JEANINE'S SUGAR-FREE MINCEMEAT PIE

Jeanine's Sugar-Free Mincemeat Pie image

I have not tried this recipe. I got this recipe from Jeanine's Sugar-Free Recipes. Note: This pie is largely various fruit sweeteners, so servings should be small. Diabetics and hypoglycemics may find it is too much sweetness for their body chemistry.

Categories     Pie

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 9

3 cups apples (4 medium)
1 cup raisins
1/4 cup currants (or raisins)
1/2 cup apple juice concentrate
1 orange
1/2 cup white grape juice concentrate
1/2 teaspoon cinnamon
1/4 teaspoon clove
1 teaspoon vanilla extract

Steps:

  • Pare and dice 3 cups apples into a saucepan. Add raisins, currants, and apple juice concentrate. Wash the orange thoroughly, and finely grate the peel into the apple mixture. Squeeze juice from half the orange (about 1/4 to 1/3 cup) into saucepan. Stir the mixture, and simmer covered until the apples become soft.
  • Meanwhile, preheat oven to 450 degrees. When ready, add white grape juice concentrate, cinnamon, cloves, and vanilla extract.
  • Either bake the pie now, or refrigerate the filling for up to 3 days, and then heat the filling before pouring it into a pie shell to bake. Bake at 450 degrees for 25-30 minutes.
  • Cool to warm (not hot) before serving.

Mince Pie image

Provided by Food Network

Time 1h45m

Yield 12 to 14 servings

Number Of Ingredients 15

1 1/4 pounds beef round or leftover roast
1/4 pound suet
1 1/2 pounds apples
1 cup raisins or currants
1/2 cup white sugar
1/2 cup brown sugar
1/8 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground clove
2 teaspoons ground nutmeg
1/4 cup brandy
2 cups cider or apple juice
Piecrust recipe, recipe follows
1 tablespoon butter

Steps:

  • If uncooked meat is used, simmer beef 2 to 3 hours or until very tender, adding suet for last 1/2 hour of cooking. When cooked, chop beef and suet very fine, into about 1/4-inch pieces. Pare, core, and chop apples to make 3 cups. Mix beef, suet, apples, raisins or currants, white and brown sugars, spices, brandy, and cider or apple juice. Prepare the piecrust. Preheat oven to 400 degrees F. Roll out piecrust dough and line pie plates with pastry; fill each with half of meat mixture. Cover with top crusts, seal edges, and slit 2 holes on top for steam to escape. If desired, spread a thick layer of butter on pastry for flaky upper crust. Bake until apples are cooked and meat is heated through, about 1 hour.

MY OWN MINCEMEAT PIE FILLING

My Own Mincemeat Pie Filling image

I have used lots of different mincemeat recipes, and created my own, using the most delicious and inexpensive combinations (but really, this recipe is very traditional, nevertheless). You may devise whatever combinations are convenient and inexpensive for you. Throw in whatever's in season, also leftovers you've got (cranberry sauce from Thanksgiving, oatmeal from breakfast, old bread, etc.) Mincemeat will take anything, it seems, and still taste just exactly the same -- that is, exquisite! So for Heaven's sake make whatever changes are thrifty for you, but you may keep the quantities about the same.

Time 1h40m

Yield 8

Number Of Ingredients 15

1 pound ground beef
½ cup ground suet (white beef fat)
4 apples - peeled, cored and chopped
1 cup brown sugar
1 cup brandy
¾ cup raisins, chopped
½ cup walnuts, chopped
½ cup chopped dried mixed fruit
½ cup candied mixed fruit peel, chopped
1 lemon, juiced
1 teaspoon salt
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground cloves

Steps:

  • Place the ground beef into a skillet over medium heat, and cook and stir until the beef is well browned, about 10 minutes, breaking it up into small crumbles as it cooks. Drain excess fat.
  • In a large cast-iron or other heavy skillet over medium heat, mix the cooked beef, suet, apples, brown sugar, brandy, raisins, walnuts, dried mixed fruit, mixed fruit peel, lemon juice, salt, nutmeg, cinnamon, allspice, and cloves. Stir the mincemeat until thoroughly combined and the sugar has dissolved, and bring the mixture to a boil. Reduce heat to a simmer, and cook until the flavors have blended and the mincemeat filling is thickened, about 1 hour. Stir occasionally.
  • Use as mincemeat pie filling.

Provided by Good Food team

Categories     Dessert, Dinner

Time 1h15m

Number Of Ingredients 9

225g plain flour
50g ground almond
140g butter , cut into small pieces
grated zest of 1 orange
50g golden caster sugar
1 egg yolk
200g Jewelled mincemeat (see link below)
1 egg white , lightly whisked
golden caster and icing sugar , for dusting
