1/2 small yellow onion, quartered
5 cloves garlic, peeled
1 large jalapeno
2 tablespoons soy sauce
2 tablespoons dark brown sugar
1 tablespoon thyme leaves
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
Kosher salt
4 chicken legs (thighs and drumsticks together)
Vegetable oil, for drizzling
Pickapeppa Sour Cream, recipe follows
4 soft sandwich rolls, split
Mango Chutney, recipe follows
Fried Plantains, recipe follows
Cilantro, for serving
1/2 cup sour cream
2 tablespoons pickapeppa sauce
Zest of 1 lime
Kosher salt and freshly ground black pepper
2 mangos, peeled and small diced
1/3 cup dark brown sugar
1/3 cup dark raisins
2 tablespoons grated ginger
2 cloves garlic, grated
1 jalapeno, minced
Kosher salt
1/3 cup white wine vinegar
1 teaspoon turmeric
Canola oil, for frying
1 green plantain
Kosher salt
1 teaspoon cracked black peppercorns

Steps:

  • Combine the onion, garlic, jalapeno, soy sauce, sugar, thyme, cinnamon, allspice and a pinch of salt together in a food processor and blend for a couple of minutes, scraping up pieces that cling to the walls to make sure everything is blended evenly.
  • Combine the jerk rub and the chicken legs in a casserole dish that is just big enough to fit the chicken pieces. Work the rub into the chicken, making sure to put the mixture under the skin as well. Cover and let the chicken marinate in the refrigerator for at least 3 hours or up to overnight.
  • Preheat the oven to 400 degrees F.
  • Drizzle the marinated chicken with vegetable oil and season with salt. Roast it in the marinade in the center rack of the oven until an instant-read thermometer shows an internal temperature of 165 degrees, about 40 minutes. Let the chicken cool slightly, then pull off the meat in large shreds, discarding the bones. Toss the shredded chicken with any leftover juices in the pan.
  • Sandwich build: Spread some Pickapeppa Sour Cream on both sides of the bread. Place some of the Mango Chutney on the bread. Put on a layer of shredded chicken and top with some Fried Plaintains and cilantro. Serve extra plantains on the side. Enjoy, man!
  • Mix together the sour cream, pickapeppa sauce and lime zest in a small bowl. Season with salt and pepper.
  • Mix together the mangos, sugar, raisins, ginger, garlic, jalapeno and salt to taste in a medium bowl. Cover and refrigerate for at least 30 minutes or up to overnight.
  • Combine the mango mixture with the vinegar and turmeric in a small saucepan and bring to a simmer. Cook, stirring occasionally to prevent the chutney from sticking to the pan until thickened and thoroughly combined, about 20 minutes.
  • Fill a Dutch oven halfway with canola oil and heat to 350 degrees F.
  • Peel the plantain and slice it lengthwise into long thin strips. (A mandolin slicer will give you the best results.) You can crack the peppercorns by crushing them with a heavy pan on a cutting board; you are looking for a very coarse grind. Drop the plantain strips in the hot oil and allow them to fry up crispy, about 1 minute. Transfer the plantains directly to a paper towel-lined plate and immediately season with salt and the cracked black peppercorns.

25g/1oz butter
2 spring onions, finely chopped
1 garlic clove, peeled and crushed
100ml/3½fl oz light coconut milk
100g/3½oz basmati rice
½ x 410g/14oz can kidney beans (do not drain)
1 sprig fresh thyme
½tsp salt
310ml/11fl oz boiling water
1 green bird's-eye chilli (or ½ Scotch bonnet pepper)
2 tbsp mild jerk seasoning
1 tbsp soy sauce
2-3 tbsp tomato ketchup (or barbecue sauce)
1 tbsp clear honey
2 boneless chicken breasts, skin on
2 tbsp vegetable oil
30g/1½oz butter
1-2 tbsp vegetable oil
1 large ripe plantain, skin removed, cut on the diagonal into slices 2cm/¾in thick
½ small red onion, peeled and finely chopped
½-1 red chilli, finely chopped
½ small ripe pineapple, peeled and finely chopped
½ lime, juice only
½-1 tbsp sugar
2.5cm/1in piece fresh ginger, grated (optional)
1 tbsp chopped fresh coriander
1 tbsp chopped fresh mint

Steps:

  • For the rice and peas, heat the butter in a saucepan and gently fry the spring onions and garlic. Don't allow them to brown.
  • Add the coconut milk and bring to the boil.
  • Stir in the rice, the kidney beans (along with the liquid in the tin), the thyme, salt and boiling water. Add the chilli, then stir, cover with a lid and bring back to the boil.
  • Once it has come to the boil, reduce the heat and simmer for 20-25 minutes, or until all the liquid is absorbed and the rice is tender. Fluff lightly with a fork to separate the grains, cover and leave to stand.
  • For the jerk chicken, preheat the oven to 200C/400F/Gas 6. Place the jerk seasoning, soy sauce, tomato ketchup (or barbecue sauce) and honey into a bowl and mix to a paste.
  • Use a sharp knife to make four or five deep cuts at an angle across the skin-side of the chicken breasts.
  • Brush half the jerk paste over the chicken with a pastry brush.
  • Brush a baking sheet with half the vegetable oil. Place the chicken breasts onto the baking sheet and drizzle with the remaining oil. Transfer to the oven and roast for 25 minutes. Brush with the remaining jerk paste during cooking.
  • For the last five minutes of cooking, place the baking tray at the top of the oven, where the temperature is hottest, to brown the chicken. Check the chicken is cooked through - there should be no pink when you cut into it.
  • For the plantain, heat the butter and oil in a pan over a medium heat, add the plantain and cook for 4-5 minutes on each side until golden-brown. Remove from the pan and drain on kitchen paper.
  • For the salsa, place the onion, chilli, pineapple, lime juice, sugar and ginger, if using, into a pan and heat gently for 2-3 minutes. Remove from the heat, cool, then stir in the coriander and mint.
  • To serve, place the chicken onto serving plates with some rice and peas, a few slices of plantain and a spoonful of salsa. Serve with Irish stout punch
