- Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
- In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
- Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 inches greased casserole dish.
- Saute remaining onions and bell peppers until slightly tender.
- On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
- Bake for 30-40 minutes or until edges of dough are lightly browned.

- Preheat oven to 325 degrees F. Lightly spray a 9x13-inch baking dish with non-stick cooking spray.
- In a 12-inch skillet brown the ground beef until thoroughly cooked, then drain and return to the skillet. Add ¾ cup water, the taco seasoning packet and bring to a boil. Add the onion and the peppers. Turn down the heat and simmer for three to five minutes, or until the onions and peppers begin to soften. Set aside
- In a small bowl mix together the biscuit mix and ⅔ cup water to make a soft dough. Press the dough into the bottom and up the sides about ½ inch in the prepared baking dish. The dough was a little sticky so I used parchment paper to press it out on the bottom, and I used a spatula to bring it up the sides.
- In a small bowl mix together the mayonnaise, the sour cream and half the cheese. Set aside.
- Spread the ground beef mixture evenly over the biscuit layer. Evenly layer the sliced tomatoes over ground beef mixture. Evenly layer the green chilies over the tomatoes. Evenly spread the sour cream mixture over the green chilies. Top with remaining cheese.
- Bake for 30 to 35 minutes or until edges are lightly browned.

What could be more mid-Western and cowboy themed than a casserole named after John Wayne? This meal doesn't have to only be eaten out on the range, though; packed with dairy and beef, this is a filling and satisfying casserole for any occasion!

- Preheat your oven to 325 degrees Fahrenheit.
- Take out a 9x13 casserole dish and set aside. Grease it lightly with cooking spray.
- Brown ground beef until no longer pink and drain.
- Add in my homemade taco seasoning, mixed with some warm water and let simmer for 3-4 minutes (to thicken)
- In a medium sized bowl mix in the sour cream, mayonnaise, one half of the cheese, and half of the finely chopped onion. Set aside.
- In a new bowl, mix together my homemade biscuit mix and water until it forms a dough.
- Press this newly formed dough into the greased 9 x 13 inch pan, making sure it goes at least half way up the sides of the dish.
- Cook together the remaining onions and green peppers until tender.
- Layer the remaining ingredients into the 9x13 on top of the dough in the following order: ground beef, diced tomatoes, green peppers and onions, green chilies, sour cream mixture, and remaining cheddar cheese.
- Bake for 30-35 minutes or until edges are slightly browned.

JOHN WAYNE CASSEROLE RECIPE
Steps:
- Gather the ingredients.
- Position a rack in the center of the oven and heat to 350 F. Spray a large baking dish generously with cooking spray.
- Place the biscuits in a single layer in the baking dish, pressing them together to create one layer of dough.
- Transfer to the oven and bake until golden, about 12 minutes.
- While the biscuits bake, add 1 tablespoon of oil to a large heavy-duty skillet over medium heat. When the oil shimmers, add the ground beef and cook, stirring occasionally until no longer pink, about 10 minutes.
- Drain most of the excess fat from the skillet. Add the taco seasoning, water, and salt to taste. Continue to cook, stirring occasionally, until the water evaporates, 3 to 4 minutes. Transfer to a bowl and set aside.
- Add the remaining 1 tablespoon of oil to the skillet. When the oil shimmers, add the onions, bell peppers, and salt to taste. Cook over medium heat, stirring occasionally until tender, about 10 minutes.
- Add the tomatoes and continue cooking, stirring occasionally, until the tomatoes are warmed through, about 3 minutes. Set aside.
- Combine the sour cream, half the cheddar, and the jalapeños in a medium bowl.
- Layer the ingredients evenly on top of the baked biscuit crust in this order; ground beef, onion-pepper-tomato mixture, sour cream-cheddar mixture, then top with the remaining cheese.
- For two layers, divide the mixtures in half, layer twice as directed above, leaving the cheese for the top layer only.
- Bake until the cheese is bubbling and beginning to brown slightly, about 20 minutes.
- Remove from the oven, let sit 5 minutes, and serve.

- Preheat the oven to 325 degrees.
- Chop the onion and peppers, then saute lightly in the olive oil.
- Set aside.
- In a large mixing bowl, separate the egg yolks from the whites, leaving the yolks in the bowl.
- Add milk, flour, garlic, and black pepper to the yolks, then mix well.
- Add sour cream, the cheeses, and vegetables to the egg mixture.
- In another mixing bowl, beat the egg whites until stiff.
- Fold the beaten whites into the mixture in the other bowl and blend together.
- Grease a baking dish with butter.
- Pour the mixture into the baking dish and place in the hot oven.
- Bake for 45-60 minutes , turning the dish occasionally, until the top starts to crack.
- Three quarters of the way through baking, top with the tomato slices.
- Serve with apple cinnamon tortillas lathered with honey butter.
