Old-fashioned carrot salad made with lemon Jell-O and pineapple. Grandma didn't specify the amount of carrots. You probably can't use too much!

1 (6 ounce) package lemon flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
4 large carrots, shredded

Steps:

In a large bowl, prepare the lemon gelatin according to package directions using reserved pineapple juice in place of some of the water. Refrigerate until thickened, about 1 hour.
When the gelatin has thickened, stir in pineapple and shredded carrot. Cover and refrigerate until set, at least 4 hours.

This salad is very easy to make and a tasty addition to sunday dinner. I found this recipe in the Newfoundland Telegram, Holiday Recipies.

Ingredients

1 can crushed pineapple
1 can kernelled corn
1 package lemon Jell-O gelatin or 1 package lime Jell-O gelatin
1 cup Miracle Whip

Steps:

Dissolve jello in 1 cup boiling water, beat in miracle whip.
Let stand in refrigerator.
When partially set stir in 14 ounce, drained pineapple and 12 ounce drained corn.
Place in refrigerator until fully set.

1 can (20 ounces) crushed pineapple
1 package (6 ounces) lemon gelatin
3 cups boiling water
1 package (8 ounces) cream cheese, softened
1 carton (16 ounces) frozen whipped topping, thawed
3/4 cup sugar
3 tablespoons lemon juice
3 tablespoons water
2 tablespoons all-purpose flour
2 large egg yolks, lightly beaten

Steps:

Drain pineapple, reserving juice. Dissolve gelatin in water; add pineapple. Pour into a 13x9-in. dish coated with cooking spray; chill until almost set, about 45 minutes. , In a bowl, beat cream cheese and whipped topping until smooth. Carefully spread over gelatin; chill for 30 minutes. Meanwhile, in a saucepan over medium heat, combine sugar, lemon juice, water, flour, egg yolks and reserved pineapple juice; bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Cool. Carefully spread over cream cheese layer. Chill for at least 1 hour.

This is my standard dish to take to salad suppers and also for holidays. If you like pineapple you will love the flavor of this.

Ingredients

1 (6 ounce) package lemon Jell-O gelatin
1 cup crushed pineapple (drain and save juice)
2 bananas, sliced
2 cups miniature marshmallows
2 eggs, beaten
2 tablespoons butter
1/2 cup sugar
1 cup pineapple juice
2 tablespoons flour
1 cup Cool Whip
grated cheese
chopped nuts

Steps:

Mix jello according to pk directions, add pineapple, bananas and marshmallows.
Pour into a 9x13 inch pan.
Chill until firm.
In top of double boiler, mix eggs, butter, flour, sugar.
Add reserved pineapple juice (if reserved juice is not quite one cup you may add enough water to make one full cup) Cook and stir until thick.
Cool.
Fold in cool whip.
Spread over jello.
Top with grated cheese and nuts.
I use 1/4 cup grated cheddar cheese and 1/4 cup chopped walnuts.

1 (3 ounce) box orange Jell-O
1 (12 ounce) container Cool Whip
1 (8 ounce) package cream cheese
5 tablespoons milk

Steps:

Drain pineapple juice and reserve. Combine pineapple juice with sugar and bring to a boil in the microwave. Add orange jello to boiling liquid and let cool. After mixture has cooled, stir in cool whip.
In a separate bowl, soften cream cheese with milk. Stir into jello mixture. Add crushed pineapple and blend all together.
Put in mold and refrigerate.

Stir pineapple, cottage cheese, and whipped topping together in a bowl; sprinkle gelatin mix over the top and stir until well-mixed. Refrigerate until chilled and set, at least 2 hours.
