These are best cooked on the grill, but you can remove them from the marinade and bake them in the oven at 350 degrees. This marinade is excellent on prime rib, fish or chicken. Serve with a crispy salad and garlic cheese potatoes for a great dinner!

1 cup dark brown sugar
⅔ cup bourbon
1 cup light soy sauce
4 cloves garlic
3 pounds country style pork ribs

Steps:

  • Process brown sugar, bourbon, soy sauce, and garlic in a food processor or blender to mince garlic with other ingredients. Pour over ribs, and marinate for several hours in the refrigerator.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Place ribs on grate, and cover. Cook for 45 minutes to 1 hour depending on thickness of your ribs. When finished, the internal temperature of the ribs should be 160 degrees F (70 degrees C) when taken with a meat thermometer.

Bourbon-Ancho Marinated Top Round with Cape Gooseberry Relish image

2 tablespoons olive oil
2 tablespoons Dijon mustard
1/4 cup bourbon whiskey, such as Maker's Mark
1/3 cup soy sauce
2 tablespoons ancho chile puree
2 tablespoons red wine vinegar
1/4 cup light brown sugar
1 small red onion, coarsely chopped
3 cloves garlic, chopped
Coarsely ground black pepper
1 (2-inch thick) top round or top sirloin steak, 2 to 3 pounds
Salt
1 pound cape gooseberries, sliced in half
1 red onion, grilled and thinly sliced
1 red pepper, grilled, peeled and chopped
1 yellow pepper, grilled, peeled and chopped
1/4 cup rice wine vinegar
2 tablespoons olive oil
1/4 cup chopped cilantro
Salt and freshly ground pepper

Steps:

  • Combine the oil, mustard, whiskey, soy, ancho chile, red wine vinegar, brown sugar, onions, garlic and black pepper in a medium bowl. Place the steak in a large baking dish, pour marinade over and turn to coat. Cover and marinate in the refrigerator for 1 to 2 days.
  • Preheat grill to high. Remove steak from marinade, season with salt and grill for 15 to 20 minutes or until medium rare. Remove from the grill and let rest 10 minutes before slicing. Serve with relish on side.
  • Combine all ingredients in a medium bowl. Serve at room temperature.

1 (14-ounce) bag frozen sliced carrots
1 (8-ounce) package sliced fresh button mushrooms
1 (15-ounce) can whole peeled tomatoes (recommended: Muir Glen)
1 (15-ounce) can cannellini beans, drained (recommended: Progresso)
4 boneless, thick-cut, pork loin chops, rinsed and patted dry
Salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon herbs de Provence, divided
1 (10 3/4-ounce) can condensed cream of potato soup (recommended: Campbell's)
1/4 cup Dijon mustard
1 tablespoon tomato paste
3 tablespoons dry sherry (recommended: Christian Stockers)
2 teaspoons butter
3 tablespoons seasoned bread crumbs
1 tablespoon freshly chopped parsley leaves

Steps:

  • Combine carrots, mushrooms, tomatoes, and beans in the bottom of a 5-quart slow cooker.
  • Season pork chops with salt, pepper, and 1 tablespoon of herbs de Provence. Place in slow cooker on top of vegetables.
  • In a small bowl, combine potato soup, Dijon mustard, tomato paste, sherry, and 1 teaspoon of herbs de Provence. Pour over pork chops.
  • Cover and cook on low setting for 4 to 6 hours.
  • In a saute pan over medium-high heat, melt butter. When butter is melted and foam subsides, add bread crumbs and stir constantly until toasted. Serve pork chops and vegetables sprinkled with bread crumbs and parsley.

