3 to 4 lb pork spareribs, cut into serving-size pieces
1/4 cup water
1 cup barbecue sauce

Steps:

  • Heat gas or charcoal grill. In 11x7-inch (2-quart) microwavable dish, place ribs, overlapping slightly if necessary. Add water; cover with microwavable plastic wrap. Microwave on High 5 minutes.
  • Rearrange ribs and rotate dish 1/2 turn; cover. Microwave on Medium (50%) 15 to 20 minutes, rearranging and turning ribs twice during microwaving, until ribs are no longer pink next to bones. Drain.
  • When grill is heated, place ribs on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 15 to 22 minutes, turning once and brushing with barbecue sauce several times during last 5 minutes of cooking time, until ribs are tender.
  • In 1-quart saucepan, heat remaining barbecue sauce to rolling boil; boil 1 minute. Serve with ribs.

½ cup ketchup
½ cup water
2 tablespoons molasses
2 tablespoons Worcestershire sauce
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon light brown sugar
½ teaspoon kosher salt
¼ teaspoon hot pepper sauce (such as Tabasco®)
¼ teaspoon granulated garlic
¼ teaspoon freshly ground black pepper

Steps:

  • Whisk the ketchup, water, molasses, Worcestershire sauce, white wine vinegar, Dijon mustard, brown sugar, salt, hot pepper sauce, granulated garlic, and black pepper together in a small heavy-bottomed saucepan and place over medium heat. Bring to a boil, reduce heat to low, and continue cooking at a simmer, stirring together, another 10 minutes. Remove from heat and allow to cool completely. Pour into a glass jar and store uncovered in the refrigerator for 8 hours or overnight. This allows the flavors to blend and reduce any sharpness from the vinegar.

12 lb tomato, peeled- (about 5 quarts)
3 cups onion, finely chopped
4 cloves garlic, chopped
1 ½ cups apple cider vinegar
½ cup bourbon
2 cups dark brown sugar, packed
1 tablespoon garlic powder
1 tablespoon mustard powder
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
2 teaspoons chili flakes,
2 tablespoons salt

Steps:

  • Combine tomatoes, onion, and garlic in a large stock pot and bring to a boil; lower heat and simmer 30 minutes or until vegetables are very soft. Working in batches, puree vegetables until smooth with Harvest Pro food mill or in the bowl of a food processor.
  • Return tomato mixture to the pot and add remaining ingredients, bring to a boil over high heat, stirring frequently. Lower heat and simmer until thickened and darker in color, about 1½-2 hours, stirring occasionally to prevent scorching.
  • Prepare boiling water canner while sauce is cooking. Heat jars in simmering water until ready to use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Ladle hot BBQ sauce into a hot jar leaving a ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band; adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars for 20 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal. They should not flex when center is pressed.
  • Enjoy!

I mixed this up at the last minute for some chicken pieces we were reheating and was handed a pen and paper afterward to force me to write it down. It's just enough for one cut up chicken. Fabulous with meatballs too, but you might need to double or triple the recipe.

1 teaspoon A.1. Original Sauce
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1 tablespoon apple cider vinegar
2 tablespoons raw sugar
1 teaspoon seasoning, OBQ brand BBQ seasoning rub

Steps:

  • Mix all ingredients together and brush on your favorite meat near the end of its cooking. When the sauce starts bubbling it will have carmelized enough to be sticky and sweet. You don't really even have to measure, it's very easy to eyeball.
  • OBQ, or Obie-Cue seasoning is a BBQ seasong rub. It's mostly salt, pepper, powdered onion, and powdered Worcestershire sauce. To substitute for it just add a dash of salt and pepper, a pinch of onion powder or dehydrated onions, and a dash more Worcestershire, or substitute your own favorite BBQ seasoning rub.
  • The raw sugar gives it just a hint of molasses. You could substitute half white sugar and half brown sugar or white sugar and a few drops of molasses to get a similar taste.
