves. Add the cayenne pepper and Tabasco.
  • This dish improves if cooked one day in advance. When ready to serve, heat the bean mixture thoroughly. Just before serving, stir in the rum. Serve with rice on the side or spoon a portion of the bean mixture over individual servings of rice. Add the onions according to taste.

ONE-POT RICE AND BEANS

One-Pot Rice and Beans image

Not only is rice with beans adored the world over (see: gallo pinto, khichdi, hoppin' John and Caribbean rice and peas), it even has its own Wikipedia page. This deeply flavored rendition is inspired by these comforting traditions and a desire to wash as few dishes as possible: The rice cooks with the beans and the starchy liquid they're canned in. As the two ingredients cook together, the beans disperse and glom onto the rice. For an extra kick, sauté chopped jalapeño with the onions, or add 1/4 cup salsa with the stock.

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons olive oil

Lime wedges or cilantro leaves, for garnish (optional)

Steps:

  • In a large saucepan or Dutch oven with a tight-fitting lid, warm the olive oil over medium heat. Add onion and sauté until translucent, about 3 minutes. Add the stock, cover and bring to a boil.
  • Add the salt, rice and beans (including the liquid). Stir just to combine, then cover.
  • Turn the heat down as low as it will go, then let simmer, undisturbed, for 18 to 20 minutes. Remove from heat and let sit for 4 minutes, then fluff with a fork.
  • Season to taste with salt and pepper, then garnish with lime or cilantro as you wish.

  • Heat a medium saucepan over medium heat and add the pieces of bacon. If you're not using bacon, simply add about one tablespoon of olive oil and skip ahead to the fourth step.
  • Cook the bacon until a lot of the fat has rendered out and the pieces have almost halved in size, but are not crispy. There's no need to crisp the bacon because it just gets soggy again when you simmer it with the beans!
  • Use tongs or a slotted spoon to remove the bacon and set it to drain on paper towels. Leave the bacon fat in the saucepan.
  • Add the onions to the hot bacon fat and stir to coat. Turn heat down to medium-low and cook for about 2 minutes, until they've reduced in size but aren't crisping or caramelized. They should be beginning to turn translucent and soft, but not quite there yet.