5 to 6 pounds Eye Round beef
6 garlic cloves, mashed
1/2 teaspoon ground oregano
1 teaspoon ground cumin
1 bay leaf
3 tablespoons bitter orange juice
1 cup dry white cooking wine
3 teaspoons salt
1/4 teaspoon pepper
1/2 pound ham in small cubes
1 carrot, sliced
1/2 green bell pepper, cut in medium size pieces
1/2 red bell pepper, cut in medium size pieces
2 small Cuban-style chorizos, sliced
1/4 cup vegetable oil
8 ounces tomato sauce
1 sliced seared onion
2 fried ripe plantains

Steps:

  • Clean the meat by trimming excess fat. With a knife make an opening through the center of the meat. Place the meat in a large pot. To prepare marinade, mix garlic, oregano, cumin, bay leaf, bitter orange juice, cooking wine, salt and pepper. Add 3 tablespoons of the marinade to the opening inside the meat. In another container mix the stuffing: ham, carrot, bell peppers and chorizo then place the stuffing inside the meat. Add the rest of the marinade to the outside of the meat. For best results let the meat sit overnight or at least 3 hours, refrigerated.
  • Preheat oven to 350 degrees F. In a large frying pan heat cooking oil and remove meat from marinade. Place meat in a hot frying pan, and sear the meat; browning it gives the meat flavor. Add the remaining marinade, cover and place in oven for approximately 3 hours. Let the meat cool before cutting it in slices. Combine the tomato sauce with the marinade that remained in the pan and put this mixture in a saucepan and simmer for 3 minutes. Pour over the sliced meat, and add the toppings and serve.

Bourbon-Marinated Pork Roast with Country Ham Jus image

1/4 cup maple syrup
1/4 cup sorghum molasses (recommended: Kentucky)
2 tablespoons bourbon
2 tablespoons sweet chili sauce (such as Heinz)
1 1/2 teaspoons Asian garlic chili paste
One 8-bone crown roast of pork, 5 to 7 pounds, with 1/4-inch fat and bones "Frenched"*
Country Ham Jus, recipe follows
Pawpaw Relish, recipe follows
8 ounces country ham bones or smoked pork bones (recommended: Kentucky brand)
4 cups water
1 small onion, chopped
1 rib celery, chopped
1 small carrot, chopped
1/2 teaspoon dried thyme
1 bay leaf
1 tablespoon whole peppercorns
2 cups demi-glace or very rich veal stock
1 green tomato, diced
1 mango, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1 lime, juiced
2 tablespoons honey
1/4 bunch cilantro leaves, chopped
1/2 teaspoon ground cumin
Salt and pepper
1/4 cup pawpaw puree**

Steps:

  • To marinate the pork roast, combine maple syrup, molasses, bourbon, chili sauce, and chili paste in a shallow dish and mix well. Brush the roast all over with the marinade and refrigerate it 8 hours or longer.
  • Preheat 1 side of a grill to high heat.
  • To cook, sear the roast all over on a hot grill. Once it browns, move the meat to a cooler spot. Lower the heat and continue to cook, covered, at a lower temperature, until it is done, about 11/2 to 2 hours, depending on its size -- the meat should register 150 to 155 degrees F in its thickest part.
  • To serve, reheat the Country Ham Jus and divide it among serving plates. Place pork on plates and add a generous spoonful of Pawpaw Relish.
  • For the country ham jus, combine the ham bones, 4 cups water, onion, celery, carrot, thyme, bay leaf, and pepper in a large stockpot. Simmer, uncovered, for 3 hours, or until liquid is reduced to 1 cup. Strain out the solids. Combine with demi-glace in pot and cook until reduced to 1 1/2 cups. Add salt, to taste. Refrigerate.
  • Mix all the ingredients together.

1/4 pound dried red beans
1 bay leaf
1 onion, 1/4-inch dice
4 cloves garlic, minced
1/4 cup olive oil
2 tablespoons ground cumin
4 tablespoons dried oregano
1/4 cup tomato paste
4 green plantains, blanched until they turn black and then cooled and peeled
1/4 cup corn oil or about 1-inch deep in the frying pan
8 eggs
1 cup cotija cheese, grated

Steps:

  • Boil beans in water to cover with bay leaf until tender; drain. Saute onions and garlic in olive oil until tender. Add cumin and oregano; cook for 2 minutes. Add tomato paste and cooked beans. Puree in a food processor.
  • Fry cooked plantains in a skillet at 300 degrees F until tender. Place between 2 wet towels and roll to 1/4 inch thickness with a rolling pin to create a round "dough" of plantain. Return to pan and cook for 3 minutes on each side or until edges are crisp.
  • To serve, spread puree over plantains. Scramble eggs in a non-stick pan, and place on top of plantains. Sprinkle with cheese.
