1 cup Jiffy baking mix
1/3 cup water
1/2 lb boneless skinless chicken breast
2 tablespoons oil
1/2 cup thinly sliced green bell pepper
1 small sliced onion
1 cup salsa
1 cup shredded cheese

Steps:

  • Preheat oven to 400°.
  • grease 12" pizza pan.
  • Cut chicken into strips.
  • Heat skillet and add oil.
  • Saute chicken for 5 minutes.
  • Add green pepper and onion.
  • Continue cooking until tender.
  • Remove from heat and add salsa.
  • Set aside.
  • For crust, blend baking mix with water.
  • Turn dough on surface dusted with baking mix or flour.
  • Knead until dough is not sticky.
  • Press on prepared pan.
  • Spread 1/2 cup cheese on crust and top with chicken mixture.
  • Sprinkle remaining cheese on top.
  • Bake 15-20 minutes.

1 whole bone-in, skin-on chicken breast
Olive oil
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon tomato paste
2 cups tomato puree
1 1/2 tablespoons mild chili powder
2 teaspoons Hungarian paprika
2 teaspoons ground cumin
1/4 teaspoon Mexican oregano
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1/2 red bell pepper, thinly sliced
1/2 orange bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 red onion, sliced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
Assembly:
1 (16-ounce) pizza ball, store-bought or homemade
1/2 cup shredded mozzarella cheese
1/2 cup shredded Cheddar
Special Equipment: pizza stone

Steps:

  • Chicken:
  • Preheat the oven to 350 degrees F.
  • Put the chicken breast on a baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Put in the oven and roast until cooked through, about 35 minutes. Remove the chicken from the oven to a cutting board and let cool. Once cool enough to handle, shred the chicken meat with a fork and set aside. Cook's Note: Can be done the day before.
  • Turn the oven temperature up to 400 degrees F.
  • Put a pizza stone in the oven to preheat for 1 hour, for best results. Remove the pizza dough from refrigerator and let come to room temperature, so it will be easier to work with.
  • Heat a medium saucepan over medium-high heat and coat the bottom with the olive oil. Once hot, add the garlic and saute until fragrant. Add the tomato paste and stir to toast. This will add depth of flavor. Stir in the tomato puree, chili powder, paprika, cumin, and oregano and bring up to a simmer. Cook for 10 minutes, stirring occasionally, for the flavors to marry together. Season, to taste, with salt and pepper.
  • Thinly coat a large saute pan with olive oil and heat over a medium-high heat. When the oil is hot, add the peppers, onion and garlic. Saute until the onions are translucent, about 4 to 5 minutes, stirring occasionally. Season with salt and pepper, to taste. Remove and set aside.
  • To assemble:
  • Flour the counter top and roll out the pizza dough to a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle on the tomato sauce to lightly cover the bottom of the pizza. Sprinkle with the chicken, vegetables, and the cheeses.
  • Bake the pizza until crisp and golden, about 20 minutes. Remove from the oven, then slice and serve.

1/2 cup green pepper, thinly sliced

  • Directions Step 1 Preheat oven to 400°F. Grease a 12" pizza pan. Step 2 Cut chicken into strips. Heat skillet and add oil. Sauté chicken for 5 minutes. Add green peppers and onions. Cook until tender. Remove from heat and add salsa. Blend well and set aside. Step 3 Combine crust ingredients. On floured surface, knead several times until soft dough forms and is no longer sticky. 1 teaspoon canola oil, divided
1 medium onion, sliced
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1 garlic clove, minced
1/4 cup chunky salsa
2 cups shredded reduced-fat Mexican cheese blend
1 tablespoon minced fresh cilantro
Sour cream and additional salsa, optional

Steps:

  • Unroll dough into a 15x10x1-in. baking pan coated with cooking spray; flatten dough and build up edges slightly. 1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
2-1/2 cups all-purpose flour
4 tablespoons canola oil, divided
2 teaspoons salt, divided
1 teaspoon sugar
1 pound boneless skinless chicken breasts, cut into strips
2 cups sliced onions
2 cups sliced green peppers
2 teaspoons chili powder
1 teaspoon garlic powder
1 cup salsa
2 cups shredded Monterey Jack or part-skim mozzarella cheese

Steps:

  • In a large bowl, dissolve yeast in water. Add flour, 2 tablespoons oil, 1 teaspoon salt and sugar. Beat vigorously by hand 20 strokes. Cover and let rest about 15 minutes. , Divide dough in half; press each portion into a greased 12-in. pizza pan. Prick dough several times with a fork. 1 lb chicken breast, skinned, boned, cut into 2 x 1/2 inch strips
1 -2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup thinly sliced onion
1/2 cup green bell pepper, strips
1/2 cup red bell pepper, strips
pizza dough, for 12 inch pizza (you can use refrigerated pizza crust if you like(I like Pizza Dough #8497 by Steve Sickenberger)
1/2 cup mild salsa
2 cups monterey jack cheese, shredded

Steps:

  • Heat oil in large skillet.
  • Add chicken and cook, stirring frequently until lightly browned.
  • Stir in seasonings.
  • Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender.
  • Heat oven to 425°.

10 ounces thing italian-cheese flavored prepared pizza crust

1/2 cup chunky salsa

1 medium red onion, thinly sliced and separated into rings
3 ounces shredded mexican cheese, bland

Steps:

  • Preheat to 450°F.

  • Move oven rack to lowest position. Heat oven to 450°F. Spray 12-inch pizza pan with cooking spray.
